3 ¼ pounds pig's feet, rinsed and patted dry
1 ½ cups vinegar
1 ½ cups water
⅓ cup soy sauce
1 onion, diced
2 cloves garlic, crushed
1 tablespoon whole black peppercorns, crushed
3 bay leaves
1 tablespoon white sugar
salt to taste

Steps:

  • Combine the pig's feet, vinegar, water, soy sauce, onion, garlic, peppercorns, bay leaves, sugar, and salt together in a stockpot; bring to a boil for 2 to 3 minutes. Reduce heat to medium-low; allow the stew to simmer, stirring occasionally, until the meat pulls easily from the bones and the liquid has thickened, about 1 hour. Serve hot.

This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

8 pig feet, split
2 celery ribs, chopped
1 onion, chopped
¾ cup white vinegar
2 tablespoons red pepper flakes
2 tablespoons seasoned salt
1 tablespoon chopped garlic
1 teaspoon ground black pepper
2 bay leaves
water, or as needed to cover

Steps:

  • Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
  • Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

1 Bunch Spring Onion
300 ml Ganjang (korean soy sauce)
2 Piece Ginger
1 Tsp Instant Coffee Powder
8 Clove Garlic Clove
5 Piece Bay Leaf
100 ml Matsul (oder Mirin)
1 Cup (1 Cup = 200 ml)
1 Tsp Pepper
1 kg Pigs Feet
400 ml Soju (or White Wine for Cooking)
3 Piece Star Anise
1200 ml Water
1 Cup (1 Cup = 200 ml) Sugar

Steps:

  • Soak 1.7 pig trotter in the cold water at least 10 hours. Wash it clearly to reduce its blood. While you boil water in the large stockpot, touch the skin of Pig's feet. If it has a rough area, you have to remove its furs with a shaver or a beauty razor. Put the pig's trotter and 1 Tablespoon ginger paste in the pot. Boil them for 20 minutes. And then, throw away the hot water and take the pig's feet out. You should wash and rinse it in cool water with a brush. Preparation of all the seasoning: 2 leaves Bay leaf, 3piece Jujubes, 1 Table spoon Ginger paste, 1 piece Medium Onion, 3 piece Dried Korean chill pepper, 4 piece Large green onion, 1 Teaspoon Black pepper, 1 Teaspoon Cinnamon powder, 1 Teaspoon Ground black coffee, 3 table spoon Doenjang(Korean Soy bean paste), 20g Wine(Korean cooking wine) , 8 piece Garlic, 60g Ganjang(Korean Soy sauce). Put all the prepared ingredients into a cheesecloth or a tea bag and tie it tightly and add into the pot. Fill up 2 l water and put 3 table spoon Doenjang, 20 gr Wine(Korean cooking wine), Ganjang 60gr, 50gr Sugar, 100gr Rice syrup, 1 table spoon Salt, the pork feet into the pot and boil them over the medium height heat for an hour and then turn down the heat over medium heat. Simmer them again for an hour until they are tender. Transport the pulled pork into a cutting board and cool it down for 10 minutes. Cut large chunk of meat and place it on a dish. Sprinkle a little sesame seeds and sliced green onion over the meat. It is served with shrimp paste, lettuce and Ssamjang.

1 whole pork trotters/feet (long form with hock, about 2 lbs)7 large-sized jalapeno peppers, diced (about 2 cups)1 medium-sized yellow onion, diced (about 1 cup)3 cloves garlic, finely chopped (about 1 Tbsp)1 Tbsp fresh ginger root, finely chopped3 Tbsp soy sauce1 tsp fish sauce1 tsp ground black pepper2 Tbsp red chili pepper powder (gochugaru)½ tsp salt2 Tbsp olive oil1 tsp sesame oil1 tsp sesame seeds (optional)

Steps:

  • Remove any hair on the pig trotter(s) if necessary by carefully scraping the sharp edge of your kitchen knife along the skin of the pork trotter(s) or by using a razor. Rinse pork trotters off really well with cool water and drain.u00A0
  • Separate the skin/meat from the bone as much as possible. Chop the skin/meat into about 1-inch pieces.
  • Put a medium-sized pan with a tablespoon of oil on low heat. Put the trotter bone in the pan. Cover the pan and allow to cook covered for about 20 minutes.u00A0
  • Uncover the pan after 20 minutes, and turn the stove up to medium-high heat. Add another tablespoon of oil to the same pan with the pork trotter bone(s). Add the chopped skin/meat to the pan and stir fry for about 3-4 minutes. Then cover the pan, and allow to continue cooking for another 4-5 minutes.u00A0
  • Next, remove the cover/lid again. Add in the jalapeno peppers, onions, ginger and garlic, and stir fry for another 4 minutes.u00A0
  • Now, turn the heat down to low, add the remaining ingredients (soy sauce, fish sauce, ground black pepper, red chili pepper powder, salt) to the pan and continue stir-frying for another 2-3 minutes. Turn off the stove and remove the pan from heat. Drizzle sesame oil over the top and mix well. Sprinkle sesame seeds on top.
  • Enjoy!
