The Best Classic Shepherd's Pie - AKA Shepards Pie or Cottage Pie. Ground Beef (or lamb) with vegetables in a rich gravy, topped with cheesy mashed potatoes and baked.

2 tablespoons olive oil
1 cup chopped yellow onion
1 lb. 90% lean ground beef (-or ground lamb)
2 teaspoons dried parsley leaves
1 teaspoon dried rosemary leaves
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
2 garlic cloves (-minced)
2 tablespoons all purpose flour
2 tablespoons tomato paste
1 cup beef broth
1 cup frozen mixed peas & carrots*
1/2 cup frozen corn kernels
1 1/2 - 2 lb. russet potatoes (-about 2 large potatoes peeled and cut into 1 inch cubes)
8 tablespoons unsalted butter (-1 stick)
1/3 cup half & half
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup parmesan cheese

Steps:

  • Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook 5 minutes, stirring occasionally.
  • Add the ground beef (or ground lamb) to the skillet and break it apart with a wooden spoon. Add the parsley, rosemary, thyme, salt, and and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally.
  • Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute.
  • Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain.
  • Add the broth, frozen peas and carrots, and frozen corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
  • Set the meat mixture aside. Preheat oven to 400 degrees F.
  • Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.
  • Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.
  • Add butter, half & half, garlic powder, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
  • Add the parmesan cheese to the potatoes. Stir until well combined.
  • Pour the meat mixture into a 9x9 (or 7x11) inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.
  • If the baking dish looks very full, place it on a rimmed baking sheet so that the filling doesn't bubble over into your oven. Bake uncovered for 25-30 minutes.** Cool for 15 minutes before serving.

1 onion, chopped

4 teaspoons all-purpose flour
¼ cup Heinz Tomato Ketchup
¾ cup Heinz® Tomato Juice
2 tablespoons Heinz Worcestershire Sauce
2 tablespoons Dijon mustard
1 cup frozen mixed vegetables (such as peas and carrots)
3 cups cooked, warm, mashed potatoes
2 tablespoons butter
1 clove garlic, minced
⅔ cup warm milk

Steps:

  • Heat oil in a skillet set over medium heat. Add the onion, garlic, thyme, rosemary, and half of the salt and pepper. Cook, stirring often, for 5 to 7 minutes. Preheat the oven to 350 F (180 C).
  • Crumble meat into pan and cook until brown all over. Sprinkle with flour. Stir in ketchup, tomato juice, Worcestershire sauce and mustard. Simmer for 5 minutes. Stir in mixed vegetables. Transfer to a 9-inch (23-cm) baking dish.
  • Whip the potatoes with the warm milk, remaining salt and pepper, butter and garlic until very fluffy. Spread potatoes evenly over meat mixture. Bake for 35 minutes or until potatoes are golden.

1 tbsp extra virgin olive oil
500 g Extra lean ground beef
227 g White button mushrooms, sliced
1 Medium onion, diced
1 Small carrot, diced
1 Stalk of celery, diced
3 Cloves of garlic, crushed
2 1/2 Cups sodium-reduced beef stock, divided
½ Beef bouillon cube
1 Sprig rosemary, leaves only, finely chopped
5 Sprigs thyme, leaves only
5 Medium potatoes (I used white), peeled
½ Cup 1% Buttermilk
2 tbsp cornstarch
2 tbsp cold water
1 Cup peas (fresh if you have but I used frozen)
½ Cup corn (again, fresh if you have but I used frozen)
Salt
Pepper

Steps:

  • If you have a cast iron skillet or an oven safe skillet, use that. Otherwise use a large frying pan and then you can assemble the Shepherd's Pie in a casserole dish.
  • Heat the oil in the skillet, when it's hot (it will ripple) add the beef; season with salt and pepper.
  • Brown the beef and when it is completely cooked, strain it and set aside.
  • Return the pan to the heat and add the mushrooms, onion, carrot, and celery to the pan; season with salt and pepper.
  • When the veggies are cooked (the mushrooms have given off their liquid and the onions are soft and translucent), add the garlic. Sauté for about 30 seconds, careful to not let the garlic burn.
  • Add in 2 cups of the stock and stir in the boullion cube.
  • Add the thyme and rosemary.
  • Let the mixture simmer on low heat for 30 minutes.
  • Meanwhile start boiling the potatoes. When the potatoes are fork tender, strain them and return them to the pot they were cooked in.
  • Add in the remaining 1/2 cup of stock and the buttermilk, mash together until the potatoes are completely smooth. Season with salt and pepper.
  • Preheat your oven to 375.
  • Mix the cornstarch and water together, mix to remove any lumps.
  • Turn the heat on the pan to where the beef mixture is boiling.
  • Add the cornstarch mixture; mix well.
  • Turn the heat off the pan.
  • Add the peas and corn.
  • Season with salt and pepper.
  • Taste the beef mixture and the mashed potatoes and adjust the seasoning on both.
  • Top the beef mixture evenly with the mashed potatoes.
  • Bake for 45-50 minutes, until top is slightly browned.
  • Serve immediately.

  • Drain meat. Return to skillet; stir in vegetables and gravy. Spoon into 9-inch square baking dish; cover with potato mixture and remaining 1/2 cup shredded cheese.
  • Bake 20 min. or until heated through.

I love this recipe for Shepherd's Pie. Comfort food at it's best.You can change the amount or type veggies around to fit your taste, I sometimes add corn, peas or carrots. I adapted this recipe from allrecipes.com but made some changes. Enjoy!

4 large potatoes, peeled and cubed
1 tablespoon butter
salt and pepper
1 tablespoon vegetable oil
1/4 cup onion, chopped
1 lb lean ground beef
2 tablespoons all-purpose flour
1/2 teaspoon garlic powder
1/2 cup tomato sauce
1 tablespoon ketchup
3/4 cup sweet peas
3/4 cup corn
1/2 cup beef broth

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter (you can add some milk as well to make it easier when spreading). Season with salt and pepper to taste; set aside.
  • Preheat oven to 375 degrees F (190 degrees C.).
  • Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth, veggies, garlic powder, ketchup and tomato sauce. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Spread the ground beef mixture in an even layer on the bottom of a 2 quart casserole dish. Next top with the mashed potato mixture.
  • Bake in the preheated oven for 20 minutes, or until golden brown.

1/2 teaspoon ground cloves
1 teaspoon cinnamon

10 yukon potatoes
1 (8 ounce) can corn
1 (8 ounce) can creamed corn
2 cups curd cheese
1 teaspoon salt
1/2 teaspoon pepper
3 garlic cloves
1 teaspoon garlic powder

Steps:

  • Place in crock pot the beef, tomato paste, onions, garlic, cloves and cinnamon. Cook on low for 5 1/2hrs.
  • Peel and boil the potatoes. When soft mash with garlic powder, salt and pepper.
  • Take the meet from the crock pot and shred it. Put it on the bottom of a lasagna dish. Place the canned corn and creamed corn on top.
  • Place the mash potatoes on top and cover with cheese curds.
  • Broil in the oven for 5 minutes or until the cheese is golden. And voila! Bon appetit!
