SPICED LAMB MEATBALLS WITH YOGURT AND HERBS

Spiced Lamb Meatballs With Yogurt and Herbs image

These spice-loaded meatballs have a Turkish inflection. The warm yogurt sauce adds tang and richness, along with a sprinkling of tart sumac powder and chopped mint. American "Greek-style" yogurt is not always tart enough, but it can be thinned with a bit of buttermilk or even lemon juice. Whisking it with cornstarch and egg produces a silky sauce. Though the ingredient list looks long, this is a simple and impressive dish to make.

Time 1h

Yield 5 to 6 servings

Number Of Ingredients 21

1 1/2 pounds ground lamb, not too lean (from a cut like shoulder or breast, not leg)
1/2 cup breadcrumbs
2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 cup finely diced red onion
1 teaspoon toasted ground cumin
1 teaspoon toasted ground coriander
1/4 teaspoon cinnamon
Pinch of cayenne
3 eggs
Extra-virgin olive oil
1 cup chicken broth
1 cup plain, very tart yogurt (if using Greek-style yogurt, thin it with milk and lemon juice)
1 tablespoon cornstarch, dissolved in 2 tablespoons water
2 ounces crumbled feta cheese
1/2 teaspoon sumac
Crushed red-pepper flakes, to taste
Turmeric, for garnish (optional)
3 tablespoons chopped mint
2 tablespoons chopped dill
Cilantro sprigs

Steps:

  • In a large bowl, use your hands to combine lamb, breadcrumbs, salt, pepper, onion, cumin, coriander, cinnamon and cayenne. Beat 2 of the eggs and add to meat, mixing until incorporated. Cover and refrigerate for 30 minutes to 24 hours to allow the seasonings to permeate the meat.
  • Using wet hands, break off walnut-sized pieces of lamb mixture, roll into spheres and set aside on a baking sheet. You should have about 30 1-ounce meatballs.
  • Heat oven to 225 degrees. In a large skillet, heat 2 tablespoons oil over medium-high heat. When shimmering, add meatballs in one layer and brown for 2 to 3 minutes. Turn and cook for 4 to 5 minutes more. (Work in batches, if necessary, to avoid crowding the pan.) Transfer to a paper towel-lined baking sheet to blot any extra oil, then pile meatballs on a heatproof serving platter and keep warm in the oven.
  • Pour off any excess oil from skillet and turn heat to high. Add broth and bring to a simmer. In a bowl, whisk together yogurt; 1/2 teaspoon salt; remaining egg, beaten; and cornstarch. Pour yogurt mixture in a thin stream into the hot broth, whisking constantly. Turn heat down slightly and continue whisking until yogurt is heated through and slightly thickened, about 1 minute. Do not let mixture boil.
  • Pour hot yogurt sauce over meatballs. Sprinkle crumbled feta, sumac and crushed red pepper on top. Finish with pinches of turmeric, if using, and sprinkle with mint, dill and cilantro. Serve immediately with rice, orzo, pita bread or potatoes.

LAMB MEATBALLS WITH BARBERRIES, YOGURT & HERBS

LAMB MEATBALLS WITH BARBERRIES, YOGURT & HERBS image

Categories     Lamb

Yield 30 small meatballs 6 servings

Number Of Ingredients 20

1-2/3 lb minced lamb
2 medium onions, peeled and finely chopped
2/3 oz parsley, finely chopped
3 garlic cloves, peeled and crushed
¾ tsp ground allspice
¾ tsp ground cinnamon
6 tbs barberries or roughly chopped cranberries or sour cherries
1 large egg
Salt and black pepper
6 1/2 tbsp sunflower oil
1 1/2 lb large shallots, peeled
3/4 cup plus 2 tbsp white wine
2 cups chicken stock
2 bay leaves
2 sprigs fresh thyme
2 tsp sugar
5 oz dried figs
scant 1 cup Greek yogurt or Trader Joe European style
3 tbsp mixed soft herbs (such as mint, coriander, dill or tarragon), torn roughly
salt and freshly ground black pepper

