LAYERED CUBAN DIP
For a delightfully different appetizer, try this colourful layered party dip the next time you are entertaining a crowd.

Steps:
- Brown ground beef with seasonings for 5 minutes on high in large skillet.
- Drain off fat and blot well with paper towel.
- (This is important to final appearance of recipe).
- Add salsa and raisins and cook 5 minutes on low.
- Meanwhile, combine cream cheese and sour cream and spread over a serving plate that has an edge.
- Top with hot beef mixture, well-drained pineapple, chopped green onions and pimiento.
- Serve immediately (or chill and serve) with rice crackers or sliced pita/flatbread.
LAYERED DIP
Cocktail sauce makes this a different tasting dip. People are amazed when they find out the 'secret ingredient'. Serve with crackers or tortilla chips.

- In a small bowl, mix the cream cheese and milk until smooth. Spread onto a large, round serving dish. Layer with cocktail sauce. Top with avocado. Layer with tomato, green bell pepper, green onions and black olives. Sprinkle with cheese. Chill in the refrigerator 1 hour, or until firm.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix refried beans with taco seasoning mix in a bowl; spread mixture into the bottom of an 8x8-inch glass baking dish. Spread sour cream over the refried beans; spread salsa over the sour cream. Sprinkle cheese over the top.
- Bake in preheated oven until cheese is melted but not bubbling, 6 to 10 minutes.

SIX LAYERS AND A CHIP DIP

- On a cutting board, smash the garlic cloves, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put the garlic, beans, chili powder, water, and olive oil in the bowl of a food processor and blend until smooth. Spread in the bottom of a 2-quart casserole or gratin dish, or in individual sized dishes, as desired.
- Scatter the cheese over the beans. Halve and seed the avocados, then mash with the jalapeno and another teaspoon of salt in a small bowl. Spread a layer of the avocado over the cheese, and then scatter the lettuce on top.
- Mix the yogurt with the cilantro and then spread over the lettuce. Add a layer of tomatoes and, finally, scatter the scallions on top. Chill until ready to serve. Garnish with a few cilantro sprigs and serve with baked chips.

LAYERED BISCUITS
For a more savory version of these layered biscuits, leave out the cinnamon and sugar.

- Preheat oven to 500 degrees. In a small bowl, combine the cinnamon and sugar, and stir until well mixed; set aside. In a medium bowl, whisk together the flour, salt, baking powder, and baking soda. Add butter, and use a pastry blender or two knives to cut the butter into the flour mixture until it is the size of peas. Add buttermilk, and mix with a spoon just until it forms a sticky dough.
- Transfer to a lightly floured work surface, and bring dough together. Roll dough into an 8-by-11-by-3/4-inch rectangle, and sprinkle 1/2 tablespoon cinnamon sugar in the center section of the rectangle. Use a bench scraper or a spatula to lift the ends, folding the rectangle like a letter into thirds toward the center. Before folding the second end over, sprinkle another 1/2 tablespoon cinnamon sugar onto the opposite flap. Fold the second flap over. Give the dough a quarter turn, and repeat the rolling, sprinkling, and folding. Transfer dough to a parchment-lined baking sheet, wrap it in plastic wrap, and chill in the refrigerator for 20 minutes.
- Remove from refrigerator, and return to work surface. Roll to a 1/2-inch-thick rectangle, and repeat sprinkling and folding method as in step 2 (when rolling out the second time, do not fold). Cut out with a 2 1/4-inch round biscuit or cookie cutter, and transfer to a baking sheet.
- Sprinkle tops with remaining cinnamon sugar, and place in 500 degree oven for 4 minutes. Reduce heat to 375 degrees. Continue baking until biscuits begin to brown all over, 20 to 25 minutes. Remove from oven; cool on a wire rack. Serve warm.

This 7 layer bean dip is great for Super Bowl parties, work parties, other gatherings! Pretty easy to make...you can use store bought guacamole if you can't find ripe avocados.

- Mix avocados, lemon juice, salt, and pepper.
- Mix mayonnaise, sour cream, and taco seasoning mix.
- Layer ingredients as follows.
- Bottom layer: Bean Dip.
- Second layer: Avocado mixture.
- Third layer: Sour cream mixture.
- Fourth layer: Tomatoes.
- Fifth layer: Onions.
- Sixth layer: Olives.
- Seventh layer: Cheese (I like to use Colby Jack cheese).
- Top with extra sour cream/olives/salsa, etc. if desired.
- Serve with tortilla chips.
- **This seems to be a little bit better if you can chill it for a few hours or over night to let the flavors intensify**.

- In a large saucepan heat the oil. Add the shallot and garlic and sauté until tender, 3 to 5 minutes.
- Add the black beans and mash until smooth. Season with ground cumin, cayenne pepper, salt, and black pepper.
- Spread the bean mixture in an even layer over the bottom of a 9-inch (25-cm) clear glass dish.
- In a medium bowl, stir together the sour cream and lime juice and season with salt. Spread the sour cream mixture over the bean layer.
- In another medium bowl, mash together the avocados, lime juice and zest, and season with salt. Spread the avocado mixture over the sour cream layer.
- Sprinkle with the cheese, tomatoes, olives, scallions, and cilantro. Serve with tortilla chips and hot sauce.
