DOMINICAN RICE WITH SAUSAGE (LOCRIO DE LONGANIZA)



Dominican Rice with Sausage (Locrio de Longaniza) image

A one-pot meal made with rice and Dominican pork sausage. This flavorful dish is a staple in the Dominican Republic, and perfect for weeknight dinner.

3 tablespoons vegetable oil
1 lb longaniza, (cut into 1-inch links)
2 cubes of chicken bouillon, (caldo de pollo)
1/2 teaspoon adobo
1 teaspoon oregano
1 pack of sazón, (culantro y achiote)
1/2 teaspoon ground black pepper
3 tablespoons homemade sofrito
¼ cup tomato sauce
¼ cup alcaparrado or olives
4 cups water
3 cups rice, (rinsed)

Steps:

  • In a large cast-iron pot, heat oil over medium heat. Saute Longaniza until cooked and slightly crispy. Remove from the pot and reserve.
  • Remove excess oil from the pot. Add chicken bouillon cubes, adobo, oregano, sazón, and black pepper and cook for about 30 seconds. Stir in sofrito, tomato sauce, and olives. Cook for about 2-3 minutes.
  • Add the water. When the water begins to boil, add the rice. Cover and simmer, stirring occasionally to prevent sticking to the bottom of the pot.
  • Once the water has evaporated, add the Longaniza back into the pot and stir to combine. Lower the heat to medium-low. Cover and let cook for 25 minutes. After 25 minutes, stir the rice carefully and cover for an additional 5 minutes.
  • Serve warm with a side of salad and avocado.

One of my childhood favorites, had it quite often. Traditionally they do add the olives and sometimes even capers..but I don't like them.

4 lbs roasting chickens, cut into parts
4 cups long grain white rice
8 cups water
5 tablespoons oil
2 tablespoons lime juice
1 teaspoon white sugar
4 tablespoons tomato paste
1/4 cup cubanelle pepper, chopped
1 small red onion, finely chopped
1 pinch ground oregano
1 teaspoon crushed fresh garlic
1 pinch ground black pepper
1/8 cup pitted olive, chopped (optional)
1/4 cup fresh cilantro, chopped
salt
1 chicken bouillon cube
3 tablespoons adobo seasoning (Goya)

Steps:

  • Wash the chicken parts in cold water. In a large plastic bag or air tight container with lid, place the chicken, add the cilantro, lime juice, garlic, onions, pepper, oregano, adobo seasoning and black pepper. Allow it to marinate for at least 10 minutes.
  • In a large cast iron pot over high heat, add 3 tbsp of oil (reserve 2) add sugar to heated oil, and quickly stir. Don't allow it to burn. When sugar turns brown (this will happen very quickly) add the chicken without the vegetables but don't discard them. Stir the chicken and cover. Reduce heat to medium and let it simmer for 10 minutes Adding tablespoons of water regularly if needed to prevent it from burning/sticking.
  • After 10 mins add the remaining water, the tomato paste, the reserved vegetables, and the chicken bouillon cube, and stir to combine until well mixed and paste and bouillon are dissolved. Taste and add salt to taste. Should be just a little saltier than you'd prefer, because the rice and chicken will absorb a lot of it.
  • Add the rice, once all the water has evaporated, cover and simmer over minimum heat. Wait 15 mins, uncover give it all a good stir from bottom to top and add the remaining 2 tbsp oil. Cover and wait another 5 minutes Taste rice for doneness, it should be firm but tender inside. If necessary, cover and leave another 5 minutes.
  • Serve with a side of green salad, tostones and avocados; Enjoy!

Locrio de longaniza or Arroz con longaniza is a dish that pays homage to the traditional paella but with Dominican flavors.

1 Lb Longaniza sausage (pork sausage) (diced)
3 cups rice (washed and drained)
2 packets chicken bouillon
1 tablespoon sofrito (see notes*)
1 medium onion (diced)
2 tablespoons Spanish olives (pitted)
1 tablespoon tomato paste
4 cups water

Steps:

  • In a large Caldero or rice pot, brown the longaniza (no oil needed) on high heat. Once the sausage has browned, remove from the pot and transfer to a plate.
  • Discard some of the oil from the pot and leave about a tablespoon. Add the diced onion, sofrito, (or see note*) chicken bouillon, and tomato paste. Stir until the chicken bouillon has mostly dissolved and the tomato paste is well incorporated.
  • Add the drained rice to the mixture, stir.
  • Pour the water into the rice, stir again, and bring it to a boil. When most of the water has evaporated, lower the heat and cover with an airtight lid. Let the rice simmer for about 12 to 15 minutes.
  • Uncover the rice, add the cooked longaniza and olives, turn once, and cover again for another 5 minutes.
  • Taste the rice; it should be firm but tender to the bite. Serve with stewed beans and salad.

  • Season the chicken from early in the morning with lime, onion, green cubanela pepper, garlic, and salt and pepper to taste. Set aside.
  • In a saucepan or pot, heat the oil in a medium heat, sprinkle sugar all over the bottom of the pan, when the sugar begins to bubble and begins to turn dark golden, add the chicken pieces and color them on all sides, do not brown all chicken pieces at the same time to prevent moisture to ruin your browning process, it takes about 5 minutes, remove the chicken from the heat and set aside.
  • In the same pot to make the sofrito, add olive oil, over medium heat, when the oil is hot add onion, green cubanela pepper, garlic, tomato paste and fry for 4 minutes over low heat, I put a splash of water or cooking wine to take off all the flavors from the bottom of the pot.
  • Add the rice, mix well with the sofrito, until all rice grains are covered with sofrito, add water and boil. When the water is drying off, lower the heat to the minimum and cover. Simmer for 15 minutes, then uncover and move the rice, add the chicken and pork chop pieces, cover again and let cook 15-20 more minutes, until rice is cooked to perfection. (The grain must be fully cooked but still hold its form. DO NOT OVER COOK)
