KIELBASA AND POTATOES RECIPE
This easy kielbasa and potatoes recipe is a classic comfort food your family is sure to love.

Steps:
- Preheat skillet on med-high heat.
- Cut the kielbasa sausage into slices, and drop in the heated pan. Stir while frying.
- As kielbasa is browning, chop the onion and potatoes.
- Once the sausage has browned for approximately 6 minutes, scoop it out and put aside. Much of the fat will have rendered. Make sure to leave grease in the pan.
- Dump the chopped potatoes into the hot skillet with the kielbasa grease. Add the paprika, salt and oregano. Stir to coat in the fat and reduce the burner to medium to medium-low. Cover.
- Brown the potatoes for 13 minutes, stirring regularly.
- Add the onions and garlic. Cook for about 12 minutes. Covered, but stirring regularly.
- Once the potatoes have softened and onions are cooked add the kielbasa back into the pan mix in and all cook for 4 minutes.

- Place potatoes and water in a microwave-safe dish. Microwave, covered, on high until potatoes are tender, 3-4 minutes; drain., Meanwhile, mix brown sugar, vinegar, mustard, thyme and pepper. In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.

- 1. Place oil in hot skillet. Brown the potatoes working in batches. Once all are brown add all back to pan with onions and garlic. Add more oil if needed. Once the onions are translucent and starting to brown add the kielbasa. Cook until potatoes are done. Taste and season with salt and pepper. Garnish with parsley

- 1. Preheat oven to 325. Thinly slice the raw potatoes (I leave the skin on) and spread on the bottom of a 13x9 pan, lightly season with salt and pepper to taste. Then, thinly slice the onion, layer on top of the potatoes, salt and pepper on these as well. Lastly, slice the kielbasa and layer that on top (I don't salt again, kielbasa is salty enough for me). Bake for about 30 minutes or until you stick a knife in the center and the potatoes are soft. You may want to check during and cover if kielbasa is browning too much. Serve hot/warm with a nice salad and some nice crusty bread!!
- 2. This recipe is SO easy and versatile, you can use any size pan, just adjust the recipe to fit your pan. I just make sure I have pretty even layers of each ingredient. Or if your a potato lover, add more, or more kielbasa, its really just to your personal taste.

- In a large pot, boil potatoes.
- While the potatoes are cooking, cut the sausage into 1/4 inch pieces.
- When the potatoes are ALMOST done-not fork tender, drain.
- When potatoes are cool enough to handle, dice.
- In a large pot, add oil, onions and garlic.
- Saute until translucent.
- Remove from burner and add paprika. Mix well.

- Add potatoes, onions, garlic, and pepper. Fry until potatoes are golden and onions are translucent, about 8 minutes.

- Slice kielbasa into 1/4 inch rounds.
- Place sliced kielbasa into a large skillet and cook over medium heat until they start to brown. Make sure to occasionally stir so that they don't stick.
- Carefully remove the kielbasa sausage from the skillet but be sure to leave any grease.
- Add in olive oil, diced potatoes, salt and pepper. Stir the potatoes and then cover the skillet. Cook for 8-10 minutes, stirring occasionally, or until potatoes start to soften.
- Remove lid and add in diced onion and bell pepper. Keep cooking another 7-8 minutes or until they start to soften.
- Stir in minced garlic and cook 1-2 minutes more.
- Add in kielbasa and let warm through, about 5 minutes. Optional garnish with fresh parsley. Serve hot.

- In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add sausage slices, and cook until brown.
- Remove sausage slices from skillet, and drain grease. Add remaining olive oil and butter to the skillet and heat over medium-low.
- Spread sliced onions evenly over the bottom of the skillet. Stir onions to coat them with the oil and butter mixture.
- Cook onions for about 20 minutes or until soft and brown. If onions seem to be cooking too quickly, lower heat to prevent them from burning.

- Thinly slice both bell peppers and the onion.
- Quarter Kielbasa length-wise and cut into bite-sized pieces.

- Toss in potatoes, carrots, onions, and garlic.
