2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup milk
6 eggs, separated
2 lemons, zested and juiced
Butter or shortening, for greasing

Steps:

  • Preheat oven to 350 degrees F.
  • In a 2-quart mixing bowl combine, sugar, butter, flour, salt and milk, mixing until smooth. Add egg yolks to this and mix until smooth. Add lemon juice and zest.
  • In a mixer, beat egg whites until peaks are stiff. Fold the yolk mixture into whites gently to combine mixtures.
  • Using butter or vegetable shortening, grease 6-inch custard cups. Pour the mixture into the cups. Set the cups in 1/2 inch of hot water in a 9 by 12-inch baking pan. Bake 25 minutes or until tops have risen and turn golden brown.

For the Soufflé Dish:
2 tablespoons salted butter, melted
4 tablespoons granulated sugar
For the Soufflé Mixture:
1 1/3 cups whole milk, divided
7 tablespoons granulated sugar, divided
1/3 cup all-purpose flour
2 teaspoons lemon zest
4 large egg yolks
1 1/2 tablespoons butter, cold
2 teaspoons vanilla extract
4 large egg whites
For Garnishing:
Confectioners' sugar, for dusting
Fresh berries

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Butter a large soufflé dish and roll the granulated sugar throughout the dish, making sure to cover all the interior surfaces, especially the sides. Set aside.
  • In a medium saucepan set over low-medium heat, bring 1 cup of the milk to just steaming.
  • Stir together 5 tablespoons of the granulated sugar with the all-purpose flour, lemon zest, remaining 1/3 cup milk, and egg yolks until the mixture turns into a smooth batter.
  • Slowly whisk half of the hot milk into the batter, making sure to combine the ingredients well until they are completely smooth.
  • Add the tempered batter back into the hot milk in the pan and bring the mixture to a simmer, stirring constantly.
  • Stir and cook the mixture until it has thickened, or about 1 minute.
  • Stir the cold butter into the mixture and mix well. Allow it to cool at room temperature for 10 minutes.
  • Stir in the vanilla extract.
  • In a separate very clean bowl, beat the egg whites on medium-high speed until they become foamy and then add the remaining 2 tablespoons of sugar.
  • Continue beating the egg whites on high speed until they hold stiff glossy peaks.
  • Gently stir 1/3 of the egg whites into the vanilla mixture, then carefully fold in the remaining whipped egg whites.
  • The vanilla mixture should be evenly colored and light and bubbly, without egg white streaks or marbling.
  • Spoon the soufflé mixture into the prepared dish. Bake right away for 25 to 30 minutes, or slightly longer if at high altitude , until the soufflé has risen with a crusty exterior. If needed, cover it, and refrigerate it until ready for baking.
  • Serve the soufflé with a dusting of confectioners' sugar and a few berries, if desired.

1 stick unsalted butter, room temperature
2 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 large egg yolk
1 cup unbleached all-purpose flour, plus more for dusting
4 large eggs, separated
1/3 cup plus 3 tablespoons granulated sugar
1 teaspoon grated lemon zest, plus 1/3 cup fresh juice
Pinch kosher salt
2 tablespoons unsalted butter
Confectioners' sugar, for dusting

Steps:

  • Crust: In the bowl of a stand mixer fitted with the paddle attachment, beat together butter, sugar, and salt on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in egg yolk until smooth. Reduce speed to medium-low and beat in flour until smooth. Shape dough into a flat disk, tightly wrap in plastic, and refrigerate until firm, at least 45 minutes and up to 2 days.
  • Preheat oven to 375°F. Let chilled dough rest at room temperature to warm slightly, about 15 minutes. On a lightly floured surface, roll out dough to an approximate 11-inch round (if dough cracks, press back together and let stand a few minutes to warm and soften more). Transfer to a 9-by-1-inch fluted tart pan with removable bottom, pressing into edges and trimming excess dough. Freeze until firm, about 15 minutes. Place on a rimmed baking sheet, line dough with parchment, and fill with dried beans or pie weights.
  • Bake until dough is set and dry on the bottom, 30 to 35 minutes. Remove parchment and weights and continue baking until golden on the bottom, 5 to 7 minutes more. Let cool completely on a wire rack.
  • Filling: In a medium saucepan, whisk together egg yolks, 1/3 cup granulated sugar, lemon zest and juice, and salt until smooth. Add butter to saucepan. Cook over medium heat, stirring constantly, until mixture is thick enough to coat the back of a wooden spoon, about 5 minutes. Strain through a fine-mesh sieve into a large bowl. Cover surface of curd with plastic wrap to prevent a skin from forming. Refrigerate until cool and set, at least 30 minutes and up to 2 days.
  • In a mixer bowl, whisk egg whites on medium speed until frothy. Increase speed to high and gradually add remaining 3 tablespoons granulated sugar, beating until mixture forms stiff, glossy peaks, 5 to 7 minutes. Stir 1/3 of egg-white mixture into curd to loosen. Gently fold in remaining egg-white mixture just until no streaks remain (do not overmix). Transfer filling to tart shell, gently smoothing top.
  • Bake until puffed and golden brown, 18 to 22 minutes. Let cool completely on a wire rack, about 30 minutes. Carefully remove tart ring and dust with confectioners' sugar to serve.

