1/4 cup sugar
2/3 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
3 large eggs, lightly beaten
3 tablespoons lemon juice
1 tablespoon grated lemon zest
1 teaspoon vanilla extract
GLAZE:
2 large eggs
1 cup sugar
1/4 cup lemon juice
2 tablespoons grated lemon zest
6 tablespoons butter, melted
1 to 2 drops yellow food coloring
Fresh raspberries

Steps:

  • Combine the cracker crumbs, sugar and butter. Press onto the bottom and 2 in. up the sides of a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 10 minutes or until set. Place pan on a wire rack (leave oven on)., For filling, in a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed until combined. Stir in the lemon juice, lemon zest and vanilla just until blended. Pour into crust. Return pan to baking sheet., Bake for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., For glaze, in a small heavy saucepan, whisk the eggs, sugar, lemon juice and peel until blended. Add butter; cook, whisking constantly, until mixture is thickened and coats the back of a metal spoon. Add food coloring if desired. Transfer to a small bowl; cool for 10 minutes. Cover and refrigerate until chilled., Spread glaze over cheesecake; garnish with raspberries if desired. Refrigerate leftovers.

2 (8 ounce) packages cream cheese
½ cup white sugar
1 ½ tablespoons all-purpose flour
2 ½ tablespoons lemon juice
½ cup egg substitute
1 (8 ounce) container nonfat lemon yogurt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.)

1 (3 ounce) package lemon-flavored gelatin
1 cup hot water
¼ pound butter
8 tablespoons white sugar
2 (14.4 ounce) packages graham crackers, crushed into fine crumbs
2 lemons, zested
2 (8 ounce) packages cream cheese, softened

Steps:

  • Pour gelatin mix into a bowl and add 1 cup hot water. Stir until dissolved. Set aside and do not chill.
  • Melt butter in a heat-resistant measuring cup in a microwave, about 30 seconds. Transfer melted butter to a bowl. Add sugar and mix well. Pour in graham cracker crumbs and mix well. Place crumb mixture into the bottom of an 8-inch pie pan and shape into a crust.

1/4 cup butter, melted
3 packages (8 ounces each) cream cheese, softened

  • GLAZE: Combine sugar and cornstarch in saucepan. Stir in water, lemon juice, and egg yolk. Cook on medium heat, stirring constantly until mixture comes to a boil and thickens. Stir in butter.

1 package of honey graham crackers, crushed
6 tablespoons unsalted butter
2 tablespoons sugar
3 8-ounce packages cream cheese
3/4 cup sugar
3 eggs, well-beaten
1/4 cup lemon juice, fresh
2 teaspoons lemon zest
2 cups sour cream
3 tablespoons sugar
1 teaspoon vanilla
Lemon Glaze:
1/2 cup sugar
1 1/2 tablespoons corn starch
1/4 teaspoon salt
3/4 cup water
1 egg yolk
1/3 cup fresh lemon juice
1 tablespoon butter
1 teaspoon lemon zest

Steps:

  • Preheat oven to 350°F. Combine one package of honey graham crackers which have been crushed with a rolling pin into crumbs with 6 tablespoons melted unsalted butter and 2 tablespoons sugar. Press evenly into bottom and sides of buttered 9x3-inch springform pan. Bake 5 minutes. Set aside and cool but keep oven on at same temperature. In another bowl beat 3 8-ounce packages of cream cheese until soft, add 3/4 cup sugar and three eggs one at a time, beating well after each addition. Mix in 1/4 cup fresh lemon juice, 2 teaspoons lemon zest, and 2 teaspoons vanilla extract. Blend well. Pour mixture into springform pan and bake for 35 minutes. While cake is baking, mix 2 cups sour cream, 3 tablespoons sugar, 1 teaspoon vanilla. After cake has baked for 35 minutes, remove from oven and gently spread the sour cream mixture evenly over the top. Return to the oven and bake for 12 minutes. Remove and cool on rack for at least 30 minutes. While cooling, make lemon glaze by combining 1/2 cup sugar, 1 1/2 tablespoons corn starch, and 1/4 teaspoon salt in a heavy saucepan. In another bowl combine 3/4 cup water, 1 egg yolk, 1/3 cup fresh lemon juice. Mix well and combine with the sugar mixture in the saucepan. Cook all ingredients over low heat, stirring constantly until mixture comes to a slow boil and is thickened. Add 1 tablespoon butter and 1 teaspoon lemon zest. Allow to cool slightly, but spread on cheesecake before glaze sets. Chill cheesecake several hours or overnight before serving.

Topping

Port Syrup
1 750-ml bottle tawny Port
1/2 cup sugar
3 tablespoons raspberry vinegar
1 1/2 teaspoons grated lemon peel
8 large strawberries, unhulled, halved through stem

Steps:

  • For crust:
  • Preheat oven to 350°F. Blend graham cracker crumbs and sugar in processor. With machine running, add melted butter and lemon juice; blend until crumbs are evenly moistened. Press crumb mixture onto bottom and 2 inches up sides of 10-inch-diameter springform pan with 2 3/4-inch-high sides. Freeze crust 15 minutes. Bake crust until set, about 10 minutes. Cool completely. Maintain oven temperature.
  • For filling:
  • Using electric mixer, beat first 3 ingredients in large bowl until fluffy and smooth, stopping occasionally to scrape down sides of bowl. Add sour cream, whipping cream, lemon juice, and vanilla and beat just to blend, stopping occasionally to scrape down sides of bowl. Add eggs 1 at a time, beating just to blend after each addition.
  • Pour filling into crust (filling will just fill crust). Place springform pan on rimmed baking sheet. Bake cheesecake until top appears set, puffed, and golden at edges but still moves slightly all over when shaken, about 55 minutes. Cool cake 5 minutes.
  • Meanwhile, prepare topping:
  • Mix sour cream, sugar, and vanilla in medium bowl.
  • Spoon topping over hot cake, spreading to edge of pan and covering completely. Bake 10 minutes. Transfer cake to rack; cool 10 minutes. Run sharp knife around top 1/2-inch edge of cake to loosen. Place hot cheesecake directly in refrigerator; chill uncovered overnight.
  • For port syrup:
  • Stir Port, sugar, and vinegar in heavy large saucepan over medium-high heat until sugar dissolves. Boil until liquid is reduced to 3/4 cup, stirring occasionally, about 25 minutes. Cool. Mix in lemon peel. (Cake and syrup can be prepared 2 days ahead. Cover cake and keep refrigerated. Cover syrup and let stand at room temperature.)
  • Starting below stem end of each berry half, make 3 lengthwise slits through tip. Fan berries and place around edge of cake. (Can be made 8 hours ahead. Cover; chill.)
  • Release pan sides. Slice cake and drizzle with Port syrup. Serve syrup alongside.
