We stuff acorn squash with leftovers like turkey, dressing and cranberry sauce. Make as much or as little as you need to use everything up. -Cindy Romberg, Mississauga, Ontario

2 medium acorn squash (about 1-1/2 pounds each)
1 small onion, finely chopped
2 cups cubed cooked turkey
2 cups cooked stuffing
1/2 cup whole-berry cranberry sauce
1/3 cup white wine or chicken broth
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°. Cut each squash lengthwise in half; remove and discard seeds. Using a sharp knife, cut a thin slice from bottom of each half to allow them to lie flat. Place in a shallow roasting pan, hollow side down; add 1/4 in. of hot water. Bake, uncovered, 30 minutes., Meanwhile, place onion in a large microwave-safe bowl; microwave, covered, on high for 1-2 minutes or until tender. Stir in turkey, stuffing, cranberry sauce and wine., Carefully remove squash from roasting pan; drain water. Return squash to pan, hollow side up; sprinkle with salt. Spoon turkey mixture into squash cavities. Bake, uncovered, until heated through and squash is easily pierced with a fork, 25-30 minutes longer.

2 acorn squashes
2 cups leftover turkey, diced
1 medium onion, diced
1 carrot, diced
3 stalks celery, diced
3 cloves garlic, minced
1 tablespoon fresh rosemary, minced
2 eggs
1 tablespoon olive oil, plus more for drizzling
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Using a sharp knife, slice off the top and bottom of an acorn squash to create flat surfaces. Slice the squash in half and scoop out the seeds with a spoon.
  • Place the squash halves on a baking sheet lined with parchment paper. Drizzle the squash with olive oil and sprinkle with salt and pepper.
  • Bake for 40 minutes, until the squash is tender and easily pierced with a paring knife.
  • Then heat the oil in a large skillet over medium-high heat.
  • Toss in the onion, carrot, celery, salt, pepper, and rosemary and sauté until the vegetables are completely tender, about 8 minutes.
  • Sprinkle in the garlic and sauté until fragrant, about 1 minute.
  • Pour in the turkey leftovers and stir the mixture so that everything is evenly mixed.
  • Pour the mixture into a large bowl and let it cool about 5 minutes.
  • Crack in the eggs and mix so that everything is evenly coated.
  • Spoon the turkey mixture into the squash halves.
  • Bake for 20 minutes, until the turkey mixture has browned slightly. Then serve.

2 (2 pound) Tatume squash
2 tablespoons extra-virgin olive oil, divided
1 medium onion, finely chopped
2 cloves garlic, minced
1 medium jalapeno pepper, finely chopped
1 serrano pepper, finely chopped
2 tablespoons dried parsley
1 teaspoon lemon-pepper seasoning
1 teaspoon dried oregano
½ teaspoon red pepper flakes
1 pound Italian pork sausages, casings removed
½ pound ground beef
1 cup grated Parmesan cheese, divided
½ cup dry bread crumbs
2 large eggs
salt and ground black pepper to taste
2 medium tomatoes, diced
1 cup prepared red pepper sauce
1 cup shredded mozzarella cheese
2 tablespoons basil leaves, cut into thin strips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Cut Tatume squash in half lengthwise. Scoop out the flesh in the center, leaving about 1/3 inch of the shell. Dice or chop the flesh in a food processor and transfer to a large bowl.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion and garlic and saute for 2 to 3 minutes. Add jalapeno pepper, serrano pepper, parsley, lemon-pepper, oregano, and red pepper flakes; saute for 1 more minute. Add vegetables to diced squash.
  • Add pork sausage and ground beef to the hot skillet; cook and stir until browned and crumbly, 5 to 7 minutes. Add meat mixture to the vegetable-squash mixture. Mix in 1/2 cup Parmesan cheese, bread crumbs, eggs, salt, and pepper until the filling is well combined.
  • Add remaining 1 tablespoon oil to the skillet. Add diced tomatoes and red pepper sauce. Cook, stirring occasionally, until heated through, 2 to 3 minutes. Season with salt and pepper and remove from the heat.
  • Pour a ladleful of sauce into the bottom of the prepared baking dish. Fill one squash shell with the filling, making a large mound on top. Place in the baking dish and repeat with remaining squash and filling. Pour remaining sauce into the dish, and sprinkle the stuffed squash with the remaining 1/2 cup Parmesan and mozzarella cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Increase oven temperature to 400 degrees F (200 degrees C) and bake until squash is fork-tender and cheese is lightly browned, about 10 more minutes.
  • Garnish with fresh basil and serve.

1 delicata squash, halved lengthwise and seeded
2 teaspoons olive oil
1 tablespoon olive oil
2 Italian turkey sausages (such as Jennie-O®), casings removed
¼ cup finely chopped celery
¼ cup finely chopped onion
2 cloves garlic, minced
¼ teaspoon dried sage
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
¼ cup cooked wild rice
2 tablespoons coarsely chopped dried cherries
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil or parchment paper.
  • Brush cut sides of squash with 2 teaspoons oil. Place cut-sides down on the baking sheet.
  • Bake in the preheated oven until soft, 20 to 25 minutes.
  • Heat 1 tablespoon oil in a medium pan over medium-high heat. Add turkey sausage. Saute, breaking up into small crumbles, until browned, 2 to 3 minutes. Reduce heat to medium and add celery, onion, garlic, sage, rosemary and thyme. Continue cooking until vegetables are soft, 4 to 5 minutes. Stir in rice, cherries, and parsley until mixture is warmed through, 1 to 2 minutes.
  • Turn squash halves over so they are cut-side up. Fill with the sausage mixture and top with Parmesan cheese. Return to oven and bake until cheese is melted, 2 to 3 minutes.

2 acorn squash (medium to large)
1 lb turkey sausage, casings removed
1 cup dried cranberries (eyeball it)
1 onion, chopped
1 green bell pepper, chopped
1 (8 ounce) package sliced mushrooms
6 sprigs thyme, leaves removed
2 garlic cloves, minced
1 (8 1/2 ounce) package cornbread, cooked according to directions and crumbled
grated cheese (I used Knight's vail, but mozzarella or other mild cheeses would work)
salt and pepper

Steps:

  • Preheat oven to 400.
  • Cut the stem off the acorn squash so they stand up straight. Cut the squash in half and place cut side down on oiled baking sheet. Bake for 30 minutes while the stuffing cooks.
  • Heat oil in large skillet over medium high heat. Add onions, peppers, mushrooms, garlic, and thyme. Season with salt and pepper. Saute until tender.
  • Add sausage to vegetables and cook through. Season to taste.
  • Add vegetables and sausage to crumbled cornbread. Mix in the dried cranberries.
  • Stuff each squash half with the stuffing mixture and top with cheese. Cover with foil and continue baking for about 30-40 minutes or until squash are tender.
