GRILLED CHICKEN SATAY WITH SPICY PEANUT SAUCE



Grilled Chicken Satay with Spicy Peanut Sauce image

These flavorful chicken skewers are marinated in coconut milk and spices, then grilled and served with a delicious spicy peanut sauce for dipping.

1/2 cup light coconut milk
1 tablespoon Asian fish sauce
2 teaspoons red curry paste
1 teaspoon brown sugar
1 tablespoon chopped cilantro
1/2 teaspoon ground turmeric
1/2 tsp kosher salt
freshly ground black pepper (to taste)
1 -1/4 pounds thin sliced boneless (skinless chicken cutlets)
16 large Bamboo skewers (soaked in cold water)
lime wedges (for garnish)
1 tbsp chopped cilantro (for garnish)
1 tbsp chopped peanuts (for garnish (optional))
1/3 cup low sodium chicken broth
2 tbsp Better'n peanut butter
1 tbsp reduced sodium soy sauce (Tamari for gluten-free)
2 tsp honey
1 tsp Sriracha chili sauce
1 tsp freshly grated ginger
1 small clove garlic (minced)

Steps:

  • In a bowl, mix the marinade ingredients except the chicken. Slice the chicken into long, thin strips, about 3 inches long by 1 inch wide, and add to marinade. Turn chicken to coat, cover and refrigerate at least 4 hours or longer.
  • Meanwhile, prepare the peanut sauce. Combine all the ingredients in a small saucepan and whisk well. Bring to a boil, reduce heat and cook until smooth, stirring constantly, about 5 minutes. Set aside to cool to room temperature.
  • Prepare grill to high heat and thread marinated chicken onto soaked bamboo skewers. Place on grill and cook 2 to 3 minutes per side, or until cooked through. Serve with lime wedges and peanut sauce and garnish with cilantro and peanuts.

2 lbs. boneless chicken thighs
½ teaspoon pepper
3 tablespoons extra virgin olive oil
¼ cup roasted cashews
2 tablespoons red chili flakes
¼ cup water
2 tablespoons coconut aminos
1 teaspoon minced garlic
1 kaffir lime leaf

Steps:

  • Cut the boneless chicken thighs into cubes then season with pepper. Let the chicken rest
  • Place roasted cashews in a blender then add red chili flakes and minced garlic to the blender.
  • Pour water into over the cashews then blend.
  • Transfer the cashew mixture to a saucepan then add kaffir lime leaf to it. Bring to a simmer.
  • Once it is done, remove the cashew sauce from heat then drizzle coconut aminos over the sauce. Stir well then let it cool.
  • Next, preheat a grill over medium heat then wait until it is ready.
  • In the meantime, using a wooden skewer prick the chicken cubes then brush with extra virgin olive oil.
  • Once the grill is ready, place the chicken satay on it and grill until done. Don't forget to flip the chicken satay and make sure that both sides of the chicken satay are completely cooked.
  • Arrange the cooked chicken satay on a serving dish then drizzle cashew sauce on top.
  • Serve and enjoy warm.

Cut the chicken into 1 1/2- to 2-inch pieces that are roughly the same size. Place the cut chicken into the marinade and let marinate for 15 to 20 minutes (or you may do the night before or morning of grilling).
  • Make the peanut sauce: In a small saucepan over low heat, stir together 1/2 cup coconut milk, 3 tablespoons peanut butter, 1/2 tablespoon red curry paste, 1/2 tablespoon lime juice, 1/2 tablespoon fish sauce and 1 teaspoon Swerve Sweetener. Be sure to heat the sauce at a lower temperature to prevent liquids from separating. Continue stirring sauce until smooth and heated. Remove from heat and place in small serving bowl.
  • Grill and serve: After marinating the chicken, thread onto skewers, leaving a little space between each piece of chicken. Heat the grill to high and place the skewers directly over the heat and grill for about 4 minutes. Flip the skewers and grill for an additional 3 to 5 minutes (for total 8 to 10 minutes), until thermometer reaches 165 degrees. Remove skewers from grill, plate and serve with peanut sauce and lime wedges (for squeezing juice over chicken).
