GRILLED LAMB RIB CHOPS WITH A FRESH CHERRY PORT SAUCE



Grilled Lamb Rib Chops with a Fresh Cherry Port Sauce image

Lamb rib chops are coated with a thyme, rosemary, and garlic marinade then grilled to medium rare and topped with a cherry port sauce in this elegant summer dinner.

8 lamb rib chops, (or loin chops)
2 tbsp fresh chopped thyme
1 tbsp fresh chopped sage
1 tbsp fresh chopped rosemary
1 tbsp fresh chopped basil
3 cloves garlic, (minced)
1 tsp kosher salt
2 tbsp olive oil
2 1/2 tbsp unsalted butter, (divided)
2 shallots, (thinly sliced)
2 cloves garlic, (smashed)
4 sprigs fresh thyme, (plus 1 tbsp of thyme leaves)
pinch kosher salt
1/2 cup ruby port
1/2 cup chicken stock
2 tbsp balsamic vinegar
10 fresh cherries, (pitted and sliced in half)

Steps:

  • Lay out your lamb chops and trim any excess fat. Then mix together all the herbs, garlic, salt, and olive oil. Rub them over the lamb. Let the lamb marinate in the refrigerator for at least 8 hours, up to 1 day.
  • Take the lamb out about 30 minutes before you are going cook it. Preheat the grill to high. Grill the lamb on high with the cover open about 4 minutes per side for medium rare. Check the lamb with your meat thermometer. Medium rare is 120-125F. Medium is 130-135. Let the lamb rest for 5 minutes.
  • After you take the lamb out of the refrigerator, being making the sauce. Heat 1/2 tbsp of the butter in a medium saucepan over medium heat. Once it melts and foams up, add the shallots, garlic, thyme sprigs, and a pinch or two of kosher salt. Saute for 2 minutes, or until the shallots are soft.
  • Add the port, stock, and vinegar. Bring to a boil over high heat. Keep the sauce at a rolling boil for 5-6 minutes, until the liquid is reduced by half. Strain out the solids and return the sauce to the pan. You can stop here until the lamb is cooked.
  • Bring the sauce back to a boil. Add the cherries and boil 1 minute. Take the sauce off the heat and let cool a few moments. Cut up the remaining 2 tablespoons of butter into 8 pieces. Add each piece, one at a time, and swirl it around until it melts. Once all the butter has been added, stir in the thyme leaves and serve with the lamb.

Steps:

  • Heat oil in heavy medium nonstick skillet over medium-high heat. Sprinkle lamb with salt and pepper. Add lamb to skillet; cook to desired doneness, turning often, about 10 minutes for medium-rare. Transfer lamb to plate. Pour off drippings from skillet. Add shallots to same skillet; sauté 1 minute. Add Port, broth, cherries, jam, vinegar, and cardamom; boil until cherries plump and liquid is syrupy, about 6 minutes. Season with salt and pepper. Spoon sauce over lamb. Sprinkle with mint.

Glaze:
1 cup cherries
3/4 cup Gut-Healing Bone Broth
2 teaspoons apple cider vinegar
2 teaspoons honey
1 tablespoon tapioca starch
Lamb:
4 (1/2-inch-thick) 100% grassfed, pasture-raised lamb chops
2 tablespoons avocado oil
2 tablespoons fresh rosemary leaves
1 teaspoon minced garlic
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground
Black pepper

Steps:

  • To make the glaze:
  • In a saucepan at medium-high heat, combine the cherries, 1/2 cup bone broth, apple cider vinegar, and honey. Bring to a boil, and then lower the heat to a simmer for 8 minutes, stirring occasionally. In a separate bowl, add 1/4 cup bone broth and tapioca starch. Whisk together. Once combined, pour into saucepan and stir until sauce thickens.
  • To make the lamb chops:
  • Turn the oven to broil. Brush the avocado oil on the chops. Combine seasonings and press evenly onto chops. Place chops in a baking dish and broil for 5 to 6 minutes on each side. Transfer lamb to a plate and let rest for 5 minutes. Top with cherry glaze and serve.

