Linguine with Trumpet Mushroom

Sauteed trumpet mushrooms look like scallops, but are much more forgiving to cook, and a hell of a lot cheaper. I love them in this pasta--it feels surprisingly elegant--but you could make the mushrooms on their own for salads or grain bowls. I use white pasta here since whole wheat's earthy flavor can overwhelm the mushrooms.

Kosher salt and freshly ground black pepper
12 ounces (340 grams) linguine
1/4 cup (60 milliliters) canola or vegetable oil
1 pound (455 grams) trumpet mushrooms, cut into 1-inch thick (2-centimeter) rounds
1/4 cup chopped fresh chives
2 tablespoons fresh lemon juice
1 tablespoon unsalted butter

Steps:

  • Bring a large pot of water to a rolling boil. Salt aggressively and add the linguine. Cook until 3 minutes before the package says the pasta will be done. Use a liquid measuring cup to scoop out 1 cup (240 milliliters) of the pasta water, set the water aside, then drain the pasta.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the mushrooms and season with 1 teaspoon each salt and pepper. Cook the mushrooms, stirring a few times, until golden brown on both sides, 10 to 14 minutes. You want them to brown nicely, so avoid stirring too much.
  • Add the cooked pasta to the pan with 3/4 cup (180 milliliters) of the reserved pasta water and cook, stirring constantly, until the pasta is cooked through, 1 to 3 minutes more. Add the remaining 1/4 cup (60 milliliters) pasta water if the pasta is too dry.
  • Remove from the heat, stir in the chives, lemon juice and butter, and season with 1 teaspoon salt and 1/4 teaspoon pepper. Serve hot.

1 tablespoon cornstarch
1 cup chicken broth
2 tablespoons white wine or additional chicken broth
1-1/2 teaspoons butter
1 garlic clove, minced
3/4 cup sliced fresh mushrooms
2 green onions, sliced
1/4 cup grated carrot
1/2 pound bay scallops
1-1/2 teaspoons minced fresh parsley
Lemon wedges, optional

Steps:

  • Cook linguine according to package directions; drain. Meanwhile, in a small bowl, mix cornstarch, broth and wine until smooth. In a nonstick skillet, heat butter over medium heat. Add garlic; cook and stir 1 minute. Add mushrooms, green onions and carrot; stir-fry 2-3 minutes or until vegetables are crisp-tender., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Reduce heat. Add scallops and parsley; cook until scallops are firm and opaque. Serve with linguine and, if desired, lemon wedges.

My husband brought home these huge Maine sea scallops and I made another experiment which turned out really good. It was very light and tasty and simple to make. I used baby portobello mushrooms & bowtie pasta. The hubby would like to see this done with angel hair pasta next time.

1 lb sea scallops, quartered (about 10 large)
8 ounces pasta (about 3 cups cooked al dente)
3 ounces fresh mushrooms (about 8 medium sliced)
3 tablespoons butter
3 garlic cloves
1/3 cup white wine
3 tablespoons fresh lemon juice
1 teaspoon sea salt, freshly ground

Steps:

  • rinse scallops & drain.
  • melt 2 Tbsp butter in large non-stick skillet.
  • add 1 clove pressed garlic & scallops.
  • cook over medium heat about 6 - 8 minutes, stirring often.
  • remove scallops and set aside leaving juice in pan.
  • Add wine, 2 Tbsp lemon juice, 2 cloves pressed garlic and mushrooms. Saute for about 3 minutes.
  • Add cooked pasta to pan, 1 Tbsp butter, stir until melted.
  • Add cooked scallops, 1 Tbsp lemon juice, 1 tsp sea salt, stir, cover pan, remove from heat & let juices blend for about 5 minutes.
  • Stir & serve.

20 large sea scallops (1 1/2 lb), tough ligament removed if attached
1/8 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons olive oil
1/2 stick (1/4 cup) unsalted butter
1 lb cremini mushrooms, quartered
1/3 cup finely chopped shallots
2 garlic cloves, finely chopped
2/3 cup medium-dry Sherry
1 tablespoon balsamic vinegar
1 tablespoon soy sauce

Steps:

  • Pat scallops dry and sprinkle with pepper and 1/4 teaspoon salt.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook scallops, turning over once, until browned well and just cooked through, 5 to 7 minutes total. Transfer to a platter and loosely cover.
  • Heat 2 tablespoons butter in skillet over moderately high heat until foam subsides, then sauté mushrooms, stirring occasionally, until golden, about 4 minutes. Add shallots and garlic and sauté, stirring, 2 minutes. Add Sherry, vinegar, soy sauce, and remaining 1/4 teaspoon salt and simmer, uncovered, stirring occasionally, 2 minutes. Cut remaining 2 tablespoons butter into small pieces.
  • Remove skillet from heat and stir in butter until incorporated. Spoon sauce over scallops.

1/2 cup chopped onion
4 -6 garlic cloves, minced
24 ounces mushrooms, sliced, use favorite(s)
1/3 cup white wine
1/2 teaspoon salt
1/4-1/2 teaspoon pepper
1/2 teaspoon basil
1/2 cup parsley, chopped
6 tablespoons heavy cream
1/4 cup shredded parmesan cheese, to sprinkle

Steps:

  • Cook pasta in boiling salted water according ton package directions; drain and keep hot.
  • While pasta is cooking: In a large skillet, melt butter. Add onion, garlic and mushrooms; sauté over med-high heat for about 5 minutes.
  • Add wine, salt, pepper and basil to the skillet. Cover and simmer for 8-10 minutes, stirring occasionally.
  • Uncover. Add parsley and heavy cream; simmer until liquid thickens/reduces a bit.
  • Toss the hot cooked pasta with the mushroom sauce. Place in serving bowls and sprinkle with parmesan cheese, if desired.
