Steps:
- Heat the oven to 350 degrees F and arrange a rack in the middle. Whisk together the flour, baking powder, and salt in a large bowl until evenly combined; set aside.
- Using a stand mixer fitted with a paddle attachment beat together the butter and sugars over medium speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Reduce the speed to low, add the flour mixture and mix until just combined. Stir in the chocolate and cherries until they are uniformly distributed.
- Scoop the dough by rounded tablespoons onto a baking sheet. Bake until the cookie edges are golden brown, about 14 minutes. Leave the cookies on the baking sheets on racks for 3 minutes. Repeat this process with the remaining dough. Using a spatula, transfer the cookies to racks to cool completely before serving.

Steps:
- Position a rack in the upper third of the oven and a second rack in the lower third then preheat to 350°F. Line 2 large baking sheets with nonstick baking mats or parchment paper.
- In a large bowl, sift together the flour, baking soda, and salt.
- Using a small knife split the vanilla bean lengthwise then scrape the seeds from the pod into a small bowl and reserve both.
- In a small bowl, combine the scraped vanilla bean pod (not the seeds), the dried cherries, and about 1 cup boiling water. Let stand 5 minutes then drain, reserving the cherries and discarding the vanilla bean pod.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, sugar, and brown sugar and beat on medium speed, scraping the bowl occasionally, until light and fluffy, about 2 minutes. Add the egg and the vanilla bean seeds and beat on medium until combined, about 1 minute. With the mixer on low, add the flour mixture in 3 batches, stirring until just combined. Add the cherries, white and semisweet chocolate chips, and the hazelnuts or walnuts and stir until just incorporated.
- Drop the dough by heaping tablespoons onto the prepared baking sheets, leaving about 2 inches between cookies. Bake, switching the cookies between the upper and lower racks about halfway through baking, until light golden brown and just set, 10 to 12 minutes. Cool the cookies on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Continue baking cookies on cooled baking sheets. DO AHEAD: The cookies can be baked ahead and stored, in an airtight container at room temperature, up to 3 days.

127 BEST CHRISTMAS COOKIES TO MAKE YOUR HOLIDAYS MERRY
From epicurious.com
Author Kristi KelloggPublished 2015-12-01
- Watercolor Christmas Ornament Cookies. Using a simple watercolor painting technique, it’s easy to brush and splatter these Christmas cookies with unique patterns that will really stand out on any holiday dessert table.
- Chocolate-Pistachio Sablés. Logs of slice-and-bakes—like these Chocolate–Pistachio Sablés—store wonderfully in the freezer. And guess what? No need to defrost before slicing and zipping them into the oven.
- Soft Gingerbread Tiles With Rum Butter Glaze. Cookie stamps give these snappy ginger cookies their embossed look and a rum-butter glaze lends a festive, antique-looking finish.
- Shortbread Cookies Four Ways. This tender, fragile shortbread dough is the result of a happy accident involving an extra egg yolk. Make it with all-purpose, whole-wheat, spelt, or rye flour—or try all four.
- Spiced and Glazed Molasses Cookies. If you’d like an even more pronounced molasses flavor, use a robust instead of mild molasses. Just don’t use blackstrap in these cookies; not only will it be too strong and bitter, but it will overwhelm the spices.
- Grated Shortbread Bars With Rose Jam. These delicate jam-filled bar cookies are made with dough that you freeze and then grate into the pan. They have a delightful light and crumbly texture.
- Mid-Century Modern Cookie House. Is it ambitious? Heck yes, but the payoff is so worth it. This cardamom cookie house is the ultimate edible holiday centerpiece, complete with twinkly lights, shimmery doors, ceiling beams, and color-coordinated wallpaper.
- Chocolate Blackout Cookies. We love the look of the homemade extra-long sprinkles on these whoopie-pie-type cookies, but they take a steady hand and a bit of patience to shape.
- Ombre Christmas Tree Cookies. Use a spatula to spread icing easily over the cookies and shake on layers of sugar in various shades of green to create a gradient from dark to light.
- Classic Thumbprint Cookies With Jam. Be careful not to overfill these cookies with jam, as they'll spread a bit in the oven. Once baked, they'll keep for three days at room temperature while you tackle other baking projects.
