The sweet sautéed summer corn and garlic is combined with a creamy lemon basil sauce and crisp seared scallops all overtop a bed of al dente pasta. This scallop pasta dish is light and flavorful while also satisfying those cozy comfort food cravings!

3 ears of corn (shucked and kernels removed⠀⠀⠀⠀⠀⠀⠀⠀⠀)
½ tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
cracked black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 cloves garlic (minced⠀⠀⠀⠀⠀⠀⠀⠀⠀)
zest from 1 lemon⠀⠀⠀⠀⠀⠀⠀⠀⠀
¼ cup lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
1½ cups cashew cream*
½ cup fresh basil (sliced thin ⠀⠀⠀⠀⠀⠀⠀⠀⠀)
10 ea scallops⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
kosher salt & cracked black pepper⠀⠀

Steps:

  • Heat a large sauté pan to medium and add 2 tbsp olive oil. Add corn kernels, ½ tsp salt, fresh cracked black pepper, and cook until just tender, 3-4 min.⠀
  • Add garlic and cook 1-2 minutes until it just starts to brown. ⠀
  • Add lemon zest, juice, and cashew cream and cook on medium low for 3-5 minutes, or until thickened to desired consistency. Set aside.⠀
  • Prepare your scallops - remove the side muscles, pat dry and season both side with a sprinkle of kosher salt and cracked black pepper. Make sure to pat dry with a paper towel. This will help to ensure the best sear / browning on the scallops.
  • To a cast iron skillet add 1 tbsp olive oil and bring to heat over medium.
  • Once skillet is hot, add your scallops and cook (undisturbed, do not move), for 3-4 minutes, until bottom has browned and developed a golden crust. Turn over and do the same with the other side.⠀
  • While scallops finish cooking, add prepared pasta to warmed lemon cashew cream sauce. Stir in fresh basil. Top with seared scallops and serve.

Although usually designated as a "something special" ingredient, scallops make a perfect weeknight dinner because they cook in minutes. To get a good, crisp sear, be patient (it's hard for us, too) and let the pan get quite hot before adding the scallops. Once you do, leave them alone to ensure a deeply golden crust. Toss them with pasta and candy-colored cherry tomatoes that burst and get coaxed into a jammy sauce. Finish with a showering of fresh, tender herbs and a drizzle of olive oil.

1 pound linguine fini or other long, thin pasta
4 tablespoons olive oil, plus more for drizzling
2 shallots, thinly sliced into rings
1 1/4 pounds Sun Gold, cherry or grape tomatoes
2 garlic cloves, thinly sliced
Pinch of red-pepper flakes (optional)
1 pound large sea scallops, patted dry
1 1/2 cups roughly chopped mixed herbs, such as tarragon, mint, parsley and chives, plus more for serving

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 1/2 cups pasta cooking water, then drain pasta.
  • Wipe out the pot and heat 2 tablespoons olive oil over medium. Add the shallots and cook until they begin to soften, 2 to 3 minutes. Add the tomatoes and cook, stirring occasionally, until they start to burst, 5 to 7 minutes. Add about 1/3 cup reserved pasta water, and press the tomatoes gently with the back of a spatula or wooden spoon to get them nice and jammy. Stir in the garlic and red-pepper flakes, if using, and cook, allowing the sauce to simmer, 1 to 2 minutes. Season with salt and pepper; set aside.
  • Season the scallops well on both sides with salt and pepper. In a 12-inch skillet, heat the remaining 2 tablespoons olive oil over high. When the oil shimmers, add the scallops, working in batches to avoid crowding the pan, and cook until golden brown and crisp, flipping once, 1 to 2 minutes per side.
  • Add the pasta, 1 1/2 cups herbs and 1/4 cup reserved pasta water to the pot with the tomatoes and toss to coat, adding additional pasta water if needed. Divide the pasta among shallow bowls and top with scallops. Garnish with additional herbs and a drizzle of olive oil, if desired.

This dish is so easy to make, but tastes like you slaved away in the kitchen. When purchasing the scallops, be sure to look for a subtle pink or creme color. Stark white scallops have been soaked in water to add extra weight. Other pastas such as rotini, shells, or penne can be substituted for the farfalle. Makes an excellent main course, or add spinach or asparagus to turn it into a meal in itself. My pookie likes to have this dish served with antipasto of buffalo mozzarella, artichoke hearts, and fire roasted tomatoes.

1 (16 ounce) package farfalle (bow tie) pasta
24 scallops, rinsed and drained
¾ cup olive oil
¼ cup lemon juice
1 ½ teaspoons dried minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons dried basil
9 tablespoons whipped butter

Steps:

  • Bring a large pot of water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain, rinse, and transfer to a large serving bowl.
  • Meanwhile, place scallops in a large bowl. In a small bowl, mix together 1/4 cup olive oil, lemon juice, 1 teaspoon garlic, 1/2 teaspoon salt, and the black pepper. Pour mixture over scallops. Arrange scallops in a single layer in a large baking dish or plate. Sprinkle 1 tablespoon dried basil over scallops so that only one side is sparsely coated with basil.
  • Heat a large skillet over medium-high, and melt one tablespoon of butter in the pan. Place 12 scallops basil-side down, and cook for about 3 to 4 minutes until dark golden brown. Turn scallops, and cook the other side. Cook the remaining 12 scallops the same way.
  • In a small saucepan, melt remaining butter with 1/2 cup olive oil, 1 tablespoon basil, 1/2 teaspoon garlic, and 1/2 teaspoon salt.
  • Toss pasta with butter and olive oil mixture. Divide pasta onto plates, and top with scallops.

