A Georgia favorite! Great with everything! Make a lot for large gatherings, it disappears quickly! You can use any kind of nuts you like; adjust the amount to suit your preference.

1 (6 ounce) package lime flavored Jell-O® mix
1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (16 ounce) container sour cream
1 (16 ounce) package miniature marshmallows
1 cup chopped pecans

Steps:

  • In a large bowl, mix together gelatin, whipped topping, pineapple with juice, sour cream, marshmallows, and pecans. Cover and chill in refrigerator for at least 1 hour. Serve cold.

This Lime Fluff is easy to make and is zero Smart Points on the Weight Watchers Blue Plan, Purple plan & Freestyle plan. It is 1 SmartPoint per portion on the WW Green plan.

1 tub (450g or 2 cups fat free plain yogurt / fat free Greek yogurt (* see notes if following WW Green plan))
1 sachet sugar free lime jelly / jello crystals or powder (* see notes)
Juice of 1/2 lime (optional)
½ cup boiling water (¼ pint) (*see notes)
½ cup cold water (¼ pint) (*see notes)

Steps:

  • Pour the jelly / jello crystals into a jug and add the boiling water. Stir, then once all the crystals have dissolved add the cold water and set aside to cool for a couple of minutes.
  • Pour the yogurt into the bowl of a stand mixer or if you are using a hand whisk, pour into a large bowl. Squeeze the juice of 1/2 lime into the yogurt and whisk for 2 - 3 minutes until bubbles start to form.
  • Slowly pour the jelly / jello mixture into the yogurt in a steady stream continuing to whisk whilst you do so.
  • Whisk for a further 5 - 10 minutes until the mixture has increased in volume and is light and bubbly.
  • Spoon the mixture into individual ramekins or pots and place in the fridge to chill for at least 2 hours.

  • In a large mixing bowl, mix together the Cool Whip, pudding mix and jello mix until smooth.
  • Fold in crushed pineapple and mandarin oranges and mix until combined.
  • Chill in refrigerator until serving.

  • Mix together Cool Whip and Yogurt.
  • Add in drained pineapple
  • Sprinkle in instant pudding and stir well.
  • If mixture is too thick add in some of reserved pineapple juice.
  • Chill and serve.

I got this at my WW meeting. The nice thing about this is that you can use any combination of pudding and jello and (most) fruits that you want. I've also used frozen no sugar added raspberries, and strawberries and left out the fruit cocktail - this recipe is only limited by your imagination!! Oh - and the best part is it's only 1 point for a whole cup!!
