You need to try these flourless keto almond butter cookies made with only three ingredients and with only 3.7g net carbs.

Number Of Ingredients 3

1 cup of almond butter (I recommend Barney's Smooth Almond Butter)
2/3 cup granulated sweetener, like Swerve or Lakanto
1 large egg

Steps:

  • Gather your ingredients and preheat your oven to 350F.
  • Then line a cookie sheet with a baking paper.
  • In a mixing bowl, combine almond butter, sweetener, and egg.
  • Stir with a spatula until the dough comes together and is really nice and firm.
  • Then shape the mixture into 12 equal balls.
  • Arrange the balls on the baking sheet and press each with a fork to flatten and create a crisscross pattern. Then chill the cookies for at least 15 minutes.
  • Bake the cookies for 8 minutes (some ovens may go to 10, but not more than that).
  • Take the cookies out of the oven and cool for about 20 minutes.
  • Once cooled, they'll harden and you can now serve!

1 large egg
1/2-2/3 cup Swerve brown sweetener (depending on sweetness preference)

Steps:

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • Add almond butter, egg and brown sweetener to a medium bowl. Mix well.
  • With a small ice cream scoop or cookie scoop, scoop about a tablespoon sized amount of dough and plop onto the prepared baking sheet. The cookies expand while cooking so leave room between cookies.
  • Using a fork, score the cookies (press down lightly in a criss-cross pattern).
  • Bake for 10-13 minutes or until lightly golden brown.

My quick and easy go-to keto and gluten-free cookie recipe whenever I want to have something sweet, with very few net carbs per cookie!

2 cups blanched almond flour
½ cup butter, softened
1 egg
½ cup low-calorie natural sweetener (such as Swerve®)
1 teaspoon sugar-free vanilla extract
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine almond flour, butter, egg, sweetener, vanilla extract, and cinnamon in a bowl; mix until well combined.
  • Roll dough into 1-inch balls. Place on the prepared baking sheet and press down with a fork twice in a criss-cross pattern.
  • Bake in the the preheated oven until edges are golden, 12 to 15 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
