TURKEY BURGERS

Extra-virgin olive oil, for the pan
1 onion, cut into 1/4-inch dice
Kosher salt
4 scallions, chopped
2 cloves garlic, smashed and finely chopped
1-inch piece fresh ginger, peeled and grated
1 1/2 pounds ground dark meat turkey or 50/50 blend turkey
One 8-ounce can water chestnuts, drained and coarsely chopped
1/2 bunch fresh cilantro leaves, finely chopped
1/4 cup soy sauce, plus more to taste
2 tablespoons sambal oelek, plus more to taste
4 sesame burger buns
4 slices Cheddar
1/4 cup mayo
4 slices beefsteak tomatoes
4 slices raw red onion
8 Romaine lettuce leaves

Steps:

  • For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions, stirring occasionally, until they are soft and very aromatic, 7 to 8 minutes. Add the scallions, garlic and ginger and cook until fragrant, 1 to 2 minutes. Turn off the heat and let cool.
  • In a large bowl, combine the turkey, water chestnuts, cilantro, soy sauce, 1 tablespoon of the sambal oelek and the onion mixture. (Reserve the onion pan to cook the burgers in later.) Using your hands, squish everything together until really well combined.
  • Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
  • When the burger mix is seasoned appropriately, shape it into 4 equal patties.
  • Coat the saute pan with olive oil and heat over medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side.
  • Preheat the oven to high broil.
  • Transfer the burgers to a baking sheet lined with a wire rack. Place the buns, cut side up, on the same rack. Transfer to a low rack in the oven and broil until the burgers are cooked through and the buns are toasted, 2 to 3 minutes. Remove the buns from the rack and top the burgers with cheese. Return to the oven and broil until the cheese melts, about 1 minute.
  • Stir to combine the mayonnaise and remaining 1 tablespoon sambal oelek in a small bowl. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with a slice of tomato and onion and a piece of lettuce. Close up each burger, give each one a little squish and eat em' up!

I made burgers similar to these in my college training, and tweaked them a little to satisfy picky eaters at home! Moist and juicy burgers guaranteed every time. Garnish the burger with a slice of pancetta, ancient grainy mustard, red onion slices, iceberg lettuce, and Swiss or blue cheese.

1 ⅓ pounds ground beef
½ cup bread crumbs
1 shallot, minced
2 tablespoons Dijon mustard
1 egg
1 teaspoon minced garlic
1 pinch kosher salt
1 pinch ground black pepper
6 slices pancetta
6 hamburger buns, split

Steps:

  • Mix ground beef, bread crumbs, shallot, Dijon mustard, egg, garlic, salt, and black pepper together in a large bowl. Refrigerate mixture to incorporate flavors, 20 minutes to 2 hours.
  • Form ground beef mixture into 6 patties.
  • Heat a skillet over medium heat; lay pancetta slices in a single layer in the hot skillet. Cook until pancetta begins to sweat, 3 to 5 minutes. Remove pancetta from skillet and keep warm.
  • Preheat grill for medium heat and lightly oil the grate.
  • Cook patties on the preheated grill until burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium-well burgers. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
  • Place 1 burger into each of the buns; top burger with a pancetta slice.

2 1/2 ounces ground turkey breast
2 1/2 ounces ground chicken breast
2 1/2 ounces skinless duck breasts, ground
1 tablespoon minced shallot
1 teaspoon fresh sage, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh tarragon, chopped
1/2 teaspoon kosher salt
1/2 teaspoon fresh coarse ground black pepper
4 brioche buns
Baby Spinach
2 tomatoes
4 slices of irish porter cheddar cheese
2 ounces bacon grease
8 slices bacon
1/2 cup cranberry puree
1 tablespoon mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh parsley, chopped
salt and pepper

Steps:

  • * Personal note:.
  • I suggest that you soak your duck breast in very cold light brine for 24-48 hours to get the gamey flavor out of it. Change the brine after each day.
  • Brine Recipe:.
  • 4 cups water.
  • 1/4 cup salt.
  • 1/4 cup Brown Sugar.
  • Heat water to boiling, dissolve salt and sugar into water. Let brine cool completely before submerging duck breasts in chunks. I recommend placing it into the refrigerator to get it cold.
  • Patties:.
  • In a bowl, add the meat, herbs and salt and pepper. Mix all together well done making 8-oz. each patty.
  • Grill your Turducken patties to minimum 165 degrees and melt your Irish Porter Cheese on them. The bacon grease adds fat, we want to aim for a 80/20 mix of meat to fat, much like ground beef.
  • To build the burger:.
  • Brioche Bun.
  • 2 Bacon Strips.
  • Baby Spinach.
  • Tomato.
  • 2 Oz of Cranberry-Dijon Mustard Sauce.
  • Turducken Patty + Cheese.
  • Brioche Bun.
  • Sauce:.
  • In a small bowl, mix all ingredients together.

2 pounds ground turkey
1 green apple, chopped
¼ cup chopped fresh mushrooms, or to taste
3 scallions, or more to taste, chopped
3 tablespoons barbeque sauce
2 tablespoons spicy mango chutney, or more to taste
2 tablespoons red pepper jelly
2 dashes Worcestershire sauce, or to taste
1 pinch seasoned salt, or to taste
1 pinch garlic powder, or to taste
ground black pepper to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Mix ground turkey, green apple, mushrooms, scallions, barbeque sauce, chutney, red pepper jelly, Worcestershire sauce, seasoned salt, garlic powder, and black pepper by hand in a large bowl; shape into 8 patties.
  • Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 jumbo hamburger bun with sesame seeds (4-inch diameter)
1/4 cup chopped iceberg lettuce
1 tomatoes, slice thin
2 slices cooked bacon
2 slices pickles
2 teaspoons mayonnaise
2 teaspoons kraft original barbecue sauce
1 slice American cheese
salt and pepper

Steps:

  • Mix the mayonnaise and barbecue sauce. This is your secret sauce.
  • Microwave your bacon slices 30-45 seconds to crisp, set aside.
  • Cook the beef, and toast the buns as directed above.
  • Dress your toasted top bun (crown) as follows:.
  • secret sauce, spread evenly with a knife, pickles, lettuce, cheese, bacon, tomato.
  • Place the cooked beef patty on the dressed crown. Finish with the toasted heel.
  • Microwave 10 seconds to warm the bun, and serve.
