This is the recipe for the fruitcake that used to be sold by Kresge's (K-Mart)every Christmas. At one time they were handing out the recipe to lucky shoppers. It's one of our favorite seasonal cakes. It just wouldn't be Christmas without it. Bake times are guestimates.

Number Of Ingredients 12

1 cup butter
1 1/2 cups white sugar
5 large eggs, separated
1 cup milk
3/4 cup blanched almond
1 cup mixed peel, diced
1 1/4 cups glace cherries
3 cups white raisins
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
2 teaspoons lemon extract

Steps:

  • Line 2 loaf pans with well greased brown paper or foil, shiny side down. (9 x 5 x 3 inches).
  • Preheat oven to 275°F.
  • Cream butter and sugar together for five minutes.
  • Stir in beaten egg yolks. Stir in milk; mix well.
  • Chop the almonds and the fruits. Mix together and then stir into creamed mixture.
  • Sift together dry ingredients and stir into creamed mixture, combining well.
  • Beat egg whites until stiff, but not dry. Fold into cake batter along with the lemon extract.
  • Pour batter into prepared pans.
  • Bake until cake tests done, using a skewer. (About 1 hour).
  • Allow to rest on rack and cool to warm before removing from pans.

FRUITCAKE WITH RUM



Fruitcake With Rum image

This is a fantastic mixed fruitcake. I usually start making these in October for Xmas presents. Sometimes I make them in mini pans too. Absolutly delicious and a welcome gift. As they are sitting I add more rum to the soaked cheesecloth about every week to keep them moist. I found this recipe in a Montreal newspaper (The Gazette) and have use it for 20 years now. Time does not include overnight marinating time.

1 1/2 cups golden raisins
1 1/2 cups raisins
1 cup dates (chopped)
1 cup dried apricot (chopped)
1 cup golden fig (chopped)
1 cup blanched almond (whole)
1 cup pecans
1 1/2 cups candied citrus peel
1 cup candied cherry (halved)
1/2 cup dark rum
1 cup unsalted butter
1 cup brown sugar (packed)
4 eggs
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon ground cloves

Steps:

  • In a large bowl mix the first nine ingredients. Pour rum over and stir. Cover and let sit overnight. Stirring occasionally.
  • In a large bowl cream the butter with the brown sugar until fluffy.
  • Beat in eggs one at a time beating well after each egg.
  • In a medium bowl sift 2 cups of the flour with baking powder,salt, cinnamon, allspice and cloves.
  • Add dry ingredients to the creamed mixture and stir well.
  • Toss 1/4 cup flour with the rum soaked fruits.
  • Pour batter over the fruit mixture and mix really well. Batter will be very thick.
  • Spoon into two 9 X 5 loaf pans lined with greased brown paper. Smooth the tops of the batter in the pans. If you wish arrange some candied cherries and almonds on top of batter.
  • Place pans in middle of the oven which has been preheated to 275°F Also place a shallow pan of water on the bottom rack. Bake for 3 to 3 1/2 hours or until toothpick comes out clean. Place loaves in pan on rack for 15 minutes to cool completely. Remove paper or foil and wrap in rum soaked cheesecloth and wrap in foil. Store in cool, dry place for several weeks.

Yield Makes five 6-inch cakes

Number Of Ingredients 12

1 pound (4 sticks) unsalted butter, room temperature, plus more for pan
2 cups plus 1 tablespoon sugar, divided
12 large eggs
1/2 cup molasses
4 pounds candied and dried fruits, such as citron, lemon peel, orange peel, sour cherries, apricots, and golden raisins, chopped, divided (12 cups)
2 pounds nuts, such as walnuts and pecans, coarsely chopped (8 cups)
2 1/2 cups all-purpose flour
2 tablespoons ground allspice
2/3 cup brandy, divided
Glaceed fruits, such as figs, oranges, pears, apricots, peaches, and pineapple, for garnish
Candied cherries and kumquats, for garnish
1 cup apricot jam

Steps:

  • Heat oven to 275 degrees. Butter five 6-by-2-inch round cake pans. Butter five strips of 18-by-3-inch parchment paper to form a collar for each pan.
  • Cream butter and 2 cups sugar in the bowl of an electric mixer until light and fluffy, about 3 minutes. Add eggs one at a time. Mix in molasses and 2 cups of candied fruit, blending well. Remove batter to a large bowl and add one-quarter of the nuts. Sift in flour and allspice 1 cup at a time, mixing well between additions. Add remaining candied fruit and nuts, stirring with a spoon. Divide batter evenly among pans; bake until a toothpick inserted in the center comes out clean, 3 to 3 1/2 hours. While still warm, brush with 1/3 cup brandy mixed with remaining 1 tablespoon sugar. Let cool on wire rack.
  • Gently remove cakes from pans and remove paper collars. Decorate cakes with glaceed fruits and candied cherries and kumquats. Heat apricot jam and remaining 1/3 cup brandy in a small saucepan over medium heat. Strain and brush over fruits to hold in place.

