STEAMED-CHICKEN RICE BALLS WITH DIPPING SAUCE

Steps:
- Rinse rice and soak for 2 to 3 hours. Drain and set aside.
- Mix together the chicken, egg, onion, water chestnuts, jalapenos, cilantro, and salt in a bowl. Shape into 24 (1-inch) balls.
- Cover a baking sheet with waxed paper. Spread the rice onto a flat surface and roll the balls of chicken to coat with rice. Place the rice balls on the waxed paper, cover with a second piece of waxed paper, and refrigerate or freeze for at least 1 hour. Once chilled, you can transfer the rice balls to an airtight container, separating them with layers of waxed paper, and refrigerate or freeze for future use.
- When it's almost time to serve, boil water in a pot or the bottom half of a steamer. Line the steaming basket or top half of the steamer with the lettuce leaves, place the rice balls on top of the lettuce, cover, and steam over a rolling boil for about 30 minutes.
- To make the dipping sauce, stir together the soy sauce, lime juice, and simple syrup. Serve in a small bowl alongside the rice balls.
KITTICHAI'S RICE CRACKERS WITH CHICKEN-AND-SHRIMP DIPPING SAUCE

Steps:
- Drain the sesame seeds, put them in a small pan and place over medium heat. Cook, shaking the pan, until the seeds are dry and lightly toasted. Pour them into a bowl and stir in the chilies, nori and coriander. Lightly spray one side of the rice crackers with Pam, then sprinkle with salt and the spice mixture.
- Heat the oil in a large sauté pan over medium heat. Add the garlic and shallot and cook until softened. Stir in the chicken and cook until no longer raw-looking. Stir in the shrimp and cook until white. Add the cilantro root and palm sugar (available at indomerchant.com). Season with pepper. Pour in the coconut milk and heavy cream and stir until the palm sugar is dissolved. Add about 1 teaspoon fish sauce. Bring to a boil, then reduce the heat to an active simmer and reduce by half -- it should be brothy, not thick. Season to taste with fish sauce. Serve at room temperature with the rice crackers.

- Cook rice in water with chicken bouillon for 20 minutes or until done. Put on the side.
- Cut chicken breast into thumb size pieces.
- Put flour and spices into small bowl. You can change amounts or types of spices to your taste. Mix the flour and spices together.
- Heat oil in skillet.
- Put chicken pieces in flour and dredge them till covered. Put into heated oil in skillet.
- Cook chicken till no longer pink in color.
- Add frozen salad shrimp. These should be the ones that come 100 to a pound. You can add more if you really like shrimp.
- Add soy sauce or Braggs Liquid Aminos to the skillet. The flour, water from the shrimp and soy sauce form a thin sauce.
- Cook down till shrimp are hot and sauce is thin.
- Put rice on plate. Add chicken and shrimp mixture. Mix so the sauce is stirred well into the rice.

- On 12 metal or soaked wooden skewers, alternately thread shrimp and chicken. Place in a large shallow dish; set aside. , In a small skillet, saute green onions in butter until crisp-tender. Add garlic; cook 1 minute longer. Stir in the parsley, wine , lemon juice and lime juice. Remove from the heat; cool slightly. Pour over skewers and turn to coat. Cover and refrigerate for 4 hours, turning occasionally., In a small saucepan, saute onion in butter. Add the remaining sauce ingredients; cook and stir until blended. Remove from the heat; set aside., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Prepare grill for indirect heat. Grill skewers, covered, covered, over indirect medium heat or broil 4 in. from the heat for 7 to 8 minutes, turning often. Brush with 1/4 cup sauce during the last minute of grilling. Serve with remaining sauce.

- Whisk mayonnaise, ketchup, and garlic powder together in a bowl; add Worcestershire sauce to the mayonnaise mixture and whisk until smooth.
