KRISTEN'S VERSATILE SPINACH CASSEROLE
A Spinach Casserole so nutritious that it can serve as a meatless main dish, so delicious that it makes a great appetizer, and it's a wonderful side dish!

Steps:
- Combine the eggs and cottage cheese in a large mixing bowl and beat together using a stand or hand mixer.
- Add in the melted butter and then the cheese and mix with a spoon. Add the spinach and mix in well.
- Sprinkle the flour, salt and pepper over all and stir in well.
- Bake in a 13x9" glass pan at 350 degrees for 1 hour.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Place cottage cheese, eggs, flour, sour cream, salt, and pepper in a food processor. Process until smooth. Mix spinach, cottage cheese mixture, and 2 cups of Cheddar cheese in a bowl, then spread into the prepared baking dish.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Top with the remaining 2 cups of Cheddar cheese and continue baking until cheese has melted, about 10 minutes.
