1 pound fresh asparagus
1 1/2 cups all-purpose flour
3/4 cup grated Parmesan cheese (divided)
1 teaspoon seasoned salt
2 cups buttermilk
Oil for frying (e.g., vegetable oil, corn oil, cottonseed oil)
Ranch dipping sauce (optional)

Steps:

  • Trim the asparagus by removing the bottom inch. You can save the trimmings for soup stock, if you'd like.
  • In a shallow bowl combine the flour, 1/2 cup Parmesan, and seasoned salt.
  • In another shallow dish, add the buttermilk.
  • Coat the asparagus first in the flour mixture, then dip into the buttermilk, and then dredge in the flour coating again.
  • Place the coated asparagus on a wire rack. Repeat with all the asparagus, and allow to rest for about 5 minutes before frying.
  • Add oil to your cooking vessel until it is 2 inches deep. Heat the oil to 350°F. Drop a few asparagus spears in at a time, and fry until golden brown. Remove the golden asparagus, and allow them to drain on a wire rack over a baking sheet.
  • Garnish with the remaining Parmesan cheese, and serve with optional ranch dipping sauce or other sauce of your choice

1 tablespoon extra virgin olive oil
1 ounce shaved Parmesan cheese
freshly ground black pepper to taste
¼ cup balsamic vinegar, or to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place asparagus on a baking sheet. Drizzle with olive oil, and toss to coat. Arrange asparagus spears in a single layer. Spread Parmesan cheese over asparagus, and season with freshly ground black pepper.
  • Bake 12 to 15 minutes in the preheated oven, until cheese is melted and asparagus is tender but crisp. Serve immediately on warm plates, sprinkling with balsamic vinegar to taste.

MARINADE:
4 boneless skinless chicken breasts, pounded or cut to 1/2-inch thickness
1/4 cup vegetable oil
1/4 cup ranch dressing
1 1/2 tablespoon Worcestershire sauce
1/2 tablespoon vinegar
1/2 tablespoon lemon juice
1 1/2 tablespoon garlic, minced
1/4 teaspoon pepper
RANCH SPREAD:
1/4 cup Parmesan, grated
1/4 cup ranch dressing
PARMESAN CRUMB TOPPING:
1/2 cup Panko bread crumbs
1/4 teaspoon garlic powder
1/3 cup Parmesan, shredded
2 tablespoons melted butter
1 cup provolone, shredded

Steps:

  • Combine ingredients for marinade and pour over chicken. Marinate in refrigerator for 2 to 3 hours or overnight. Grill 12 to 15 minutes, until chicken is done. Set aside. RANCH SPREAD: Mix 1/4 cup of grated Parmesan and 1/4 cup ranch dressing. Spread 1 tablespoon onto each chicken breast. Then, top with provolone cheese. Mix bread crumbs, garlic powder, shredded Parmesan, and butter. The crumbs should be evenly moistened. Sprinkle on top of the provolone cheese. Position rack 6 to 8 inches from broiler. Preheat broiler. Transfer cooked chicken to oven-safe casserole dish. Place chicken under broiler and cook until cheese melts and crumb topping begins to turn light brown. Serve immediately.

cooking spray
1 cup all-purpose flour
1 cup grated Parmesan cheese
6 large egg whites
¼ cup minced fresh chives
4 cups shredded Parmesan cheese
2 tablespoons all-purpose flour
1 bunch fresh asparagus
¼ cup mayonnaise
1 tablespoon prepared horseradish
2 teaspoons ketchup
¼ teaspoon Cajun seasoning

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray.
  • Mix 1 cup flour and 1 cup grated Parmesan cheese together in one bowl. Mix egg whites and chives together until foamy in a second bowl. Mix 4 cups shredded Parmesan cheese and 2 tablespoons flour together in a third bowl.
  • Using tongs and working with one piece of asparagus at a time, coat asparagus in the flour mixture, shaking off the excess. Transfer to the egg white mixture; coat evenly and let the excess run off. Finally coat in the Parmesan cheese mixture, pressing gently so the cheese adheres. Place on the prepared baking sheet and repeat to coat remaining asparagus.
  • Bake in the preheated oven until golden brown, about 15 minutes.
  • While the asparagus is baking, mix mayonnaise, horseradish, ketchup, and Cajun seasoning together in a small bowl. Serve as a dipping sauce alongside asparagus.

1/4 cup shredded Parmesan cheese
salt and pepper, to taste
1 cup garlic croutons

Steps:

  • Preheat oven to 400 degrees F.
  • Spray a 9 x 13 inch baking pan with nonstick cooking spray.
  • Cut the rough ends off the asparagus and place in prepared pan.
  • Generously spray nonstick cooking spray on top of asparagus.
  • Sprinkle Parmesan cheese in an even layer on top of asparagus.
  • Season with salt and pepper, to taste.
  • Place croutons in a resealable bag and crush using a rolling pin until fine crumbs form or place in a food processor.
  • Sprinkle crouton crumbs on top of asparagus and spray again with nonstick cooking spray.
  • Bake for 15-20 minutes, or until crumb topping is golden brown and asparagus can be easily pierced with a fork.
