Baked Lemon Sole with Sauteed Swiss Chard image

Provided by Sunny Anderson

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

4 slices fresh white bread, crusts discarded and bread quartered
1 teaspoon lemon zest
1/4 cup walnut halves
1/4 cup grated Parmesan
2 tablespoons olive oil
4 lemon sole fillets, rinsed and patted dry
Salt and freshly ground black pepper
4 tablespoons butter, plus extra for casserole
1/4 cup lemon juice 3 tablespoons capers 2 tablespoons olive oil
2 cloves garlic, minced
2 bunches Swiss chard, leaves removed and chopped

Steps:

  • Preheat oven to 400 degrees F.
  • In a food processor combine bread, lemon zest, walnuts and cheese. Pulse until almost uniform in texture. Continue pulsing while drizzling in the olive oil. Set aside.
  • Season fish with salt and pepper. Place 4 fillets in a single layer on a buttered 9 by 12-inch casserole. In a small saucepan melt 4 tablespoons of butter and add the lemon juice and capers. Pour butter mixture over fish, and sprinkle tops with bread crumb mixture. Bake uncovered for 15 to 20 minutes.
  • Meanwhile, add the olive oil to a large skillet over medium heat. Infuse the oil with minced garlic, then add the Swiss chard and saute until wilted, about 2 minutes. Season with salt and pepper, to taste. Serve hot with the sole.

Yield Makes 4 servings

Number Of Ingredients 9

1/2 cup torn fresh breadcrumbs
2 tablespoons olive oil
1 teaspoon finely grated lemon zest
Kosher salt
2 large bunches Swiss chard, ribs and stems cut into 2" lengths, leaves torn into 2" pieces
2 tablespoons unsalted butter
2 medium shallots, sliced
Freshly ground black pepper

Add cream; bring to a boil, reduce heat, and simmer, stirring often, until thickened, about 4 minutes. Add chard leaves and cook, stirring, until warmed through and coated with cream sauce; season with salt and pepper.
  • Top Swiss chard with breadcrumbs just before serving.

LEMONY SWISS CHARD

Lemony Swiss Chard image

Because chard stalks take longer to cook than the leaves, separate them using a knife -- the stalks go into the skillet first. Serve with our Goat Cheese "Ravioli."

Provided by Martha Stewart

Categories     Gluten-Free Recipes

Time 15m

Number Of Ingredients 4

1 tablespoon olive oil
1 bunch Swiss chard (about 3/4 pound), stalks cut into 1-inch pieces and leaves roughly torn (keep separate)
Coarse salt and ground pepper
2 to 3 teaspoons fresh lemon juice

Steps:

  • In a large skillet, heat oil over medium. Add chard stalks, and cook, tossing until crisp-tender, 4 to 6 minutes. Add as many chard leaves to skillet as will fit, adding more as room becomes available; season with salt and pepper. Cook, tossing occasionally, until stalks are tender, 4 to 6 minutes more.
  • Drain and discard any liquid from chard in skillet; stir in lemon juice, and season with salt and pepper.

Provided by MarraMamba

Categories     < 30 Mins

Time 20m

Yield 2 serving(s)

Number Of Ingredients 12

8 ounces fresh fettuccine
3 ounces extra virgin olive oil
1 garlic clove, sliced
kosher salt and pepper, and
crushed red pepper flakes, to taste
1 pinch of chopped fresh rosemary
3 cups swiss chard, washed
4 ounces clear vegetables or 4 ounces chicken stock
4 tablespoons halved walnuts
1 tablespoon butter
1/2 lemon, juice of
1/2 cup grated parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Over high heat, place the oil and garlic in a large sauté pan and gently cook until the garlic turns golden brown. Add 3 pinches of salt, 2 pinches of black pepper, and 2 pinches of crushed red pepper to the oil. Add the rosemary and Swiss chard. Sauté for 1 to 2 minutes.
  • Drop the pasta into the boiling water and cook until it is tender but still has a bit of bite to it.

  • Strain the pasta from the water and add it to the Swiss chard. Toss it all together until most of the liquid is absorbed by the pasta. Add the cheese.
  • The pasta should be slightly creamy, and no extra sauce should be apparent. Divide into two bowls and serve.

SWISS CHARD & KOHLRABI WITH LEMON SAUCE

Swiss chard & kohlrabi with lemon sauce image

Gordon Ramsay combines these two under-used vegetables to create a wonderful steamed side dish

Provided by Gordon Ramsay

Categories     Lunch, Side dish, Supper

Time 30m

Number Of Ingredients 8

1bunch Swiss chard (about 500g)
1 lemon , grated zest and squeezed juice
1 kohlrabi , peeled and halved
300ml vegetable stock
2 tbsp chopped fresh parsley
100ml olive oil
large sprigs fresh rosemary , tarragon, coriander and parsley
2-3 garlic cloves

Steps:

  • Cut the white chard stems from green leaves in a V shape, slice diagonally into 5mm strips. Slit the leaves in half, roll 3-4 at a time like a cigar, thinly slice. Put in a bowl and scatter with a little lemon zest. Thinly slice kohlrabi and sprinkle with zest also.
  • Boil the stock and lemon juice to reduce by half. Pour in a jug and mix in the chopped parsley. Cool, whisk in most of the oil.
  • Put the rosemary, tarragon and coriander into a steaming pan with the garlic. Cover with water and bring to the boil. Fit basket on top. Sprinkle base with salt and pepper and lay in the kohlrabi. Scatter over white chard and season again. Top with the sprigs of parsley. Drizzle with oil, cover and steam, 5 mins. Remove parsley and scatter over the green chard, lifting up the white vegetables lightly with a large fork. Cover and steam for 3-4 more mins.
  • Remove to a serving dish and pour over some sauce to serve. This tastes wonderful with grilled salmon or a chicken breast.

SWISS CHARD WITH GARLIC

Swiss Chard with Garlic image

This is a very simple recipe for Swiss chard. I like to use the whole vegetable but you need to saute the stems and the leaves separately as the stems take longer. This won't make a lot as the chard will wilt, so if you love chard, think about doubling the recipe.

Provided by barbara

Categories     Fruits and Vegetables     Vegetables     Greens     Chard

Time 15m

Yield 2

Number Of Ingredients 6

1 bunch Swiss chard
2 tablespoons olive oil
2 cloves garlic, minced
1 pinch red pepper flakes
salt to taste
1 squeeze fresh lemon juice

Steps:

  • Remove Swiss chard stems and cut into small pieces. Slice leaves into strips. Set both aside.
  • Heat olive oil in a skillet and saute chard stems for 3 to 5 minutes. Add garlic and red pepper flakes; cook until fragrant, about 30 seconds. Mix in chard leaves, cover, and cook until wilted, about 2 minutes. Uncover, stir and cook for 2 minutes longer. Season with salt and squeeze lemon juice on top.
