1 teaspoons kosher salt
2 tablespoons extra-virgin olive oil
1 medium onion, diced
2 teaspoons kosher salt
1 -inch piece fresh ginger
1 bay leaf
1 cup basmati rice, lightly rinsed and drained
2 cups cold water
2 wide strips lemon zest
Freshly ground black pepper

Steps:

  • Heat the olive oil in a saucepan over medium heat. Add the onion, 1 teaspoon of salt, ginger, and bay leaf, stirring occasionally, until the onion is tender and translucent, about 6 minutes.
  • Add the rice and cook until it begins to brown, about 4 minutes. Stir in the water along with the lemon zest. Bring to a simmer. Reduce the heat to low, cover, and cook for 15 minutes. Pull from the heat and set aside for 5 minutes undisturbed. Fluff with a fork season with some pepper and serve.

Lemon Saffron Rice
(Serves 2-4)
1 cup Dunar basmati rice
1 small onion (sliced)
4 tablespoon butter
1 teaspoon crushed garlic
½ - 1 teaspoon saffron threads
½ cup boiling water
1 teaspoon rough salt
2 cups boiling water
1 tablespoon chicken stock powder
2-3 drops saffron essence (optional)
1 tablespoon dried parsley
Lemon slices
1. Seep saffron in ½ cup boiling water.
2. In a deep pot, saute onion in butter.
3. When onions are softened, add garlic and saute.
4. Mix chicken stock in water. Add to onions, with lemon juice and salt.
5. Cover with pot with lid, and bring water to boil. Rinse out rice.
6. Add rice to water. Cover and cook on medium heat, stirring in between.
7. When liquid has reduced ¾ way, drop to lowest heat, and allow rice to puff.
8. Taste rice, add more lemon juice or saffron essence if you'd like flavour stronger.
9. Once rice has steamed & fluffed, add parsley and mix in with a fork, loosening rice.
10. Garnish with lemon slices and fresh parsley.

3 tablespoons vegetable oil
1/2 cup onion, chopped
1 tablespoon garlic, minced
1 teaspoon saffron threads
Salt
1 1/2 cups rice
3 cups water
1 cup tomatoes, peeled, seeded and diced
1 1/2 teaspoons cayenne pepper
1/2 cup cracked green olives
1 pound medium shrimp
1 tablespoon finely chopped preserved lemons
Freshly ground black pepper
1/2 cup toasted slivered almonds, for garnish
Chopped parsley, for garnish

Steps:

  • In a medium saucepan, add 2 tablespoons of the vegetable oil and heat. Add the onions and saute for 3 minutes, until soft and translucent. Add the garlic and saute for another 2 minutes. Add the saffron threads and saute for 1 minute. Season with salt. Add the rice and saute, stirring constantly for 2 minutes. Add the water and cover the pot. Lower the heat to simmer and cook for 20 minutes. Remove from the heat and let sit, covered for 5 minutes. Uncover and fluff with a fork. While the rice is cooking, in a saute pan, over high heat, add the remaining vegetable oil. When the oil is hot, add the tomatoes and the cayenne pepper. Saute for 5 minutes, or until the liquid begins to evaporate. Add the olives, shrimp and preserved lemons and cook until the shrimp turn pink and their tails curl completely, about 4 to 5 minutes. Be careful not to overcook. Season with salt and pepper. Add the shrimp mixture to the rice mixture and mix well. Check for seasoning. Garnish with almonds and parsley.