1/4 cup water
1 teaspoon unflavored gelatin
3 large eggs, separated
2 tablespoons cornstarch
1 cup plus 2 tablespoons whole milk
6 tablespoons sugar, divided
6 tablespoons fresh lemon juice
1 1/2 teaspoons finely grated lemon peel
Caramel Sauce

Steps:

  • Lightly oil six 3/4-cup soufflé dishes or custard cups; set aside. Pour 1/4 cup water into small bowl. Sprinkle gelatin over; let stand until gelatin softens, about 15 minutes.
  • Meanwhile, whisk egg yolks and cornstarch in medium bowl until smooth. Combine milk and 3 tablespoons sugar in heavy medium saucepan; stir over medium heat until sugar dissolves and mixture comes to simmer. Gradually whisk 1/3 of hot milk mixture into yolk mixture. Pour mixture back into remaining milk mixture in saucepan. Whisk constantly over medium-high heat until mixture boils and thickens, about 2 minutes. Reduce heat to medium and whisk 2 minutes longer. Remove from heat; whisk in lemon juice and lemon peel. Add gelatin mixture; stir until gelatin dissolves.
  • Whisk egg whites and remaining 3 tablespoons sugar in medium bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); whisk constantly until instant-read thermometer inserted into mixture registers 140°F, about 2 minutes. Transfer egg white mixture to large bowl of stand mixer and beat until stiff peaks form. Fold egg white mixture into warm lemon custard in 3 additions. Transfer mixture to medium bowl; let stand 10 minutes to cool slightly.
  • Divide lemon custard among prepared soufflé dishes; level off tops with back of knife. Refrigerate soufflés uncovered overnight. (Can be prepared 2 days ahead. Cover and keep refrigerated.).
  • Run small knife around soufflés to loosen. Place small plate atop 1 soufflé and invert. Using both hands, hold plate and soufflé dish tightly together and shake gently, allowing soufflé to settle on plate (if soufflé does not release from dish, place bottom of soufflé dish in 1 inch of warm water for 20 seconds). Repeat with remaining soufflés. Spoon room-temperature Caramel Sauce generously over top of each soufflé and serve.

8 large egg yolks plus 10 large egg whites, room temperature
2 tablespoons all-purpose flour
1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons), plus 2 tablespoons finely grated lemon zest
1 cup whole milk
Garnish: confectioners' sugar

Steps:

  • Preheat oven to 375 degrees. Butter six 12-ounce souffle dishes, and then dust with granulated sugar. Whisk together yolks, flour, zest, and 2 tablespoons granulated sugar.
  • Bring milk to a boil in a small saucepan. Slowly pour milk into yolk mixture, whisking constantly to prevent yolks from cooking. Return mixture to pan, and whisk until thick like a pudding, 1 to 2 minutes. Strain through a sieve, and whisk in butter and lemon juice.
  • Beat whites until foamy. Gradually add remaining 1/4 cup plus 2 tablespoons granulated sugar, and beat until stiff peaks form. Stir a third of the whites into the yolk mixture. Gently fold in the remaining whites using a rubber spatula.
  • Fill each souffle dish to the top, and smooth. Run your thumb around edges to remove batter from rims.
  • Bake on a rimmed baking sheet until souffles rise and are golden, about 16 minutes. Dust with confectioners' sugar, and serve immediately, before souffles lose their height.

