Tangy Lemon-Fig Chicken Wings image

Add a sophisticated touch to your game-day spread and serve these chicken wings, enveloped with a sauce made of fig jam, fresh lemon slices and snappy white-wine vinegar. Perfect for people who don't do spicy, but still want in on the wing party.

1 tablespoon vegetable oil
1/2 teaspoon kosher (coarse) salt
1/4 teaspoon freshly cracked pepper
3 lb chicken wingettes and drummettes
1/2 cup fig preserves
3 tablespoons packed brown sugar
2 tablespoons white wine vinegar
2 cloves garlic, finely chopped
2 teaspoons grated lemon peel
10 dried mission figs, halved
6 thinly cut lemon slices

Steps:

  • Heat oven to 425°F. Line 2 cookie sheet with sides with heavy-duty foil; spray with cooking spray.
  • In 1-gallon resealable food-storage plastic bag, mix oil, salt, pepper and chicken. Seal bag; shake to coat.
  • Place chicken on cookie sheets. Bake uncovered 30 minutes; turn chicken; rotate cookie sheets in oven. Bake 20 to 30 minutes longer or until golden brown and juice of chicken is clear when thickest part is cut to bone (at least 165°F).
  • In 1-quart saucepan, mix all Lemon Fig Sauce ingredients except lemon slices; heat to simmering over medium heat, stirring frequently, until sugar is dissolved, about 5 minutes. Remove from heat; set aside.
  • In large bowl, toss chicken with sauce. Garnish with lemon slices. Serve warm.

1 cup sugar
2 tablespoons cornstarch
1 dash salt
4 tablespoons butter
6 tablespoons lemon juice
1 tablespoon fresh lemon rind (grated)
2 cups boiling water

Steps:

  • Sift cornstarch and sugar to keep it from lumping and then combine with salt and boiling water.
  • Cook over medium heat, stirring occasionally, until boiling and clear, about 5 minutes.
  • Stir in remaining ingredients.
  • Keep warm till ready to serve.

1/2 cup water
1/2 cup plus 2 teaspoons sugar
3 lemons
1 tablespoon unsalted butter, softened
1 1/2 lb firm-ripe fresh purple figs, trimmed and halved lengthwise

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. 3Boil water and 1/2 cup sugar in a small saucepan, stirring, until sugar is dissolved. Remove syrup from heat. Squeeze enough juice from 2 lemons to measure 1/3 cup and stir into syrup, then discard lemon halves.
  • Remove zest from remaining lemon in long strips with a vegetable peeler and, if necessary, trim any white pith from zest with a sharp paring knife. Cut zest lengthwise into thin julienne strips. Reserve lemon.
  • Blanch zest in a 1- to 1 1/2-quart saucepan of boiling water 1 second, then drain in a sieve and add to syrup. 3Cut away any remaining pith from lemon. Working over a bowl, cut segments free from membranes.
  • Spread butter in a 1 1/2-quart flameproof gratin dish or 10-inch heavy ovenproof skillet. Arrange figs, cut sides up, slightly overlapping in 1 layer. Sprinkle with remaining 2 teaspoons sugar and bake until figs are softened and begin to exude juice but still hold their shape, 25 to 30 minutes.
  • Transfer figs with a slotted spoon to a shallow serving bowl and put gratin dish or skillet over a burner at moderately high heat.
  • Add syrup and deglaze gratin dish or skillet by boiling until syrup is reduced to about 3/4 cup, 6 to 8 minutes. Add lemon segments along with any juices in bowl and pour syrup (with lemon segments) over figs. Cool to warm or room temperature before serving.