1 1/2 cups fresh or frozen (not thawed) pitted sour cherries (1/2 lb)
1 tablespoon sugar
8 (3/4-inch-thick) rib lamb chops (2 lb total), trimmed of excess fat
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1 cup thinly sliced shallot (4 oz)
1/2 cup beef broth
2 tablespoons balsamic vinegar
2 tablespoons unsalted butter
4 tablespoons finely chopped fresh mint

Steps:

  • Stir fresh cherries together with sugar and macerate while browning chops. If using frozen cherries, stir with any juices and sugar and thaw, about 1 1/2 hours.
  • Pat lamb dry and sprinkle with salt and pepper. Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté 4 chops, turning over once, about 6 minutes total for medium-rare. Transfer to a plate and loosely cover with foil. Cook and transfer remaining 4 chops in same manner.
  • Pour off fat from skillet and add remaining tablespoon oil. Heat until hot but not smoking, then sauté shallot, stirring, until golden brown, about 3 minutes. Add cherries with juices, broth, and vinegar and bring to a boil, stirring occasionally and scraping up brown bits, then reduce heat and simmer 3 minutes. Add salt and pepper to taste, then add butter and 2 tablespoons mint, stirring just until butter is melted.
  • Spoon sauce over chops and sprinkle with remaining 2 tablespoons mint.

1 rack of lamb, with 7-8 chops
salt & freshly ground black pepper
1 tablespoon olive oil
2 shallots, minced
2 garlic cloves, minced
2 cups port wine
1 cup beef stock
1 teaspoon Dijon mustard
1 tablespoon unsalted butter, cut into pieces

Steps:

  • Preheat oven to 400 degrees F. Sprinkle chops with salt and pepper. Coat the bottom of a large, ovenproof frying pan with the oil and heat over med.-high heat. Add the chops and sear them until both sides are golden brown, about 2 minutes per side. Place the pan in the oven and roast until an instant-read thermometer registers 130 degrees F., or the meat is deep pink near the bone for med. rare, 6-8 minutes. Transfer to a platter and cover with aluminum foil and set aside.
  • Drain off all but 1 tablespoons of the drippings from the frying pan. Add the shallots and garlic and saute, stirring frequently for 3-4 minutes. Add the Port and stock and bring to a boil over high heat. Cook until reduced b half, about 5 minutes. Reduce the heat to medium. Whisk in the mustard and then the butter. When the butter has melted and the sauce is smoot, season with salt and pepper. Slice the chops in to individual pieces, spoon on the sauce, and serve immediately.

Steps:

  • Season the lamb chops with salt and pepper.
  • Heat the oil in a pan.
  • Add the lamb chops and cook until they reach the desired doneness, about 5 minutes per side to get a thick chop to medium rare.
  • Set the lamb aside and drain the drippings from the pan.
  • Add the shallots and saute for 1 minute.
  • Add the port, broth, cherries, cherry jam, balsamic vinegar and cardamom and deglaze the pan.
  • Bring the mixture to a boil and simmer until it thickens to form a sauce, about 6-10 minutes.
  • Season with salt and pepper.
  • Pour the sauce over the lamb and garnish with the chopped mint.

I don't remember where I found this recipe, but I have been preparing it for years and never follow a recipe. All measurements are approximate. I generally serve this with a white and wild rice mix, or couscous. It also goes well with hot buttered noodles.

2 lamb chops, round bone shoulder chops
1/4 teaspoon fresh ground black pepper
1/2 teaspoon kosher salt
2 garlic cloves, minced
1 teaspoon dried rosemary leaves or 1 tablespoon fresh rosemary leaf, preferred
2 tablespoons olive oil
2 tablespoons butter
1 cup ruby port
4 ounces heavy cream
cooked couscous or cooked noodles

Steps:

  • Preheat oven to 200°F.
  • Season the both sides of the chops with salt, pepper and garlic. Press seasoning into the meat with your fingers.
  • Heat a heavy skillet and heat olive oil and butter until the butter stops foaming. Add the rosemary leaves and the lamb chops to the hot pan.
  • Pan sear the chops over high heat to brown on both sides, approximately 3 minutes per side. Remove the chops to an ovenproof dish, cover loosely with foil and place in the preheated oven for 5 to 10 minutes to keep warm.
  • Keeping the skillet over medium high heat, deglaze with the port and scrape up any "crunchy bits". Reduce the wine by half and stir in the heavy cream. Return the sauce to a boil and reduce for a couple minutes, until the cream coats the back of your spoon.
  • Serve the chops with rice, couscous or buttered noodles and spoon the sauce over.

Steps:

  • Preheat oven to 250°F. Mix flour, 3/4 teaspoon coarse salt, and 1/2 teaspoon ground pepper on large plate. Lightly coat lamb chops with flour mixture; shake off excess. Melt butter with oil in large nonstick skillet over medium-high heat. Add lamb chops and cook to desired doneness, about 3 minutes per side for medium-rare. Transfer chops to baking sheet and keep warm in oven while preparing sauce (do not clean skillet).
  • Add onion to same skillet and sauté 2 minutes. Add cherry juice and bring to boil, scraping up any browned bits.
