POTATO AND BACON PIZZA

Potato and Bacon Pizza image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 7

3 slices bacon
1/4 cup extra-virgin olive oil
1 pound refrigerated pizza dough, at room temperature
1 1/2 pounds Yukon Gold potatoes (about 4 medium)
Kosher salt and freshly ground pepper
3 ounces Cambozola or blue brie cheese, rind removed, cut into 1-inch pieces
Chopped fresh chives, for topping

Steps:

  • Freeze the bacon on a plate until firm, 20 to 30 minutes (this will make it easier to chop). Dice the bacon and set aside.
  • Meanwhile, place a pizza stone or inverted baking sheet in the top third of the oven and preheat to 475 degrees F. Brush a large piece of parchment paper with 2 tablespoons olive oil. Stretch the pizza dough into an 11-by-15-inch rectangle on the parchment. Transfer the dough (on the parchment) to a pizza peel or another inverted baking sheet; set aside.
  • Peel and very thinly slice the potatoes with a mandoline or knife and place in a large microwave-safe bowl. Cover with plastic wrap and microwave until tender, 3 to 4 minutes. Uncover and toss the potatoes with the remaining 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper until fully coated.
  • Spread the potatoes all over the pizza dough, with a slightly thinner layer in the center. Top with the bacon. Slide the pizza (on the parchment) onto the hot pizza stone and bake until the crust is golden and the potatoes are tender and crisp around the edges, 30 to 35 minutes. Remove from the oven and dot with the cheese, then return to the oven and continue baking until the cheese just melts, 1 to 2 minutes. Sprinkle with chives.

BACON JAM AND POTATO BREAKFAST PIZZA #SP5

Bacon Jam and Potato Breakfast Pizza #SP5 image

"Official Contest Entry: Simply Potatoes 5Fix" My husband and I love breakfast and pizza. I thought I could combine the two using my new favorite condiment, Bacon Jam. You can find Bacon Jam in some specialty food stores, order it online or be adventurous and make your own. Enjoy!

Provided by Alandrews

Categories     Potato

Time 27m

Yield 1 10 - 12" Pizza, 4 serving(s)

Number Of Ingredients 5

1 lb of your favorite pizza dough
2 cups Simply Potatoes® Shredded Hash Browns
1 (7 ounce) jar bacon jam (I used Skillet Bacon Spread)
3 cups shredded mozzarella cheese, separated in half
4 eggs

Steps:

  • Place a pizza stone in the oven and preheat oven to 500°.
  • Take potatoes out of bag and place in a colander. Rinse and drain well. Place potatoes in a clean dish towel and wring dry.
  • Roll out pizza dough to a 10 - 12" round.
  • Spread rolled out dough with 2/3 of the bacon jam.
  • Top jam layer with one and a half cups of cheese.
  • Top cheese with hash browns.
  • Spread remaining cheese over hash browns.
  • Make 4 small depressions in each quadrant of the pizza.
  • Place 1 egg in each of the depressions.
  • Dollop remaining bacon jam around top of pizza.
  • Bake for 12 minutes, until egg white is cooked and yolk is runny.
  • Note: Everyone's oven bakes differently. My oven is temperamental and takes longer to bake the eggs. Keep an eye on your eggs while they bake and adjust cooking time accordingly.

LOADED BACON-CHEESEBURGER-POTATO SOUP

Loaded Bacon-Cheeseburger-Potato Soup image

This particular soup is a cheeseburger variation on a more traditional potato soup base, and the addition of the ground beef alongside all that cheese and the potatoes makes for a rich, creamy, and hearty soup. The thick cut bacon adds a nice savory flavor and good texture. I love all the vegetables mixed throughout as well. It's just a great combination of flavors, textures, and ingredients. The cheese really thickens up the broth and it's a "stick to your ribs" kind of meal! Serve this with some crusty bread for sopping up all that goodness.

Provided by Rebekah Rose Hills

Categories     Potato Soup

Time 55m

Yield 6

Number Of Ingredients 14

1 pound ground beef
4 thick bacon slices bacon
2 medium carrots, peeled and diced
2 medium celery, diced
1 small onion, diced
4 cups chicken broth
2 large russet potatoes, peeled and diced
3 tablespoons butter
¼ cup all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese, plus more for garnish
1 teaspoon dried basil
1 teaspoon dried parsley
salt and freshly ground black pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain, discard grease, and set aside.
  • Meanwhile, place bacon in a 3-quart saucepan, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove crisped bacon with a slotted spoon and set on paper towels to drain. Leave bacon grease in the saucepan.
  • Sauté carrots, celery, and onion in the bacon grease until vegetables are tender, about 10 minutes. Add broth, potatoes, and browned ground beef; bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, 10 to 12 minutes.
  • Meanwhile, wipe out the skillet you previously cooked the beef in. Melt butter in the skillet and whisk in flour; cook, stirring frequently, until bubbly, 3 to 5 minutes. Carefully whisk milk into flour-butter mixture until well combined and very smooth.
  • Pour milk mixture into the soup, whisking to combine; bring to a boil and simmer for about 2 minutes. Add Cheddar cheese and stir until melted. Season with basil, parsley, salt, and pepper.
  • Remove from heat. Ladle soup into bowls and sprinkle with bacon and additional shredded Cheddar cheese.

  • Combine the butter and milk in a microwave-safe bowl and microwave until hot. Combine the milk mixture with the potato flakes and whisk well. Add a splash more milk if needed; the potato mixture should be more fluid than normal – almost like a very thick cream sauce.
  • Chop the bacon and cook until crisp. Dice the chives, grate the cheese if needed, and get all of the remaining ingredients right ready to go next to the grill.
  • Open the dough and unroll it. Place the dough directly onto the pre-heated grill grate on the hot side. Cook about 3 minutes until very browned, then flip it. Cook a few more minutes to brown the other side, then move the pizza to the other side of the grill where the heat is off.
  • Spread mashed potatoes onto the pizza crust, then top with the bacon, chives, and cheese. Close the grill and allow to cook for about 10 minutes to melt the cheese and warm up the toppings.
