This requires a pizzelle iron, similar to a waffle iron in appearance. Makes thin wafer-like cookies with snowflake designs, an Italian tradition for Christmas or anytime.

6 eggs
1 ½ cups white sugar
1 cup butter, melted
1 teaspoon lemon zest
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
4 teaspoons baking powder

Steps:

  • In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, lemon zest and vanilla, mix well. Stir in the flour and baking powder.
  • Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 30 seconds. Test the cooking time on the first one, because temperatures may vary. Remove cookies carefully from the iron and cool on wire racks.

Hailing from Abruzzo in Central Italy, pizzelle are crisp, flat waffle-esque cookies made in a special hot iron. Like mostaccioli, these cookies predate Christmas -- in fact, it is said that this is the oldest known cookie recipe on earth, dating back to the 8th century BC. In olden times, presses were made from cast iron and would be heated over a fire, or directly on the stovetop. You can still find those irons if you're up to the challenge, but electric irons are much easier to use, and very easy to find both online and at major retailers.

3/4 cup sugar
1/2 cup unsalted butter, melted
2 tablespoons milk
1 teaspoon vanilla extract
1/2 teaspoon anise extract, optional
3 large eggs
1 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt

Steps:

  • Whisk together the sugar, butter, milk, vanilla, anise extract if using and eggs in a large bowl. Add the flour, baking powder and salt, and continue to whisk until the batter is smooth. Allow to stand at room temperature for at least 1 hour so the batter can hydrate.
  • Heat the pizzelle iron, and cook your pizzelles according to the manufacturer's directions.

Steps:

  • In the bowl of your mixer, fitted with the whisk attachment, beat the eggs on high for 10 minutes. Gradually add the sugar and beat well. Add the anise, baking powder and melted butter. Beat. Switch to your paddle attachment and add flour. Mix until combined.
  • Heat your pizzelle iron until hot. Using a level 1 1/2″ scoop, place batter onto iron, close the iron and cook until done, about 1 minute. Remove and place on a flat surface to cool.

3/4 cup sugar
1/2 cup butter, melted and cooled
1 tablespoon pure vanilla extract
1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder

Steps:

  • Beat eggs and sugar in a mixing bowl for approximately 2 to 3 minutes, until they're fluffy and a light yellow color.
  • While still beating, slowly drizzle in the melted and cooled butter. Then add the vanilla extract.
  • In a separate bowl, whisk the baking powder into the flour. Using a spatula, fold the dry ingredients into the wet ingredients until just incorporated.
  • Bake one medium cookie scoop of batter (about 1 1/2 tablespoons) per mold in a pizzelle maker until golden brown, about 30 seconds. Remove with a wooden spatula to a cooling rack and cool completely.
  • Dust cooled pizzelles with powdered sugar, as desired.

3 large eggs, room temperature
3/4 cup granulated calorie free artificial sweetener (see note at the bottom)
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1/2 cup coconut oil, melted and cooled
1/2 cup water
1 3/4 cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Melt the coconut oil and set aside to cool. Heat the pizzelle maker.
  • In a large bowl, beat the eggs and sugar.
  • Add the cooled melted coconut oil, vanilla extract, coconut extract and water.
  • Sift flour and baking powder then add to the egg mixture. Batter will be sticky. If batter is too thick, add a bit more water.
  • Spray a small cookie scoop inside and out with a no-stick cooking spray. Drop a scoop of cookie dough onto the centre of the hot pizzelle machine. I cook mine for between 60 seconds and 70 seconds. Each machine heats differently and it depends on how dark you like your Pizzelles.
  • Place Pizzelles on a cooling rack. Once cooled, store in an airtight container to keep crispy.
  • NOTE: Use a calorie free sweetener that replaces sugar cup for cup. If you are using regular granulated sugar instead of the sweetener, do not add the 1/2 cup water.

A light and crunchy Italian cookie. I've never been a big fan of anise, so I make mine with a light lemon flavor instead. You'll need a pizzelle iron to make these. They're a family favorite here!

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
2 large eggs
3/4 cup sugar
2 teaspoons vanilla extract
1 teaspoon lemon extract
1/3 cup unsalted butter, melted and cooled

Steps:

  • Preheat a nonstick pizzelle iron.
  • In a large bowl, whisk the eggs. Slowly add the sugar and continue whisking until well blended.
  • Whisk in the extracts. Slowly whisk in the melted butter in a steady stream and continue whisking until mixture is smooth.
  • Slowly add the flour and continue to whisk until it is completely incorporated into the batter.
  • Drop 1 TBSP batter onto center of each side of your pizzelle iron, close and clasp. Cook for 30-60 seconds depending on your iron.
  • Remove with a small spatula and cool completely.
  • Repeat with remaining batter.