LEMON-CHERRY CUSTARD SOUFFLE

1/2 cup dried cherries
1/3 cup warm water
1 1/2 tablespoons soft butter
1 large egg, separated
1/3 cup sugar
2 tablespoons fresh lemon juice
1/2 tablespoon grated lemon rind
1 tablespoon flour
1/2 cup light cream or half-and-half
Pinch of salt
Confectioners' sugar

Steps:

  • Place the cherries in a bowl, add the water and set aside to soak for 30 minutes. Drain and spread on a double thickness of paper towel to dry.
  • Preheat oven to 350 degrees. Use one-half tablespoon of the butter to grease two 6-ounce souffle dishes. If you have heart-shaped glass or porcelain baking dishes, use them. Set the dishes in a large pan.
  • Spread the cherries in the bottom of the dishes.
  • Beat the egg yolk until light. Beat in the sugar and remaining butter until the mixture is creamy. Beat in the lemon juice, rind and flour, then beat in the cream or half-and-half. Because you are working with a small quantity of ingredients, it is better to prepare this mixture by hand, using a whisk or a hand-held electric beater instead of doing it in a big electric mixer or a food processor.
  • Beat the egg white with the salt until stiff but not dry. Fold the egg white into the egg yolk mixture and pour the batter over the cherries in the baking dishes.
  • Pour boiling water in the pan with the dishes so it comes halfway up the sides of the dishes. Place in the oven and bake about 30 minutes, until the tops are puffed and golden. Remove from the oven and allow to cool to room temperature. Dust with sifted confectioners' sugar before serving.

  • Preheat oven to 350 degrees.
  • Sift the flour. Add the sugar, salt and butter. Using a standing mixer, blend ingredients.
  • Beat the egg yolks with a fork and add to mixture. Mix until well blended.
  • Using a handheld mixer, whip the egg whites until stiff. Fold into pudding.
  • Pour pudding mixture into a buttered soufflé dish. Place dish in a pan of hot water. Water should be about 2 inches deep.

1 stick (8 tablespoons) unsalted butter, plus more, for the ramekins
3/4 cup sugar, plus more, for the ramekins
1/2 cup freshly squeezed lemon juice (from about 4 lemons), plus 1 teaspoon finely grated lemon zest
4 large eggs, separated
2 tablespoons all-purpose flour
Pinch of salt
Pinch of cream of tartar, optional
Raspberry sorbet, optional

Steps:

  • Lightly brush four 8-ounce ramekins with butter, then dust each with sugar. (This can be done up to 2 hours ahead.)
  • Melt the butter in a heavy medium saucepan over medium-low heat, then cool to warm. Whisk in the sugar and lemon juice and zest until the sugar is dissolved. Whisk in the egg yolks. Cook over medium-low heat, whisking constantly, until the mixture thickens and an instant-read thermometer registers 175 degrees F, about 10 minutes. Do not boil. Transfer the egg yolk mixture to a large bowl and whisk in the flour until smooth. Cool to room temperature, about 30 minutes.
  • Place an oven rack in the center of the oven; preheat the oven to 400 degrees F.
  • Put the egg whites, salt and cream of tartar if using in a large, clean nonreactive bowl. Beat the egg whites with an electric mixer until they hold soft peaks. Fold a quarter of the beaten egg whites into the egg yolk mixture to lighten. Gently fold in the remaining egg whites.
  • Divide the souffle mixture evenly among the prepared ramekins. Place the filled ramekins in a roasting pan. Carefully fill the pan with enough hot water to come halfway up the sides of the ramekins. Bake the souffles until golden brown on top, 12 to 14 minutes. Using tongs as an aid, carefully remove the hot souffles from the water to a plate.
  • If desired, make a small indentation in the center of each souffle and place a small scoop of raspberry sorbet in the indentations. Serve the souffles immediately.

To make this lemon souffle "souffle" over the rim of the dish, use a 1-quart souffle dish and make a foil collar for it as follows: Cut a piece of foil 3 inches longer than the circumference of the souffle dish and fold it lengthwise into fourths. Wrap the foil strip around the upper half of the souffle dish and secure the overlap with tape. Tape the collar to the souffle dish as necessary to keep it from slipping. Spray the inside of the foil collar with vegetable cooking spray. When ready to serve, carefully remove the collar. For those less concerned with appearance, this dessert can be served from any 1 1/2-quart serving bowl. For best texture, serve the souffle after 1 1/2 hours of chilling. It can be chilled up to 6 hours; though the texture will stiffen slightly because of the gelatin, it will taste just as good. Cooking time is chill time.