1 lb angel hair pasta
1/2 onion
4 garlic cloves
20 basil leaves
3/4 cup fresh parmesan cheese
2 (14 1/2 ounce) cans chicken broth or 2 (14 1/2 ounce) cans vegetable broth
1 tablespoon cornstarch
2 tablespoons olive oil
fresh pepper
3/4 cup white wine
1 lemon

Steps:

  • First, finely chop about half a large onion and mince or press about four large cloves of garlic (organic, of course).
  • Second, take about a handful of organic basil (I hate to admit I don't wash this because it is harder to mince) and then finely chop the basil.
  • Third, shred about half to three-quarters cup of parmesan reggiano.
  • Fourth, start a pot of boiling salted water.
  • Open two cans of chicken broth (I like Ralphs because it is less sodium than Stater Bros.).
  • Place about one large heaping tablespoon of cornstarch in a short water glass or coffee cup.
  • Saute onion only over medium heat in about 2 tablespoons of olive oil. Add about three or four shakes of ground white pepper (maybe a bit more if you like it spicy). After about two minutes of saute process, add garlic and continue to stir and heat for another one minute. This brings out flavor of garlic. Then add about 3/4 cup of white wine and raise heat to "high" to deglaze the pan. Boil to reduce the liquid until it is nearly gone.
  • Add one can of chicken stock, keeping heat at high. Stir the pan to make sure that all accumulated flavor on side of pan is combined with liquid. Boil this down by about half. Then add most of the second can and boil down again by about 1/3.
  • While the sauce is finishing, add pasta to boiling water.
  • Using the balance of the unused can of chicken stock, slowly pour into the glass of cornstarch stirring to blend the powder into a paste and then add more stock to make it a thick cornstarch liquid. Add this liquid slowly to the sauce, stirring in to incorporate about 15 seconds after pouring. Continue to heat on medium heat until sauce has thickened slightly (won't be much thicker than a heavy liquid) - this won't take much more than 45 seconds. Turn off heat. Add juice from about 1 lemon, more or less if desired. Stir to blend lemon. Set aside.
  • Drain pasta. Place in bowls. Add basil to each bowl of dry pasta. Mix. Add a bit of sauce. Mix. Then add a bit of cheese. Mix. Add more sauce and cheese and fresh ground black pepper on top.

I was a little unsure about the idea behind this pasta when my wife ordered something similar in a restaurant. But we both loved it and knew that we had to go home and try to replicate it. Here is what we came up with!

3 cups bow tie pasta
1 skinless, boneless chicken breast half - cut into bite-size pieces
1 teaspoon lemon pepper
¼ cup margarine
2 tablespoons olive oil
2 cloves garlic, minced
¼ cup white wine
2 cups sour cream
1 tablespoon chopped fresh basil
1 lemon, zested and juiced
¼ cup grated Parmesan cheese
¼ cup grated mozzarella cheese
1 tablespoon chopped fresh parsley
½ cup torn fresh spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the bow tie pasta; return to a boil. Cook, uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 10 minutes. Drain.
  • Preheat oven to 375 degrees F (190 degrees C). Season chicken with lemon pepper.
  • Melt the margarine with the olive oil in a skillet over medium heat; cook and stir the chicken pieces until no longer pink in the center. Remove the chicken pieces, and place them in the bottom of a casserole dish.
  • To the same skillet, add the garlic, white wine, sour cream, basil, lemon zest, and 1/2 of the lemon juice. Bring the mixture to a boil, stirring constantly. Remove the skillet from the heat; stir in the pasta. Spoon the pasta and sauce mixture over the chicken. Cover with foil.
  • Bake in the preheated oven until heated through, about 15 minutes. Uncover, sprinkle evenly with Parmesan cheese, mozzarella cheese, parsley, spinach, and drizzle with the remaining lemon juice. Bake, uncovered, for 10 minutes.

When the oil is shimmering, but not smoking, add the scallops, keeping them about an inch apart (cook in two batches if necessary). Cook scallops for about 2 minutes, without moving or touching them. Flip and cook for another 2 minutes. Transfer scallops to a clean plate and set aside. Tip: The first side that was seared will have the nicest golden colour so keep that side up on the plate, and when you serve them.
  • Reduce the heat to medium low and add 2 tablespoons of the butter to the skillet, plus another drizzle of olive oil. Stir in the garlic and sauté for about 1 minute. Add the wine to the pan scraping up the browned bits at the bottom of the pan. Cook the wine until slightly reduced, about 1 to 2 minutes.
