Unbelievably simple applesauce made right on the stovetop with 3 ingredients. Ready in less than 30 minutes, no added sugar, delicious applesauce every time.

2 medium honeycrisp apples, peeled, cored, and chopped in bite-size pieces
1/4 tsp ground cinnamon ((plus more to taste))
2-3 Tbsp water
1 tsp lemon juice or apple cider vinegar ((for preserving / keeping fresh longer / tartness))
1-2 tsp maple syrup ((or other sweetener of choice // optional) )

Steps:

  • To a medium saucepan (see notes for Instant Pot instructions) add peeled chopped apples, cinnamon, a dash of water (~2-3 Tbsp / 30-45 ml as original recipe is written), and lemon juice or apple cider vinegar. Stir.
  • Cover and cook over medium heat until it simmers, then reduce heat to low / medium-low and continue cooking until the apples are very tender and slightly caramelized - about 15-20 minutes. Stir occasionally.
  • Use the back of a wooden spoon or potato masher to mash into a loose sauce. You could also blend with an immersion blender, in a food processor or high-speed blender for smoother texture (optional) - a helpful step if you left the skins on. Add a dash of maple syrup or sugar of choice to sweeten (optional - depends on sweetness of your apples).
  • Enjoy fresh, or store cooled leftovers in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Enjoy cold or reheated in the microwave or on the stovetop over low heat until hot (add more water as needed if dry).

1 tablespoon melted butter

¼ teaspoon salt
1 ½ cups unsweetened almond milk or other unsweetened nondairy milk
¼ cup unsweetened applesauce
2 tablespoons coconut oil, melted
1 tablespoon sugar
1 teaspoon vanilla extract

Steps:

  • Whisk flour, baking powder and salt in a large bowl. Whisk milk, applesauce, oil, sugar and vanilla in a medium bowl. Make a well in the center of the dry ingredients, add the wet ingredients and whisk just until combined. Resist overmixing--it will make the pancakes tough.
  • Let the batter sit, without stirring, for 10 to 15 minutes. (As the batter rests, the baking powder forms bubbles that create fluffy pancakes.)
  • Coat a large nonstick skillet or griddle with cooking spray; heat over medium heat. Without stirring the batter, measure out pancakes using about 1/4 cup batter per pancake and pour into the pan (or onto the griddle). Cook until the edges are dry and you see bubbles on the surface, 2 to 4 minutes. Flip and cook until golden brown on the other side, 2 to 4 minutes more. Repeat with the remaining batter, coating the pan with cooking spray and reducing the heat as needed.

1 cup soymilk

Steps:

  • Combine the 5 dry ingredients (flour, sugar, baking powder, salt, cinnamon) in a bowl.
  • Add the soy milk and applesauce to your mixture.
  • Mix until smooth - do not overmix.
  • Let the batter sit breifly while heating pan over medium heat.
  • Spoon one pancakes' worth of the mixture into the pan.
  • Flip when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.

I have adapted this from several similar recipes on here, most call for milk but I use water. And scaled down the recipe so it works for one or two! I have listed it without sugar because I prefer to keep it basic and add yummy toppings, but it also works with adding 1-2 tsp sugar. This is the base recipe, add to it anything you want (like cinnamon, sugar, chocolate chips, berries, banana etc).

1/3 cup flour
2/3 teaspoon baking powder
1/4 cup unsweetened applesauce
1/4 cup water

Steps:

  • Mix all ingredients together in a medium sized bowl until smooth.
  • Let it sit for a couple of minutes (literally, maybe 2 minutes).
  • Heat a non-stick skillet/pan to medium heat.
  • Cook mixture as you would normal pancakes, flipping over to the other side once bubbles appear.
  • Serve with yummy toppings! I like to use Greek yogurt + fruit puree with some chocolate chips.
