1 cup coconut oil
¼ cup unsweetened vanilla-flavored almond milk
2 teaspoons vanilla liquid stevia, or as needed

Steps:

  • Line a loaf pan with parchment paper.
  • Combine peanut butter and coconut oil in a microwave-safe dish. Microwave 30 seconds until slightly melted. Add to blender with almond milk and stevia; blend until well combined. Pour into loaf pan and refrigerate until set, about 2 hours.

This easy keto fudge recipe needs just 4 ingredients and 10 minutes prep! And, making keto fudge with cocoa powder and sea salt is super easy.

1 cup Coconut oil ((solid))
1/4 cup Besti Powdered Erythritol ((to taste))
1/4 cup Cocoa powder
1 tsp Vanilla extract
1/8 tsp Sea salt
Coarse sea salt flakes ((optional - for topping))

Steps:

  • Line a 28 oz rectangular glass container with parchment paper, so that the parchment hangs out over the sides.
  • Using a hand mixer at LOW speed, beat the coconut oil and sweetener together, just until fluffy and combined.
  • Beat in the cocoa powder, vanilla and sea salt to taste. Adjust sweetener to taste. Do not overmix.
  • Transfer the mixture to the lined container. Smooth the top with a spatula or spoon.
  • Refrigerate the keto fudge for about 45-60 minutes, until solid.
  • Sprinkle the top of the fudge with sea salt flakes and press gently.
  • Run a knife along the edge and take out using the edges of the parchment paper. Slice carefully - see post above for slicing tips.
  • Keep the fudge refrigerated and bring to room temperature right before serving. You can also freeze it - see tips above. Do not leave at room temperature for prolonged periods, as it will melt easily.

1 - 2 drops liquid stevia

Steps:

  • In a small bowl, mix together the coconut oil, peanut butter, salt, vanilla extract, and liquid stevia (or another no-calorie sweetener). Whisk until smooth and creamy.
  • Line a 6-muffin tray with muffin paper cups. Spoon about 3 tablespoons of the peanut butter mixture into each cup.
  • Place in the refrigerator for at least 1 hour, or overnight, to set.
  • While the peanut butter layer is chilling, whisk together the ganache ingredients until silky smooth.

20-30 drops low carb monkfruit sweetener, or to taste (optional)*

Steps:

  • Line a 12-cup muffin pan with aluminum or paper cupcake liners. Paper liners can soak up the healthy oils in this recipe. Set aside. Clear some space in the freezer for this pan-you will need it later.
  • Add coconut butter to a microwave-safe mixing bowl. Heat in 10-second increments until completely melted.
  • Add peanut butter and cocoa powder. Whisk until well incorporated and smooth. Optionally, add monkfruit sweetener as recommended, or to taste. I used 30 drops. Whisk until well mixed.
  • Using a tablespoon, scoop and drop about 2 tablespoons of mixture evenly into each cupcake liner.
