LIME SALAD
My mom used to serve this every Christmas on a bed of lettuce, crispy iceberg, and surrounded with green and red grapes. Pecans can be substituted for walnuts.

Steps:
- Dissolve gelatin mix in boiling water. Stir in salt. Stir in cold water. Chill until slightly thickened.
- Fold cabbage, carrots, and nuts into thickened gelatin. Pour mixture into an 8 inch mold that has been sprayed with a non-stick spray. Chill until firm.
- Set mold in a sink of hot water for a few seconds when ready to unmold. Place serving plate on top of mold, and turn over. Lift off mold.

CHRISTMAS WREATH SALAD

Steps:
- For the salad: In a large bowl, massage the kale with the lemon juice for about 2 minutes until the color has darkened and the leaves feel soft. Add the cranberries, pine nuts, sliced red pepper and fennel and toss to combine.
- For the dressing: In a small bowl, add the oil, Parmesan, lemon juice, salt, pepper and garlic and whisk for 1 minute. Dress the salad with about a quarter of the dressing and toss to coat. Pour the remaining dressing into a small round jar or cup.
- Place the jar of dressing in the center of a large round platter. Arrange the salad mixture around the jar to form a wreath shape. To create a bow for the wreath, cut two 1/4-inch strips from the reserved red pepper for the ribbons and set aside. Lay the remaining bell pepper piece in front of you horizontally. Cut out 2 rectangles, each with a curved piece of pepper on one side, and a square from the middle. Arrange the rectangles with the curved parts on the outside and the square in the middle. Tuck the reserved strips underneath to make ribbons hanging down. Add a small ladle or spoon to serve the dressing.
LIME HOLIDAY SALAD
This is a light Jello salad that works well in a Jello mould or just in a bowl. We have served this every Thanksgiving and Christmas for as long as I can remember. I suppose you could try other Jello Flavors, but we like the Lime so much, I never have.

- Melt the marshmallow in the milk, over low heat, stirring frequently.
- Put lime Jello mix into a large bowl.
- Pour the melted marshmallow mixture over the Jello and mix well.
- Break cream cheese into small pieces in to the Jello mixture and stir until well blended.
- Add drained pineapple and mix.
- Cool.
- Whip the cream and fold in to the Jello mixture with the mayonnaise.
- Pour into Jello mold (or bowl) and chill until firm.
- (You can substitute Cool Whip for the whipped cream if so desired, I just used the 2/3 cup measuring cup, and filled it up twice, it turned out good!).

- In a large bowl, dissolve gelatin in boiling water. Refrigerate until partially set, about 30 minutes. Drain pineapple, reserving juice; set pineapple aside. Add enough cold water to juice to measure 1-3/4 cups; stir into gelatin mixture. Whisk in yogurt until smooth. Fold in nuts if desired, cherries and reserved pineapple., Pour into a 2-qt. ring mold coated with cooking spray. Refrigerate until set. Unmold onto a lettuce-lined serving plate and garnish with additional cherries if desired.

- Drain pineapple, reserving juice; set the pineapple aside. In a saucepan, combine gelatin, water and reserved juice. Cook and stir over low heat until gelatin is dissolved. Refrigerate until syrupy, about 30 minutes., In a small bowl, beat cream cheese until fluffy. Stir in gelatin mixture, walnuts, marshmallows and reserved pineapple. LIME JELL-O MARSHMALLOW HOLIDAY MOLD
This is my own version of our family's Holiday Lime Jell-O Wreath which is always a hit, I hope you enjoy it too!

Steps:
- Empty Lime Jell-O into large bowl, add 1 cup boiling water; stir until Jell-O dissolved. Add second cup of boiling water and stir. Add cold water & ice, stir until ice dissolved. Put in refrigerator until loosely jelled, about 1-1/2 hour.
- Cut Maraschino cherries in half and place, cut side up, into a Jell-O ring mold. Bunt Cake pan works great too!
- Cut cream cheese into small squares and drop into cooled Jell-O then add pineapple, with hand mixer blend on medium until cheese gets creamy with lots of small chunks remaining (approx. 1 minute).
- Add walnuts and marshmallows, fold in with wooden spoon or spatula until completely coated with Jell-O mixture.
- Poor into Jell-O mold. Sprinkle top with coconut (hint, it looks like holiday snow and keeps the Jell-O from sliding on the platter). Cover and chill for 6 hours, or overnight!
- To remove from mold: Fill sink with HOT water. Hold mold in water for about 15 seconds. Place platter on top and Turn Over! Let mold slide out! WA LA! Place back in the refrigerator until ready to serve. Looks like a Christmas Wreath with red Berries! Great addition to your holiday table!

LIME HOLIDAY WREATH SALAD
Quick and easy to make.This make ahead salad graced my grandmas dining table every time we ate at her house. That was about twice a month and holidays. Sometimes we went to my Aunt's house- where we had fried chicken and mashed potatoes every time. When they came to our house we had meatloaf or spaghetti.

- Drain pineapple; heat pineapple juice to boiling. Add to lime jello; stir till jello is dissolved. Chill till partially set; add pineapple. cheese. pimento, celery, nuts and salt. Fold in cool whip. Place a row of sliced olives in bottom of 9-inch ring mold. Pour Jello mixture into mold; chill until firm, turn out onto plate when set.

- Serve the salad in a large round rimmed lazy susan or platter (about 18” in diameter) with a bowl placed in the middle for the dressing.
- Spread the mixed greens around the dressing bowl. Scatter the remaining ingredients on top of the greens. Use part of the red bell pepper to create a bow at the base of the salad wreath and chop the other part to scatter on top of the greens.
- To make the red bell pepper bow, slice the top off and separate each portion. Use three portions to create the main bow. Slice two long strips of bell pepper to make the ends.
- To make the dressing: In a blender or food processor, combine mayonnaise, onion, garlic, vinegar, and sugar. Blend until smooth. Season to taste with Italian seasoning and salt. Place dressing in the bowl in the middle of the salad wreath. Serve & Enjoy!