3/4 cup plus 2 tablespoons Greek yogurt
juice of half a lemon
1/4 teaspoon ground cinnamon
1/2 teaspoon saffron thread
1 quart chicken stock
1 tablespoon unsalted butter
2 -3 tablespoons peanut oil
2 1/4 cups basmati rice
3 -4 cardamom pods, bruised
1 lemon, juice and zest of
1/4 cup cashew nuts
1/4 cup slivered almonds
2 tablespoons pine nuts
3 -4 tablespoons shelled pistachio nuts
1 small bunch fresh parsley, chopped

Steps:

  • Marinate the chicken pieces in the yogurt, lemon and cinnamon for about an hour. Soak the saffron threads in the chicken stock.
  • Over medium heat, in a large pan with a lid, melt the butter along with 1 tablespoon oil and add the rice, stirring it to coat until glossy. Pour in the saffron and chicken stock, add the cardamom pods, lemon juice and zest and bring the pan to the boil, then clamp on a lid and turn the heat down to very low. Cook like this for about 10-15 minutes, by which time the rice should have absorbed the liquid and be cooked through.
  • While the rice is cooking, shake the excess yogurt marinade off the chicken using a sieve. Then fry the meat in a hot pan with the remaining spoonful or so of oil, and do this in batches so that the chicken colours rather than just pallidly stews to cookedness.
  • When the rice is cooked, take it off the heat and fork through the pan-bronzed chicken pieces. Toast all the nuts except the pistachios, by simply shaking them in an oil-less frying-pan over a medium heat until they colour and begin to give off their waxy scent, and then add them to the pilaf along with the chopped parsley. Pile everything on to a plate and add a fabulously green sprinkling of slivered or roughly chopped pistachios.

½ cup butter
¼ cup diced onion
1 cup uncooked long grain white rice
2 cups water
½ teaspoon dried parsley flakes
1 pinch saffron threads
3 drops yellow food coloring

Steps:

  • Heat the butter in a saucepan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
  • Pour in rice and stir to coat. Stir in water, parsley flakes, saffron, and 3 drops of yellow food coloring (optional). Reduce heat, cover, and simmer until water is absorbed, about 30 minutes.

1 tablespoon fresh lemon juice
1 Tsp. lemon zest
fresh minced parsley
1 cup of frozen peas

Steps:

  • Rinse the rice until the water is clear. In a medium size saucepan, add the water or chicken stock, and tumeric, and bring to a boil. Add the rice and simmer for about 20-25 minutes, covered. Remove from heat. Fluff with a fork. If desired, add lemon zest and lemon juice and fresh herbs. Adding frozen peas gives the rice some contrast color, and you can sneak in some vegetables!

1 1/4 lbs boneless skinless chicken breasts, cut into 1-inch chunks
1 cup whole milk yogurt
juice of half a lemon
1/4 teaspoon ground cinnamon
1 small pinch garam masala
1/2 teaspoon grated fresh ginger
1/2 teaspoon saffron thread
1 quart organic chicken stock
1 tablespoon butter
2 -3 tablespoons peanut oil
2 1/4 cups basmati rice
1/4 cup sultana (golden raisins)
3 -4 cardamom pods, bruised
2 tablespoons rose water
1 fresh lemon, juice and zest
1/4 cup slivered almonds, toasted
1/4 cup shelled pistachio nut
1 cup fresh flat leaf parsley, chopped

Steps:

  • Marinate the chicken in the yogurt, lemon, cinnamon, small pinch of garam masala, and grated ginger for about 1 hour. Soak the saffron threads in the chicken stock.
  • Shake the excess marinade off the chicken. In a large Dutch oven or Le Creuset over medium-high heat, fry the meat with a spoonful or so of oil (do this in batches so that the chicken becomes nicely golden in color). Remove chicken and browned bits to a plate, cover with aluminum foil to keep warm and set aside.
  • In the same pan, melt the butter with 1 tablespoon of the oil and add the rice, stirring to coat until glossy. Pour in the saffron and chicken stock, add the sultanas, cardamom pods, rose water, lemon juice and zest and bring the pan to the boil, then clamp on the lid and turn the heat down to very low. Cook for about 10-15 minutes, by which time the rice should have absorbed the liquid and be cooked through.
  • Add the chicken and the browned bits to the rice, stirring gently to combine.
  • Toast the almonds by shaking them in a dry frying pan over a medium heat until they color and begin to give off their fragrance, then add to the pilaf along with the chopped parsley. Pile everything onto a plate and add a fabulously green sprinkling of slivered or roughly chopped pistachios.