2 1/2 cups sifted all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
8 tablespoons unsalted butter
1 3/4 cups sugar
2 large eggs
2 1/4 teaspoons pure vanilla extract
1 1/4cups whole milk
1/2 cup freshly squeezed lemon juice
1/2 cup freshly grated lemon zest (from approximately 2 to 3 lemons)
1/2 cup fresh or dried figs, sliced
For the cream cheese frosting (optional):
4 tablespoons unsalted butter
4 cups sifted confectioners' sugar
1/4 teaspoon pure vanilla extract
6 ounces cream cheese

Steps:

  • For the cupcakes:
  • Preheat the oven to 350˚F. Line two cupcake pans with twelve paper baking cups each. Sift together the flour, baking powder, and salt in a bowl, and set aside.
  • In the bowl of a stand mixer or in a bowl with a handheld electric mixer, cream together the butter and sugar until light and fluffy, approximately 3 to 5 minutes.
  • Add the eggs one at a time, mixing slowly after each addition.
  • Combine the vanilla extract and milk in a large liquid measuring cup.
  • Add one third of the flour mixture to the butter mixture, then gradually add one third of the milk mixture, beating slowly until well incorporated. Add another third of the flour mixture, followed by another third of the milk mixture. Stop to scrape down the bowl as needed. Add the remaining flour mixture, followed by the remaining milk mixture, and beat just until combined.
  • Add the lemon juice and lemon zest, and mix until well combined.
  • Scoop batter into the baking cups so that each is two-thirds full. On top of each cupcake, place one fig slice so that it covers the surface of the batter. Bake for 15 to 18 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Transfer the pans to a wire rack to cool completely. Serve and enjoy!
  • For the (optional) frosting:
  • In the bowl of a stand mixer or in a bowl with a handheld electric mixer, mix all the ingredients for approximately 3 to 5 minutes, until the frosting is light and airy. Frost each cupcake with a thick layer of the frosting using an offset spatula.

1 inch piece gingerroot, peeled and diced

Steps:

  • In the bowl of a food processor fitted with the metal blade, process the lemon halves (including rind) until finely chopped, about 15 seconds. Transfer to a small saucepan. Add the figs, sugar, and gingerroot. Heat the mixture over medium-high heat until simmering, stirring occasionally. Simmer until thickened, about 20 minutes. Remove from heat, and cool completely before serving. Store refrigerated in an airtight container up to 1 week.

12 chicken thighs
2 lemons, 1 sliced,1 halved
1/4 cup brown sugar
1/4 cup white vinegar
1/4 cup water
1 1/2 lbs dried figs
salt
1 teaspoon dried parsley
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Squeeze juices from halved lemon into a small bowl, then stir in brown sugar, vinegar and water; set aside.
  • Place figs and sliced lemon segments in the bottom of an 11x16 inch baking/roasting dish.
  • Arrange chicken thighs on top, then pour vinegar mixture over chicken.
  • Finally, sprinkle with salt and dried parsley to taste.
  • Bake/roast at 400 degrees F (200 degrees C) for 50 minutes, basting frequently (turn figs if they begin to brown).
  • With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter.
  • Skim fat from cooking juices, then pour over chicken as sauce.
  • Garnish with fresh parlsey and serve.

3 small lemons (preferably Meyer), peel and pith removed, segments coarsely chopped, peel very thinly sliced
1/2 cup granulated sugar
4 green cardamom pods
1 cinnamon stick
1 whole clove
2 tablespoons orange-blossom honey
8 dried Turkish figs, halved
2 teaspoons arrowroot mixed with 2 teaspoons water

Steps:

  • Place chopped lemon segments in a bowl; squeeze juice from membranes into bowl. Set aside. Put lemon peel into a small saucepan; cover with water. Bring to a boil, then drain and repeat.
  • Bring sugar, spices, honey, lemon segments and juice, lemon peel, and 1 cup water to a simmer in a small saucepan, stirring until sugar has dissolved. Reduce heat to low; simmer 20 minutes.
  • Add figs. Simmer 10 minutes. Stir in arrowroot; cook 2 minutes. Let cool. Remove cardamom and cinnamon.

1 makrut lime leaf, shredded fine (optional; sold in Asian markets)
2 teaspoons minced fresh coriander leaves
1 teaspoon minced scallion
2 tiny Thai red "bird" chilies, or other fresh red chilies, sliced (or to taste)

Steps:

  • Combine the vinegar, sugar, water, fish sauce and lime juice in a small, nonreactive saucepan. Bring just to a boil; then, add the lemongrass and the lime leaf and simmer for 30 seconds.
  • Remove from heat, and place the saucepan in a bowl of ice and water to chill it until it is room temperature, about 10 minutes.