  • Place the lemon juice in a small nonreactive bowl; sprinkle the gelatin over. Set aside. Make an Ice water bath for next step.
  • Heat the milk and 1/2 cup sugar in a medium saucepan over medium-low heat, stirring occasionally, until steaming and the sugar is dissolved, about 5 minutes. Meanwhile, whisk together the yolks, 2 tablespoons sugar, and cornstarch in a medium bowl until pale yellow and thickened. Whisking constantly, gradually add the hot milk to the yolks. Return the milk-egg mixture to the saucepan and cook, stirring constantly, over medium-low heat until the foam has dissipated to a thin layer and the mixture thickens to the consistency of heavy cream and registers 185 degrees on an instant-read thermometer, about 4 minutes. Pour the mixture through a mesh sieve and into a medium bowl; stir in the lemon juice mixture and zest. Set the bowl with the custard in a large bowl of ice water; stir occasionally to cool.
  • While the custard mixture is chilling, in the bowl of a standing mixer fitted with the whisk attachment, beat the egg whites and cream of tartar on medium speed until foamy, about 1 minute. Increase the speed to medium-high; gradually add the remaining 2 tablespoons sugar and continue to beat until glossy and the whites hold soft peaks when the beater is lifted, about 2 minutes longer. Do not over beat. Remove the bowl containing the custard mixture from the ice water bath; gently whisk in about one third of the egg whites, then fold in the remaining whites with a large rubber spatula until almost no white streaks remain.
  • In the same mixer bowl (washing is not necessary), using the whisk attachment, beat the cream on medium-high speed until soft peaks form when the beater is lifted, 2 to 3 minutes. Fold the cream into the custard and egg-white mixture until no white streaks remain.
  • Pour into the prepared souffle dish (see note) or bowl. Chill until set but not stiff, about 1 1/2 hours; remove the foil collar, if using, and serve, garnishing if desired.

1 cup whole milk
4 large eggs, separated, plus 2 additional large egg whites
1/2 cup plus 2 tablespoons sugar plus additional for sprinkling
1/2 teaspoon pure vanilla extract
2 tablespoons cornstarch
1 1/2 teaspoons finely grated Meyer lemon or other lemon zest
1/3 cup fresh Meyer lemon or other lemon juice
1/2 teaspoon salt
1/2 teaspoon cream of tartar
Special Equipment
a 7-inch soufflé dish (6-cup capacity; 3 inches deep); a 7-inch round plus a 32- by 8-inch strip of parchment paper or wax paper

Steps:

  • Bring milk just to a simmer in a 1 1/2- to 2-quart heavy saucepan, then remove from heat.
  • Beat together yolks, sugar, and vanilla in a medium bowl with an electric mixer at high speed until thick and pale, 3 to 6 minutes. Reduce speed to low and add cornstarch, mixing until incorporated. Add hot milk in a slow stream, mixing until smooth.
  • Transfer custard to same saucepan and bring to a boil, whisking constantly, then reduce heat and simmer, stirring constantly, 2 minutes. (Mixture will be thick.) Remove from heat and transfer to a large bowl, then whisk in zest and juice. Cover surface with round of parchment or wax paper and cool to room temperature, about 1 hour.
  • Put oven rack in lower third of oven and preheat oven to 375°F.
  • Butter souffl dish, then sprinkle with sugar, turning to coat all sides and knocking out excess.
  • Beat egg whites with salt in another large bowl using cleaned beaters at medium-high speed until foamy. Add cream of tartar and increase speed to high, then beat until egg whites just hold stiff peaks.
  • Stir one fourth of whites into lemon custard to lighten, then fold in remaining whites gently but thoroughly. Pour mixture into prepared soufflé dish, then wrap paper strip tightly around outside of soufflé dish, forming a collar that extends at least 4 inches above rim. Tape overlapping ends together.
  • Bake soufflé until puffed and golden in spots, 35 to 45 minutes. Remove collar and serve soufflé mmediately.

6 large eggs, separated,whites at room temperature
2/3 cup lemon juice
2/3 cup all-purpose flour
3 lemons, zest of, grated
2 cups milk
1 cup heavy cream
1/2 teaspoon salt

Steps:

  • Preheat oven to 350F.
  • Lightly butter a 9 x 2 inch round cake pan.
  • Have ready another larger pan and hot water.
  • Cream together butter and sugar.
  • Beat in egg yolks, one at a time, and beat in lemon juice, flour and zest.
  • Add milk and cream.
  • Beat whites in separate bowl with salt until it holds stiff peaks.
  • Stir ¼ of white mixture into lemon mixture to lighten and then fold in remaining whites.
  • Pour batter into prepared cake pan, set in large pan, and add enough hot water to come halfway up sides.
  • Bake for 50 minutes to 1 hour, or until just set and top is golden.
  • Serve warm.
