LEFTOVER THANKSGIVING NACHOS
Use up your Thanksgiving leftovers in a surprising way by making these hearty nachos.

Steps:
- Preheat the oven to 425 degrees F. Stir the sour cream and chipotle chile together in a small bowl. Cover with plastic wraps and refrigerate.
- Scatter half the chips on a rimmed baking sheet. Top with one-third of the turkey, cheeses, Brussels sprouts, butternut squash and fried onions. Scatter the remaining chips on top followed by the remaining two-thirds of turkey, cheeses, Brussels sprouts and fried onions. Bake until the cheeses are melted and bubbly, about 5 to 7 minutes.
- Drizzle the nachos with chipotle sour cream and extra adobo sauce. Garnish with cilantro, black olives, and jalapenos.
LEFTOVER TURKEY NACHOS

- Preheat oven to 400°
- Combine the turkey and salsa, tossing to coat.
- In a 9x13 baking dish or cast iron skillet, spread 1/2 of the tortilla chips
- Cover the chips with 1/3 of the cheese
- Cover with 1/2 the turkey mixture
- Spread 1/2 of the beans
- Layer 1/3 of the cheese
- Spread the remaining tortilla chips evenly over the cheese
- Cover with the remaining turkey, then the beans
- Top with the remaining cheese
- Bake 10 minutes
- Serve hot with desired toppings (see post for suggestions)

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Melt butter in a skillet over medium heat; cook and stir shallots in the hot butter until softened, about 2 minutes. Stir jalapeno peppers into shallots and cook until fragrant, about 2 more minutes. Stir cranberry jelly into the shallots and peppers until melted.
- Mix shredded turkey with jalapeno-cranberry jelly mixture in a bowl until thoroughly combined. Arrange tortilla chips on the prepared baking sheet and fill each chip with 1 tablespoon turkey mix. Top each chip with 1/2 teaspoon of white Cheddar cheese.
- Bake in the preheated oven until the cheese topping is melted and the chips are golden, about 10 minutes.

- To make turkey carinas: Heat the oil (or drippings) in a large nonstick or cast iron skilled, over medium high heat, until shimmering. Add the shredded turkey, spreading into a single layer, and cook without stirring, for about 5 minutes or until browned and crispy. Stir and continue cooking until the turkey carnitas as as crisp as you like. Season with salt and reserve.
- To make the cranberry sauce salsa: Combine the chopped onion, garlic, tomatoes, jalapeño, cranberry sauce, lime juice and zest and cilantro in a medium bowl. Season with salt and reserve.
- Spread half of the chips on a large cast iron, oven proof dish or baking sheet. Add half the turkey carnitas, Brussels sprouts (if using), ½ cup of cheddar and ½ cup of Monterey Jack. Top with the remaining chips, turkey carnitas, cheese and Brussels sprouts. Bake until the cheese is melted and chips are toasted, about 10 minutes.
