LOUBYA BI ZAYT
Loubya Bi Zayt is a traditional Lebanese stew of tender green beans and a fragrant tomato sauce. A simple, healthy, flavorful side.

Steps:
- Heat the olive oil in a large skillet over medium-high heat. Add in the onion and cook, stirring occasionally, until golden. This process takes about 15 minutes, but adds a tremendous amount of flavor.
- Add in the garlic, red pepper flakes, Seven Spice, and salt. Stir, cooking, until fragrant, about 1-2 minutes.
- Stir in the green beans, tomatoes, and sugar. Simmer, covered, stirring occasionally, until the beans are tender and the tomato sauce is fragrant and has thickened, about 30 minutes.

LEBANESE GREEN BEAN STEW (LOUBIA B'ZEIT)
Steps:
- Peel and chop the onion into strips and the garlic finely, keeping them separate.
- Heat 2 tbsp of olive oil in a wide sauté pan and sauté the onions until caramalised on a low heat. This may take twenty minutes plus but is worth the effort.
- Follow by adding the chopped garlic to the onions. Saute for 1-2 minutes and take care not to burn the garlic.
- Wash and trim the ends of the green beans and sauté with the garlic and onion mix for ten minutes.
- Add the chopped tomatoes, salt, chilli and water.
- Bring to a boil and cover with a lid.
- Reduce the heat to a simmer, cooking for 30-40 mins until the beans are well done, taking care the sauce doesn't run dry.
- Serve with warm pitta bread.
LUBYA BI-ZAYT (LEBANESE GREEN BEANS)
An appetizer served at a Phoenician restaurant in Syracuse. The beans should be nice and soft when finished. Flat Italian type beans are good this way, too, but may require longer cooking.

Steps:
- Fry onion and garlic cloves in oil over high heat, stir for 5 minutes.
- Add beans, cook for 10 minutes, stir occasionally.
- Add tomato, salt, sugar, chile, allspice, and water. Cover. Bring to a boil, then reduce heat to low and cook for 35 minutes or till tender.
- Remove chile before serving.

I learned how to make this while visiting my husband's family in Syria. It can be a healthy, fast, easy vegetarian/vegan main dish for lunch or dinner that is surprisingly filling when eaten with pita bread, or it can be a flavorful side dish.

Steps:
- Place the green beans into a large pot, and drizzle with olive oil. Season with salt to taste, and put the lid on the pot. Cook over medium-high heat, stirring occasionally, until beans are cooked to your desired doneness. Syrians like it cooked until the green beans are turning brownish in color. The idea is not to saute them, but to let them steam in the moisture released by the ice crystals.
- Add cilantro and garlic to the beans, and continue to cook just until the cilantro has started to wilt. Eat as a main course by scooping up with warm pita bread or serve as a side dish.

Steps:
- Clip stem ends off green beans.
- Cut in half and rinse in cold water.
- Brown lamb cubes and onions in butter, or a little water.
- Add green beans and saute for 10 minutes.
- Add salt, spices, chopped tomatoes and water.
- Cover and simmer on low heat for 55 minutes, or until done.
- Serve with rice pilaf with sauteed pine nuts.
LOUBYA BI ZAYT (LEBANESE GREEN BEAN STEW)

- Brown the meat in a little olive oil and remove from the pan. Heat the olive oil in the same pan over a medium heat. Add the chopped onions and sauté until very soft, around 10 minutes Add the garlic, beans, salt, pepper and cinnamon and saute for on a low heat for 10-15 minutes, or till the beans started to wilt. Add the tomatoes and lemon juice, then bring to a boil. Cover and cook over a very low heat until the tomatoes form a thick sauce - around 45 minutes.

- Prepare the green beans by trimming the ends. Cut each string of green bean into 2-4 bite-sized pieces depending on its size. Wash and set aside.
