1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest
Salt and freshly ground black pepper

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

1 pound fresh green beans, ends trimmed

Steps:

  • Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.

12 to 16 ounces fresh green beans, trimmed
3 tablespoons butter
2 cloves garlic, grated on a rasp grater or finely minced
Zest of 1 lemon plus 2 teaspoons fresh lemon juice
1/4 cup slivered almonds

Steps:

  • Bring a pot of salted water to a boil. Prepare an ice bath. Blanch the green beans briefly in the boiling water, then transfer to the ice bath to stop the cooking process. Drain and set aside.
  • In a large pan on medium-high heat, add the butter, garlic and lemon juice. When the butter is melted and the garlic is fragrant, add the green beans and toss until just heated through. Taste a green bean and season with salt and pepper if needed. Remove to a serving plate and wipe the pan clean. Add the almonds and lemon zest and quickly toast a minute or two. Sprinkle the toasted almonds and zest over the green beans and serve.

I love new ways to liven up veggies. This is quite flavorful, so make sure not to serve it with something that has delicate flavor. I found the recipe on Cooks Illustrated and prepared according to directions, but next time I think I will prepare slightly ahead of time and transfer the beans to a baking dish, reduce the sauce a bit more, then add it to the beans and top with breadcrumbs. Maybe stick it under the broiler for a second to improve presentation.

2 slices sandwich bread, tear into quarters (Use a good quality bread, soft whole wheat is OK)
3 tablespoons unsalted butter, divided
2 tablespoons grated parmesan cheese
6 medium garlic cloves, minced (or garlic pressed)
2 teaspoons unbleached all-purpose flour
1/8 teaspoon red pepper flakes
1 teaspoon minced fresh thyme leave
1 1/2 lbs green beans, ends trimmed

  • In a food processor, pulse bread about ten 1 second pulses until fine, even crumbs.

1 beef bouillon cube
1/4 cup chopped onion
1 garlic clove
1/4 of a red pepper
1/2 cup green beans
0.25 (8 ounce) can tomatoes
1 dash lemon juice
lemon pepper, to taste
Mrs Dash's extra spicy seasoning, to taste
shredded cheddar cheese (optional)

Steps:

  • Make the rice according to the directions on the package, and add the bouillon cube to the water the rice is cooking inches.
  • Saute onion and garlic in olive oil until garlic is slightly browned.
  • Add the red pepper and cook for a minute or two.
  • Add the green beans and tomatoes.
  • Add as much lemon pepper and Mrs. Dash as suits you, as well as the lemon juice. By only adding a little bit of lemon juice you enhance the lemony flavor without overpowering everything else.
  • Put the vegetable mixture over the cooked rice, sprinkle a little cheese on top if you like, and enjoy!

Steps:

  • Drain the water off of the green beans.
  • Over medium heat, place the green beans in a large enough saucepan. Add just enough water to cover half the beans.
  • Squeeze the juice from all the lemon quarters, getting as much as the juice and pulp out as possible. Place 4 quarters in the pan with the beans.
