Pass the bar! Take your bar baking to a higher level with these wonderful raspberry bars. They have an unusual ground walnut crust.

1 cup Gold Medal™ all-purpose flour
1 cup powdered sugar
1 cup ground walnuts
1/2 cup butter or margarine, softened
1/2 teaspoon ground cinnamon
2/3 cup red raspberry preserves

Steps:

  • Heat oven to 375°F. Mix all ingredients except preserves with spoon until crumbly. Press two-thirds of crumbly mixture on bottom of ungreased square pan, 9x9x2 inches. Spread with preserves. Sprinkle with remaining crumbly mixture; press gently into preserves.
  • Bake 20 to 25 minutes or until light golden brown. Cool completely, about 1 hour. For 48 bars, cut into 8 rows by 6 rows bars. Or cut into squares or triangles.

3 cups Gold Medal™ all-purpose flour
3 cups powdered sugar
3 cups ground walnuts
1 1/2 cups butter or margarine, softened
1 1/2 teaspoons ground cinnamon
2 cups raspberry or strawberry preserves
Additional powdered sugar, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir together all ingredients except preserves and additional powdered sugar with spoon until crumbly. Reserve 2 cups of the mixture for topping; press remaining mixture in bottom of ungreased 15x10x1-inch pan.
  • Bake 15 to 20 minutes or until crust is golden brown. Spread with preserves. Sprinkle with reserved crumb mixture; press gently into preserves.
  • Bake 20 to 25 minutes longer or until light golden brown. Cool completely, about 1 hour. Sprinkle with additional powdered sugar. For bars, cut into 12 rows by 6 rows.

1 cup flour
1 cup confectioners' sugar
1 cup ground walnuts
1/2 cup butter, softened
1/2 teaspoon cinnamon
2/3 cup red raspberry preserves

Steps:

  • Preheat oven to 375F.
  • Mix together flour, sugar, walnuts, cinnamon, and butter in a bowl until crumbly.
  • Press 2/3 of mixture into an ungreased 9x9-inch baking pan.
  • Spread preserves over crust.
  • Sprinkle remaining crumb mixture over the top of preserves, patting mixture down lightly.
  • Bake at 375F for 20-25 minutes or until light golden brown.
  • Cool completely before cutting into bars.

1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
1/2 cup cold butter, cut into pieces
1 cup seedless raspberry jam
1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
1/2 cup cold butter, cut into pieces
1 tablespoon water
1/2 cup chopped almonds

Steps:

  • Heat oven to 375°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, place sugar cookie mix. Cut in 1/2 cup cold butter, using pastry blender or fork, until mixture is crumbly (do not overmix). Press mixture firmly in bottom of pan.
  • Bake 15 minutes. Spoon and spread jam evenly over partially baked crust.
  • Meanwhile, in another large bowl, place oatmeal cookie mix. Cut in 1/2 cup cold butter, using pastry blender or fork, until mixture is crumbly (do not overmix). Stir in water and chopped almonds. Sprinkle oatmeal cookie mixture over jam layer; press lightly into jam layer.
  • Bake 20 to 24 minutes or until top is light golden brown and bubbling along edges. Cool completely, about 2 hours. Cut into 6 rows by 4 rows. Store loosely covered in refrigerator.

These cookies I got off of Allrecipes. They are delicious! You can make any kind of nut flour and they still taste amazing. To make nut flour, toast nuts and allow to cool. Place in food processor and pulse until fine grounds.

3/4 cup butter, softened
1 cup white sugar
1 egg
1 lemon, zested
2 cups all-purpose flour
3/4 cup toasted nuts, ground (walnut, almond, pecan, hazelnuts)
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 cup seedless red raspberry jam

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a medium bowl, cream together the butter and sugar. Beat in the egg and lemon peel. In another bowl, stir together the flour,nut flour, cinnamon and cloves. Gradually stir the dry ingredients into the creamed mixture. The dough will be stiff, so you may need to knead it by hand to get it to come together.
  • 3. Roll the dough out to 1/8 inch thickness and cut into rounds using a cookie cutter. Place cookies onto a cookie sheet spaced 2 inches apart. Count your rounds and use a small cookie cutter to cut the center out of half of the cookies. This can be done while the other half of the cookies bakes. Bake for 10 to 12 minutes in the preheated oven, until firm and lightly browned at the edges. Allow cookies to cool completely. Spread jam on the tops of the solid cookies and top with the cookies that have shapes cut out.

¾ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon lemon zest
2 cups all-purpose flour
¾ cup blanched slivered almonds, ground
1 teaspoon ground cinnamon
⅛ teaspoon ground cloves
1 cup raspberry jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch baking pan.
  • In a medium bowl, cream together the butter and sugar. Beat in the egg and lemon peel. In another bowl, stir together the flour, almonds, cinnamon and cloves. Gradually stir the dry ingredients into the creamed mixture. The dough will be stiff, so you may need to knead it by hand to get it to come together. Press half of the dough into the bottom of the prepared pan.
  • Press half of the dough into the bottom of the prepared pan. Spread the preserves over the crust. On a lightly floured surface, roll the remaining dough into long rope about 1/2 inch in diameter. Place lengths of the rope across the top of the jam in a lattice pattern over the preserves.
  • Bake 40 minutes or until top is golden. Cool in pan on wire rack. Cut into 2 inch by 1inch bars.

1 large egg, room temperature
1 teaspoon grated lemon zest
2-1/2 cups all-purpose flour

1 teaspoon ground cinnamon
1 cup seedless raspberry preserves
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and lemon zest. In another bowl, mix flour, ground almonds and cinnamon; gradually beat into creamed mixture., Press 2 cups dough onto bottom of a greased 13x9-in. baking pan. Spread with preserves to within 1/2 in. of edges. Crumble remaining dough over preserves., Bake until lightly browned, 35-40 minutes. Cool completely in pan on a wire rack. If desired, sprinkle with confectioners' sugar. Cut into bars.

A friend brought this to one of my cookie exchange parties. I have tried the raspberry version, but she said that apricot jam could also be used, so I am including both. Great flavor and really nice presentation! A food processor comes in handy for the walnuts, or you can finely chop them.

1/2 cup sugar
1 egg
1/2 teaspoon lemon zest
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
2 cups flour
1 cup walnuts, ground
1 cup apricots or 1 cup raspberry jam

Steps:

  • Preheat oven to 325°F Grease a 9x9" square pan.
  • Cream together butter, sugar, egg, lemon zest, salt, cinnamon, and cloves in a bowl.
  • Mix in flour and walnuts.
  • Reserve 1/4 of the dough, and pat the remaining into the prepared pan, going up about 1/2 inch on each side.
  • Spread chosen jam flavor in a layer over top of the dough.
  • Flour a flat surface.
  • Use reserved dough to create a lattice top for the bars by dividing it into pencil-shaped strips and rolling it on the floured surface.
  • Arrange in a lattice pattern across the top of the jam, criss crossing the strips and pressing the ends against the dough on the sides of the pan.
  • Bake 45 mintures, or until lightly browned.
  • Cool in the pan on a wire rack before cutting into bars.
