STEAMED CLAMS

Steamed Clams image

The recipe that follows is for a mess of clams, which on the eastern end of Long Island translates as a cool 100 littleneck hard-shell clams. You can certainly cook fewer of them, particularly if all you can find is the larger cherrystone clam, but a reasonable human can eat two dozen clams at a sitting, mopping up the broth with crusty bread. You can add herbs or other aromatics to the steaming liquid (thyme or garlic, say, or cilantro, parsley, tarragon). You can add chorizo or bacon. The point is just to create steam, and to allow the clams to open within it. Eat the clams with the liquid from the interior of their shells, and perhaps some melted butter. A fiery jalapeño brown butter is currently a favorite dip.

Provided by Sam Sifton

Categories     dinner, easy, lunch, quick, main course

Time 10m

Yield 8 to 10 servings

Number Of Ingredients 4

100 littleneck clams
1 tablespoon unsalted butter
1/4 cup diced chorizo or bacon, optional
2 cups beer, approximately 1 can or bottle

Steps:

  • Carefully scrub the clams under cold running water to remove sand and grit, then set aside.
  • Melt the butter in a large pot set over medium heat, and when it foams, add the chorizo or bacon, and allow it to crisp, stirring occasionally, approximately 5 minutes.
  • Add the beer to the pot (use just 1 cup if cooking 50 or fewer clams), and allow to heat through, then carefully add the clams in layers. Cover the pot, and allow the clams to steam and open, approximately 10 to 12 minutes. Serve in the pot, or use tongs or a slotted spoon to remove clams to a platter, and serve alongside a bowl of the remaining clam broth and melted butter.

CLAM BAKE

Clam Bake image

This is the most fun you can have with your seafood. It started with the idea of a fun get-together clam bake then took off with a life of its own. This recipe is a general guide. Have fun, mix and match your favorite seafood. I would ask your fish monger what is fresh, and then decide what seafood to add. I've even added a whole octopus before. Serve with a nice white wine, turn on some music and have fun. Great outdoor meal.

Provided by DENISEK1

Categories     Main Dish Recipes     Seafood Main Dish Recipes     Clams

Time 1h5m

Yield 4

Number Of Ingredients 8

8 medium red potatoes, scrubbed
1 pound clams in shell, scrubbed
1 pound mussels, cleaned and debearded
½ pound unpeeled large shrimp
1 (48 fluid ounce) can chicken broth
¼ cup dry vermouth
1 ½ cups butter, divided
1 loaf French bread

Steps:

  • Place a potatoes in a layer in the bottom of a large pot. Cover with a layer of clams, then mussels, and finally the shrimp. Pour in the vermouth and enough chicken broth to fill the pot halfway. You may not need all of the broth, depending on the size of your pot. Cut a half cup of the butter into cubes and place on top of the seafood. Cover with a lid, and seal tightly with aluminum foil.
  • Bring to a boil, then simmer over medium-low heat for 45 minutes. Remove from the heat, and carefully remove the foil and lid. Remove the seafood and potatoes from the liquid and serve on a large platter, family-style.
  • Melt 1/2 cup of reserved butter, and divide into 4 individual dishes for dipping. Serve with French bread and remaining softened butter for the bread.

  • New England Clam Chowder. This is the first of many clam chowder entries on this list. There are several types of clam chowder, with New England being one of the best.
  • Spaghetti with Clams. There’s always room for seafood pasta in my belly. Unlike pasta sauces that are ultra-rich and creamy, this one’s light yet scrumptious.
  • Clam Dip. Cream cheese and clams together in one dip? I had no idea they worked together so well! This dip is creamy, briny, and garlicky with a bit of tang from lemon juice.
  • Mediterranean-Style Steamed Clams Recipe. Steamed clams – kinda sounds a bit too basic, but wait until you hear what goes in the broth it’s steamed in.
  • Garlic Butter Steamed Clams. Here’s another steamed recipe that’s also simple, yet bursting with flavor. This time, the clams are cooked in garlic, butter, lemon, and fresh herbs.
  • White Clam Pizza. Garlic and clams star this highly addictive pizza! I can never limit myself to just one slice. New Haven-style pizza is rich and creamy, and doesn’t contain tomato sauce.
  • Cape Cod Clam Chowder. Say hello to clam chowder number twp! Cape Cod clam chowder makes use of large, hard-shell clams called quahog s. This chowder is just as creamy, but thinner than usual.
  • Caesar. To be completely honest, I personally am not a fan of this cocktail. But some people love this recipe, including my own dad! A mixture of Clamato juice, vodka, Worcestershire sauce, tabasco, horseradish, and celery, this cocktail is savory with a bit of a kick.
  • Linguine with Red Clam Sauce. Picture your favorite pasta marinara, and then multiply the flavor by 10. That’s what you can expect from this recipe. The classic Italian treat is given a delicious seafood makeover!
  • Clam Stuffed Mushrooms. Stuffed mushrooms always make me happy. Just by looking at it, you can tell it’s amazing! These earthy, meaty, and cheesy appetizers are impossible to resist.
