Braising chicken breasts in a flavorful mixture of pico de gallo (aka fresh salsa), salty green olives, and tart capers ensures tender, not rubbery, meat. This chicken recipe takes just 20 minutes.

4 boneless, skinless chicken breasts
1 teaspoon kosher salt
0.5 teaspoon freshly ground black pepper
4 cups refrigerated pico de gallo
0.5 cup chopped green olives (such as Castelvetrano)
2 tablespoons drained capers
Tortillas and lime wedges, for serving

Steps:

  • Heat oil in a large skillet over medium-high. Season chicken all over with salt and pepper. Add chicken to skillet and cook until golden brown on both sides, flipping halfway through, about 4 minutes per side.
  • Add pico de gallo, olives, and capers and bring to a simmer. Simmer until chicken is cooked through and sauce is slightly thickened, about 5 minutes.
  • Serve chicken with tortillas and lime wedges.

1 jar Salsa, gluten-free
1-2 pounds Chicken Breasts, boneless skinless
1-2 limes, 1 sliced, 1 zested

Steps:

  • Place your chicken breasts in the bottom of your pressure cooker or your slower cooker.
  • Pour the jar of salsa overtop of the chicken breasts.
  • Follow your pressure cooker instructions for fresh "chicken" as pressure cookers do vary (usually between 10-20 minutes of cooking). (I haven't had to place any extra liquid in my pressure cooker for this recipe!) Once your pressure cooker is done cooking, gently pull apart the chicken breasts with a fork and stir to recombine the chicken with the delicious salsa liquids. Squeeze a generous amount of fresh lime juice over the chicken and sprinkle with fresh lime zest.
  • Cover your slow cooker and cook on low for 7-8 hours or on high for about 4 hours. Gently pull apart the chicken breasts with a fork if the chicken hasn't fallen apart on it's own already and stir to recombine the chicken with the delicious salsa liquids. Squeeze a generous amount of fresh lime juice over the chicken and sprinkle with fresh lime zest.

  • Marinade: ========= In a large bowl or resealable plastic bag, make the marinade by mixing together the lime juice, sherry, oil, oregano, and garlic salt. Remove three tablespoons of marinade; set aside. Add chicken to the remaining marinade, turning to coat. Marinate in refrigerator for 1 hour. Chicken: ======== Remove the chicken from the marinade; reserve marinade. In a small saucepan, place the reserved marinade; heat to boiling and boil for 1 minute. Place the chicken on grill with rack about 8 inches from heat source. Brush the heated marinade over chicken. Grill, turning and basting frequently with marinade, about 16 to 20 minutes, or until chicken is fork tender. Arrange chicken on the platter. Serve with salsa. This flavourful, Mexican-inspired marinade is so easy to prepare, and results in juicy, lightly spiced chicken.

½ cup salsa
1 tbsp Dijon mustard
2 tbsp lime juice, fresh
6 boneless, skinless chicken thighs
1 tbsp vegetable oil
½ cup low-fat plain yogurt
1 tsp sugar
1 ½ cup brown rice
1 lime (optional garnish)

Steps:

  • In a medium size bowl, mix together salsa, mustard and lime juice. Add skinless chicken thighs and turn to coat. Cover and marinate in the refrigerator for 30 minutes or overnight.
  • Cook the brown rice in unsalted water according to package directions.
  • Heat oil in a large non-stick skillet over medium heat. Remove chicken from marinade and add to skillet. Sauté until browned on both sides and juices run clear - about 9 minutes per side (end temperature of 165°F / 74°C).
  • Remove chicken from skillet leaving sauce behind. Add rest of marinade and bring to boil. Whisk in yogurt and sugar until heated through.
  • To serve place a piece of chicken alongside a scoop of brown rice. Top with sauce and garnish with a lime wedge.

  • Marinate the chicken w/ the juice of one lime and the oil and garlic in a zip lock bag in the fridge for at least 2 hrs or overnight.
  • For the salsa mix all the ingredients and season with salt and pepper to taste, set aside for the flavors to blend, mean while grill the chicken breasts on low heat till no longer pink.
  • Place 1 cup of rice on each plate cover with a chicken breast and then divide the salsa amongst the 4 plates and serve.
  • Time does not include marinade time or time to steam rice.