Steps:

  • In a large bowl, put the lamb, onions, parsley, garlic, allspice, cinnamon, sour cherries, egg, half a teaspoon of black pepper and a teaspoon of salt. Mix with your hands and roll into rounds about the size of a golf ball. Heat one-third of the oil in a large, heavy-based pot for which you have a tight-fitting lid. Over medium heat, cook the meatballs a few at a time, turning them around for a few minutes on medium heat, until they color all over. Remove from the pot and set aside. Repeat with the remaining meatballs. Wipe the pot clean and add the remaining oil. Add the whole peeled shallots and cook them over a medium heat for 10 minutes, stirring frequently, until golden-brown all over. Pour in the wine, leave it to bubble for a minute or two, then add the stock, bay leaves, thyme, sugar and some salt and pepper. Arrange the figs and browned meatballs around and about the shallots; the meatballs need to be almost submerged in liquid. Bring to a boil, cover the pot with a lid, reduce the heat to very low and simmer for 30 minutes. Remove the lid and simmer for another hour, until the sauce has reduced and intensified in flavor. Taste and season as needed. Transfer to a large, deep serving dish. Whisk the yogurt, pour on top, sprinkle with herbs and serve.

LAMB MEATBALLS WITH CUCUMBERS AND HERBS

Lamb Meatballs with Cucumbers and Herbs image

Flecked with coriander, cinnamon, and cumin, lamb meatballs rest on a bed of dill, parsley, and mint in this composed salad that takes cues from Middle Eastern cuisine. Serve them with a swipe of labneh and quick-pickled red onions and golden raisins-and enjoy the culinary journey. This recipe is featured in the cookbook Salad Freak: Recipes to Feed a Healthy Obsession ($26.99, amazon.com).

Provided by Jess Damuck

Yield Serves 2 to 4

Number Of Ingredients 19

1/2 small red onion, very thinly sliced
1/3 cup golden raisins
1/4 cup red-wine vinegar
1 teaspoon whole coriander seeds
1 teaspoon cumin seeds
1/2 teaspoon Aleppo pepper, plus more for serving
1/2 teaspoon ground cinnamon
Kosher salt (we use Diamond Crystal) and freshly ground black pepper
1 pound ground lamb
1/2 bunch fresh parsley
1 bunch fresh mint
1 bunch fresh dill
1/2 cup plain (or fresh) breadcrumbs
1 egg, lightly beaten
2 cloves garlic
6 Persian cucumbers, halved and thinly sliced on the bias
Extra-virgin olive oil
1/2 cup labneh, or sheep's-milk or Greek-style yogurt
1 lemon

Steps:

  • Preheat oven to 450°F. Combine onion, raisins, and vinegar and let soak, tossing every now and then so everything gets vinegary. Put coriander and cumin seeds in a skillet and cook over medium heat, shaking skillet around a lot quite vigorously to move them around. When they start to smell fragrant and toasty, after a minute or two, transfer to a mortar and pestle, spice grinder, or cutting board. Crush them up just a bit and transfer to a large bowl.
  • Add Aleppo pepper, cinnamon, 1 1/2 teaspoons salt, and ground lamb to bowl with spices. Chop leaves from parsley and half of mint and dill; add to bowl. Add breadcrumbs and egg and grate in 1 clove garlic; use your hands to mix and combine. Line a rimmed baking sheet with parchment. Divide mixture into 12 balls and put on sheet.
  • Bake 12 to 15 minutes for medium (about 145°F on an instant-read thermometer). Meanwhile, in a large bowl, combine cucumbers, pickled-onion mixture, and 1 handful each parsley and mint leaves. Season with salt and black pepper and drizzle with a little oil.
  • Put labneh in another bowl; grate in remaining 1 clove garlic and zest of lemon. Season with Aleppo pepper and salt. Swoop mixture onto your serving plate or platter with the back of a spoon. Top with salad and meatballs. Cut zested lemon into wedges and serve alongside.
