Kielbasa and Bow Ties image

This, like many of my recipes, was the result of a good refrigerator cleaning. The ingredients mix up into a quick, satisfying meal for one. -Shirley Kacmarik, Glasgow, Scotland

3/4 cup uncooked bow tie pasta
1 bacon strip, diced
2 medium fresh mushrooms, sliced
6 spinach leaves
6 slices smoked kielbasa or Polish sausage (1/2 inch thick)
3 grape tomatoes, halved
3 pitted ripe olives, sliced
2 tablespoons mayonnaise
2 tablespoons sour cream

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In the drippings, cook mushrooms for 3-4 minutes or until tender. Stir in spinach and kielbasa; heat through. , Remove from the heat. Drain pasta; add to kielbasa mixture. Stir in the tomatoes, olives, mayonnaise, sour cream and bacon.

8 ounces uncooked bow tie pasta
1 pound smoked kielbasa or smoked Polish sausage, cut into 1/4-inch slices
1 jar (4-1/2 ounces) sliced mushrooms, drained
2 tablespoons butter
2 garlic cloves, minced
1 tablespoon cornstarch
1-1/2 cups whole milk
1-1/2 cups fresh or frozen snow peas
1 cup shredded cheddar cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute sausage and mushrooms in butter. Add garlic; cook 1 minute longer., Combine cornstarch and milk until smooth; gradually add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain pasta; add to sausage mixture. Stir in peas and cheese; cook until cheese is melted. Freeze option: Cool pasta; transfer to freezer containers. Freeze for up to 3 months. To use, thaw in refrigerator overnight. Place in a Dutch oven; heat through. Sprinkle with additional cheese.

Steps:

1 lb red potatoes, cubed
3 tablespoons water
3/4 lb smoked kielbasa, cut into 1/4-inch slices (or Polish sausage)
1/2 cup . chopped onion
1 tablespoon olive oil
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/2 teaspoon dried thyme
1/4 teaspoon pepper
4 cups fresh Baby Spinach
5 slices bacon, cooked and crumbled

Steps:

  • Place potatoes and water in a microwave dish; cover and microwave on HIGH for 4 minutes or until tender; drain.
  • In a large skillet, saute kielbasa and onion in oil until onion is tender.
  • Add in potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.
  • Combine the brown sugar, vinegar, mustard, thyme, and pepper; stir into skillet.
  • Bring to a boil; decrease heat and simmer, uncovered, 2-3 minutes or until heated through.
  • Add in spinach and bacon; cook and stir until spinach is wilted.
