Steps:
- Preheat oven to 350 degrees.
- Place muffin liners in muffin tin. Makes approximately 12 muffins.
- In a large bowl combine the flour, baking powder, salt and sugar.
- In a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
- Stir the wet ingredients into the dry. Fold in the Chia seeds.
- Fill muffin tins with the batter.
- Bake for 18 minutes.

- Process lemon Zest and Juice.
- Whisk Eggs, Zest and Honey in the top of a double boiler.
- Add Coconut oil and Whisk over medium heat until coconut oil has melted.
- Add Lemon Juice.
- Continue cooking over medium heat until mixture begins to boil.
- Remove from heat and continue Whisking as it thickens.
- Once thickened add Chia Seeds and spoon into small bowls and refridgerate.