Here's what you need: raisin, sweet red wine, large eggs, unsalted butter, sugar, all-purpose flour, kosher salt, walnut, glazed fruit

½ cup raisin
½ cup sweet red wine
6 large eggs, seperated
1 cup unsalted butter, room temperature, cubed
1 ½ cups sugar
2 cups all-purpose flour
1 teaspoon kosher salt
1 cup walnut, chopped
2 cups glazed fruit

Steps:

  • Preheat the oven to 300˚F (150˚C).
  • In a small bowl, combine the raisins and sweet red wine. Let sit for at least 10 minutes, until the raisins absorb some of the wine.
  • In a medium bowl, use an electric hand mixer to beat the egg whites until medium peaks form. Set aside.
  • In a large bowl, use an electric hand mixer to cream together the butter and sugar. Add the egg yolks and beat until incorporated.
  • Add the salt to the flour, then gradually add the flour mixture to the wet ingredients, beating until just incorporated.
  • Using a rubber spatula, fold in the soaked raisins, walnuts, and glazed fruit until just combined.
  • Gently fold in the egg whites.
  • Transfer the batter to a 9x5-inch (23x13 cm) loaf pan and smooth the top.
  • Bake for 2 hours 15 minutes to 2 hours 30 minutes, until a skewer inserted in the center of the cake comes out clean. Let cool.
  • Serve immediately or wrap in plastic wrap and refrigerate for up to 7 days.

This is a recipe I made up in 1979. I wanted to make something quick and easy. Took me quite a few tries before it turned out though. I entered it in the county fair and took first place plus the gold ribbon which entitled me to enter the State Fair. So I entered the State Fair and came in second. I was told that if I had told the judges it was an original recipe, I would have taken first place. This was the very first time I had ever entered anything like this before, for both fairs and I guess you could say I was wet behind the ears. Oh well, I sure did have fun.

2 cups all-purpose flour
½ teaspoon baking powder
2 tablespoons baking soda
1 ¾ cups white sugar
3 eggs
¾ cup maraschino cherries, drained and halved
1 (20 ounce) can crushed pineapple, with juice
1 cup chopped walnuts
1 cup butter, softened
3 cups confectioners' sugar
1 ½ teaspoons vanilla extract
2 (8 ounce) packages cream cheese, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch Bundt pan.
  • In a large bowl, combine the flour, baking power, baking soda, sugar, eggs, cherries, pineapple and walnuts. Stir by hand with a sturdy spoon just until blended. Spoon into the prepared pan, and spread evenly.
  • Bake for 40 to 45 minutes in the preheated oven, or until the top springs back when lightly touched. Cool, then invert onto a serving plate. While the cake cools, mix together the butter, confectioners' sugar and vanilla in a medium bowl with an electric mixer until fluffy. Stir in the cream cheese, and beat until smooth. Frost cake with the icing when completely cool.

1 cup dried Calimyrna figs, chopped
1 cup dried apricots, chopped
1 cup dried pears, chopped
1/3 cup candied ginger, chopped
1/4 cup candied orange peel, chopped
1/2 cup Cointreau (orange-flavored liqueur), plus more (optional) for brushing
Vegetable-oil cooking spray
3 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
8 ounces (2 sticks) unsalted butter, melted
1 1/2 cups granulated sugar
3/4 cup packed dark-brown sugar
4 large eggs
2 tablespoons dark unsulfured molasses (not blackstrap)
1 tablespoon pure vanilla extract
1 cup chopped toasted walnuts
1 cup sweetened flaked coconut

Steps:

  • Stir together dried fruit, candied ginger, peel, and 1/2 cup liqueur. Let stand at room temperature 3 hours or overnight.
  • Cut parchment paper to line the bottom of a 7-by-3-inch or 9-by-2-inch round cake pan. Coat pan with cooking spray; line with parchment. Spray lining. Flour pan; tap out excess.
  • Preheat oven to 325 degrees. Whisk together flour, baking powder, spices, and salt in a medium bowl; set aside. Put butter and sugars in the bowl of an electric mixer fitted with the paddle; mix on medium speed until smooth. Mix in eggs (1 at a time), molasses, and vanilla. Gradually add flour mixture; mix until smooth. Mix in fruit, nuts, and coconut.
  • Pour batter into pan. Bake until a cake tester comes out clean, about 2 1/2 hours for 9-inch cake or 2 3/4 hours for 7-inch cake. If desired, brush with up to 1/2 cup liqueur. Unmold; let cool.

1 2/3 cups chopped pitted dates
1 cup chopped pecans
1 cup chopped walnuts

2 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
4 large eggs
2 teaspoons vanilla extract
1/4 teaspoon lemon extract

Steps:

  • Preheat oven to 325° F. Butter and flour 10-inch-diameter angel food or tube pan. Combine first 3 ingredients in large bowl. Add dates, pecans, walnuts and all raisins and toss to coat. Using electric mixer, beat sugar and butter in another large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Add extracts. Add dry ingredients; fold until just combined (batter will resemble cookie dough). Spoon batter into prepared pan. Smooth top. Bake until cake is golden and tester inserted near center comes out clean, about 1 hour and 45 minutes. Cool cake in pan on rack 10 minutes. Using sharp knife, cut around edges of cake to loosen. Turn out cake onto rack; cool completely. (Can be made 2 days ahead. Wrap tightly in plastic.)

2 packages (15.4 ounces each) nut quick bread mix
3 cups mixed candied fruit

Steps:

  • Line three 8x4-in. loaf pans with foil and grease the foil; set aside. In a large bowl, combine eggs and water. Stir in the bread mixes, candied fruit, pecans and raisins. Pour into prepared pans. , Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 30 minutes before removing from pans to wire racks. Carefully remove foil. Wrap in plastic or foil. Store in the refrigerator for several days to mellow. Cut with a serrated knife.
