CONFETTI BROCCOLI SLAW



Confetti Broccoli Slaw image

This is great for your Thanksgiving or Holiday table, or impress at any summer bbq or potluck. It's crunchy with a sweet orange dressing for great flavour. Got this recipe from Womans World magazine.

1/4 cup oil
1/4 cup apple cider vinegar
3 tablespoons orange juice
1 teaspoon salt
3/4 teaspoon sugar
1/4 teaspoon ground pepper
2 (12 ounce) packages broccoli coleslaw mix
3 cups carrots, shredded
3/4 cup cranberries, sweetened dried (I used orange flavoured)
1/3 cup red onion, thinly sliced
3 tablespoons pecans, chopped

Steps:

  • Whisk together the oil, vinegar, orange juice, salt, sugar and pepper, in a large serving bowl until well blended.
  • Add Broccoli slaw carrots, cranberries and onions.
  • Toss until well and evenly coated.
  • Refrigerate covered for at lease 1 hour before serving.
  • Sprinkle with pecans if using.

1 cup olive oil
⅓ cup distilled white vinegar
½ cup white sugar
1 (3 ounce) package chicken flavored ramen noodles, crushed, seasoning packet reserved
1 large head fresh broccoli, diced
2 carrots, grated
2 bunches green onions, chopped
1 cup sunflower seeds

Steps:

  • In a small bowl combine oil, vinegar, sugar and the seasoning packet from the ramen noodles. Mix well and refrigerate at least one hour before serving, or overnight.
  • In a large bowl combine broccoli, carrots, green onions and sunflower seeds. Crush ramen noodles and stir in. Pour dressing over salad about 10 minutes before serving.

½ teaspoon onion powder
½ teaspoon celery salt
½ head cabbage, shredded
2 carrots, grated

½ cup raisins

Steps:

  • Mix mayonnaise, blue cheese, sugar, olive oil, mustard, vinegar, red pepper flakes, onion powder, and celery salt together in a large bowl. Add cabbage, carrots, broccoli, and raisins; stir to coat. Chill in refrigerator at least 2 hours before serving.

This is a little different than the other broccoli slaw recipes I found posted here. My family loves it and salads are such great side dishes when the weather is so hot out!

1 (15 ounce) can pineapple chunks, drained
1/2 cup raisins
1/2 cup slivered almonds
1 (8 ounce) bottle coleslaw dressing

Steps:

  • Combine all ingredients and chill until ready to serve.
  • ***Diced apple chunks can be added for an extra crunch. I'd use a tart apple, like a Granny Smith.

1/3 cup rice vinegar
2 teaspoons minced green onions
1 pinch salt
3/4 cup dried cranberries
1 tablespoon dark sesame oil
1 teaspoon ginger
1 teaspoon mustard
10 ounces broccoli coleslaw mix
1/2 cup slivered almonds, toasted

Steps:

  • Combine orange juice, vinegar and shallots in the bowl you'll be serving slaw inches
  • Add good pinch of salt.
  • Add dried cranberries.
  • Let stand 5 to 20 minutes, as long as you can.
  • Whisk in sesame oil, ginger and mustard.
  • Taste and adjust seasonings. Add broccoli slaw and toasted almonds to bowl; toss to combine. Serve immediately.
