Steps:
- Par-cook asparagus in boiling water for 3-4 minutes or until crisp tender.
- Drain asparagus.
- Melt butter in large skillet; add drained asparagus and chopped hard boiled eggs.
- Add half of the milk to the skillet, and bring to a low simmer.
- Add cornstarch to the remaining cold milk and stir to make a slurry.
- Add milk slurry to the skillet and bring to a boil, stirring constantly until thickened.
- Season with salt and black pepper.
- Serve over buttered toast points.

- Holding 1 spear at each end snap off the tough stem of asparagus. Use this spear as a guide line to trim the bundle with a sharp knife. Simmer asparagus in salted boiling water 3 minutes. Drain and run under cold water. Cut asparagus to fit the size of the toasts.
- Toast 8 thick slices of farmhouse style bread under a preheated broiler 6 inches from heat. Combine softened butter and mustard. Spread the toasted bread with mustard butter. Cut sliced ham into smaller pieces to process. Grind the ham in your food processor. Spread the toast with ground ham. Arrange steamed asparagus spears on top of the layer of ham. Top each toast with a few grinds of black pepper and a mound of fontina cheese. Return toasts to hot oven under broiler and cook toasts until cheese melts and lightly browns at edges. Arrange ham and asparagus toast on a platter and serve.

- Preheat oven to 400°; preheat a big skillet over med-high heat with 2 tablespoons olive oil.
- Add in onion, thyme, and garlic; season with salt and pepper; cook, stirring frequently for 5-8 minutes until nice and brown.
- Remove onions from the pan; add in the remaining olive oil and 1 tablespoon butter.
- Add in the chicken; season with salt and pepper; cook until lightly browned 3-4 minutes on each side.
- While the chicken is cooking, split the French bread in half lengthwise, just shy of cutting it completely through.
- Dig out some of the insides of the bread and discard.
- Push the bread open and flatten out to keep it open.
- In a small bowl, combine the remaining 5 tablespoons butter, a little salt and pepper, and 3 tablespoons parsley; evenly spread mixture on the inside of the bread.
- Cut the buttered loaf into 4 portions, arrange on a cookie sheet; transfer to oven and bake about 5 minutes until golden brown.
- Remove toasted bread from oven, set aside on the cookie sheet, and switch the broiler on.
- Add the browned onions back to the skillet with the chicken; dust with the flour and continue to cook for 1 minute.
- Whisk in the white wine, stock, and half-and-half; bring to a simmer.
- Add in the asparagus and continue to cook 2-3 minutes, or until the asparagus are tender and the sauce is thick.
- In a small bowl, combine the grated cheese with the bread crumbs; toss to coat the cheese evenly with the breadcrumbs.
- Stir the remaining parsley and chopped ham into the chicken and sauce.
- Divide the creamy chicken into 4 portions in the pan, then transfer each portion to top the toasted bread.
- Sprinkle a little of the cheese on top of the chicken, then transfer the cookie sheet to the broiler to melt and brown the cheese.

- Steam asparagus in a steamer rack over boiling water, covered, until crisp-tender, about 4 minutes. Transfer to a plate and keep warm, loosely covered with foil.
- Put broiler pan (with unlined rack) in broiler and preheat broiler 5 minutes.
- Generously butter bread slices on 1 side, then halve diagonally. Arrange bread, buttered sides up, on rack of hot broiler pan and broil 4 to 5 inches from heat until golden-brown in some spots and undersides are toasted, 2 to 3 minutes (watch carefully).
- Briskly simmer cream, ham, garlic, and 1/8 teaspoon pepper in a 12-inch heavy skillet, stirring occasionally, until sauce has thickened and is reduced to about 3/4 cup, about 3 minutes. (If necessary, keep warm, covered.)
- Arrange asparagus on toast, then stir sauce and spoon over asparagus.

CREAMED MUSHROOMS ON TOAST
Delicious garlicky, lemony creamed mushrooms for those lazy weekend breakfasts when you are not constrained by the need to be out the front door as soon as possible. These creamed mushrooms could also be used as a topping for meatloaves, steaks, chops or steamed vegetables, or as a sauce for pasta. It also makes a tasty supper on nights when you get home too late to really feel like making or eating a full meal. I have no idea now where I got this recipe from originally. It's been in my recipe files for years. My mother used to cook mushrooms like this when we'd been mushrooming, and she tells me that her English grandmother, who was from Kent, used to make something similar.

- Melt the butter in a sauté pan, add the garlic and sauté for 1 or 2 minutes.
- Add the mushrooms to the pan and continue to sauté, stirring continuously for 3 minutes until the mushrooms have softened. Keep a careful eye on the garlic to make sure that it does not brown.
- Add the lemon juice and cook a further minute.
- Gradually add the light cream and cook gently until the mixture thickens.
- Add salt and pepper to taste, and the chopped parsley, oregano and tarragon.
- Divide mixture among hot toast slices.
- Garnish with tarragon leaves and serve immediately.
- Or, if using as a topping or sauce, add to meat, vegetables or pasta just before serving - or serve it in a separate jug.
