GERMAN LENTIL SOUP



German Lentil Soup image

Traditional German lentil soup with potatoes, vegetables, and sausages, this Linsensuppe is one of the best German soups there is.

1 tablespoon oil
125 g/ 4.4 oz smoked pork belly with rind or smoked bacon with rind (See note 1)
1 large onion
2 carrots
1 piece celeriac (about 50 g/ 1.7 oz)
1 small leek
200 g/ 7 oz/ 1 cup brown lentils
300 g/ 10.5 oz potatoes
1,5 - 2 liter/ 3 - 4 ¼ pints/ 6 ½ - 8 ½ cups stock (See note 2)
3 bay leaves
1 teaspoon dry lovage
1 teaspoon sugar
2-4 tablespoons balsamic vinegar (to taste)
fine sea salt and pepper
8 Vienna sausages or Frankfurters

Steps:

  • If you use smoked pork belly or bacon with rind, keep it in one piece. Rindless, chopped smoked bacon or pork belly can be used instead.
  • Heat the oil in a soup pan. Add the smoked pork belly with rind or the smoked bacon with rind in one piece and fry it well on both sides. If using already cubed bacon or pork belly without the rind, fry them all over as well.
  • In the meantime finely chop the onion, carrots, celeriac and leek. Add them to the pot and stir. Leave the pork belly in the pot. Add the rinsed lentils and about ¾ of the broth or stock to the pot. Add the bay leaves and the dry lovage. Stir, bring to a boil and let cook on low heat for about 30 minutes or until the brown lentils are quite soft, but not perfectly done yet.
  • In the meantime, peel and chop the potatoes into small cubes. Add them to the pot. The soup should be really thick, but if you find it too thick, you can add some or all of the remaining stock at this point.
  • Bring to a boil again and continue cooking the soup for about another 20 - 30 minutes or until the potatoes and lentils are soft.
  • Take out the whole piece of pork belly or bacon, if using. Remove and discard the rind. Chop the rest of the pork belly or bacon into small pieces. Return them to the soup.
  • Adjust the taste with salt, pepper, sugar and balsamic vinegar. Add only 2 tablespoons vinegar first and add more to taste.
  • Just before serving, heat the sausages in a large pot of water and serve 1 or 2 sausages per person. For a speedier version, slice the sausages thickly and heat the sausage pieces in the soup. Serve as suggested above.

1 large onion, chopped

Steps:

  • Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and chopped garlic, and saute until tender and translucent. Stir in lentils, carrot, water, chicken broth and tomatoes. Season with garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil, then reduce heat. Cover, and simmer for 2 1/2 to 3 hours, or until lentils are tender.
  • Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.

1 lb potato, peeled and cut into small cubes
10 ounces green lentils (not Puy)
6 garlic cloves, unskinned
1 large carrot, scraped and chopped
2 celery ribs, chopped
1 tablespoon spanish paprika
1/2 teaspoon crushed peppercorn
2 tablespoons olive oil
6 ounces kabanossi sausage, thinly sliced
1 liter water

Steps:

  • Pick over the lentils in case there are any little stones.
  • Put every thing except for the garlic, potato, sausage and salt in a large cooking pot with a tight fitting lid.
  • Bring to the boil and simmer gently for 30 to 40 minutes, until the lentils are soft and beginning to collapse into the liquid.
  • Stir occasionally to prevent sticking and add more water if needed.
  • While the soup is doing it's thing wrap the garlic cloves in foil (to make a loose parcel) and bake in the oven for 20 to 30 minutes.
  • When the garlic is cooked squeeze the flesh from the skins and pop the flesh into the soup.
  • Add the potato cubes and sliced sausage and cook for a further 10 minutes or until the potato cubes are cooked but still holding their shape.
  • Taste and add salt if needed.
  • Spoon into soup bowls and serve with buttered crusty bread.

1 pound hot sausage, bulk or casing removed
1 onion, chopped
2 ribs celery, chopped, leafy tops reserved

1 Fresno or Holland chile pepper, thinly sliced or finely chopped
2 sprigs fresh rosemary, leaves picked and finely chopped

1 bundle Tuscan, black, or dinosaur kale, stemmed and very thinly sliced

Steps:

  • In a soup pot or large Dutch oven, heat 1 tablespoon extra-virgin olive oil. Add the sausage, breaking it into pieces, and cook until lightly brown. Add the onions, celery, carrots, potato, chile pepper, rosemary, garlic, cumin, salt, and pepper, and cook to soften, 8 to10 minutes.
  • Wilt in the kale, and season the kale leaves with a little freshly grated nutmeg. Stir in the tomato paste for 30 seconds, then add white wine. Cook to reduce by 1/2 and stir in the lentils, stock, and water. Bring to a boil, reduce the heat to low, and simmer the soup until the lentils are tender, about 35 minutes. Serve immediately or cool, store, and reheat. Serve with chopped celery greens, to garnish.

1/4 cup olive oil, plus extra for serving
4 cups diced yellow onions (3 large)
4 cups chopped leeks, white and light green parts only (2 leeks)
1 tablespoon minced garlic (2 large cloves)
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
1 tablespoon minced fresh thyme leaves
1 teaspoon ground cumin
3 cups medium diced celery (8 stalks)
3 cups medium diced carrots (4 to 6 carrots)
3 quarts Homemade Chicken Stock, recipe follows, or canned broth
1/4 cup tomato paste
1 pound kielbasa, cut in 1/2 lengthwise and sliced 1/3-inch thick
2 tablespoons dry red wine or red wine vinegar
Freshly grated Parmesan, for serving
3 (5-pound) chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in 1/2, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme
20 sprigs fresh dill

Steps:

  • In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.
  • In a large stockpot over medium heat, heat the olive oil and saute the onions, leeks, garlic, salt, pepper, thyme, and cumin for 20 minutes, or until the vegetables are translucent and tender. Add the celery and carrots and saute for another 10 minutes. Add the chicken stock, tomato paste, and drained lentils, cover, and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, or until the lentils are cooked through and tender. Check the seasonings. Add the kielbasa and red wine and simmer until the kielbasa is hot. Serve drizzled with olive oil and sprinkled with grated Parmesan.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

1 large carrot
2 stalks celery
1 large onion
2 garlic cloves
1 tablespoon olive oil
1 lb hot Italian sausage
8 cups chicken broth

1/2 teaspoon crushed red pepper flakes
