Knuckle of pork with mashed swedes (Flasklagg med rotmos) image

A traditional Swedish dish. I couldn't resist posting it for the fun of its name when translated into English. Typical autumn or winter food. In Sweden we use slightly salted meat (a kind of preservation), but it's OK to use fresh meat.

1 (4 lb) pork knuckle, with bone (salted if available)
bouquet garni (a little thyme, laurel and parsley)
1/2 teaspoon white peppercorns
1 -2 tablespoon salt (if using unsalted meat)
1 lb swedes
1 lb potato
1 small carrot
salt
pepper
2 tablespoons butter
strong mustard (e.g. Dijon or Colman)

Steps:

  • Rinse the knuckle.
  • (If using salted, soak in cold water for 12 hours).
  • Cover with water in a pot, add the bouquet, pepper and salt.
  • Bring to a boil and let simmer for 2-3 hours, or until done.
  • One hour before serving, peel and cut the roots into chunks.
  • Take some of the broth and boil the swedes for 30 minutes.
  • Then add the potatoes and the carrot and some more broth if necessary.
  • Boil until soft (abt. 20 minutes).
  • Now there should not be much liquid left.
  • Mash the roots, add salt and pepper to taste, and eventually stir in the butter.
  • Serve with the knuckle and mustard.

A classical Swedish dish. Oxjärpe (singular) means 'Beef hazel hen' which alludes to its shape resembling a hazel hen breast. Maybe not an everyday dish for weight watchers, but they melt in your mouth. Kids usually love it. In Sweden it's often served with cucumber and jelly, but personally I think it doesn't fit.

800 g ground beef
300 ml heavy cream
milk (see below)
200 ml dry breadcrumbs
2 eggs
2 egg yolks
1 onion, finely chopped
1 tablespoon butter
salt
pepper
1 pinch nutmeg
75 g butter, at room temperature
3 tablespoons parsley, chopped
1 dash Worcestershire sauce (optional)
salt
pepper
1 tablespoon butter
1 tablespoon wheat flour
350 ml beef stock (cubes+water)
1 teaspoon soy sauce
250 ml heavy cream
salt
pepper

Steps:

  • Heat the oven to 235 C/455°F.
  • Soak the breadcrumbs in the cream. Different brands of breadcrumbs absorb different amounts of liquid, so add some milk if it becomes very dense. Stir to avoid lumps.
  • Mix butter, parsley, Worcester sauce, salt and pepper to a parsley butter. Divide in eight balls.
  • Fry the onion in the butter until transparent. Let cool.
  • Mix ground beef, breadcrumbs, eggs, egg yolks, fried onion, salt, pepper and nutmeg.
  • Using wet hands, make eight croquettes with a round shape, like chicken breasts. Fill them with the parsley butter balls. Put in a greased oven casserole.
  • Bake in the oven for 20 minutes, turning once.
  • In the meantime, make the sauce: Slowly fry the flour in the butter until browned. Add stock and soy sauce and simmer for five minutes. Add cream and reduce the sauce to desired thickness. Season with pepper and salt if necessary.
  • There will probably be some fat from the croquettes in the tray. Discard that.
  • Serve the croquettes hot with sauce, boiled or fried potatoes, pickled cucumber and blackcurrant jelly.

butter (for frying)

Steps:

  • Mix all ingredients and make four nicely shaped, high burgers.
  • Fry them at once in lots of butter (they should not be made in advance).
  • They should be medium rare inside.
  • Serve the beefs with the butter they fried in and fried potatoes, or on a toast.
  • You can also put a fried egg on top.

Method. 1. Peel the vegetables. Cut them into large evenly sized pieces, about 4 cm (1½ inches) across. 2. Place the Hamburg parsley, swede, parsnip or turnip into a saucepan and cover with lightly salted water. Crumble a vegetable stock cube (optional) and add it to the saucepan. Bring to the boil and simmer for about 30 minutes.
