Vegan Banana Muffins image

You can't tell at all that these muffins don't have any dairy or eggs. They are moist and yummy. My kids and husband polish them off as soon as they are out of the oven!

3 cups all-purpose flour
1 cup white sugar
½ cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon salt
2 cups mashed ripe bananas
1 cup canola oil
1 cup coconut milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
  • Mix flour, white sugar, brown sugar, cinnamon, baking powder, baking soda, nutmeg, and salt together in a large bowl. Stir bananas, canola oil, and coconut milk together in a separate bowl; mix banana mixture into flour mixture until just combined. Fill muffin cups with batter.
  • Bake in the preheated oven until a tooth pick inserted in the center of a muffin comes out clean, 30 to 35 minutes.

This is a recipe I have adapted from another on this site to be vegan. This produced a very nice, sweet, moist muffin. Goes great with coffee (YUM!) **After trying these after they cooled, they are VERY moist. Still very tasty, but moist. I'll play with the recipe to correct that a little. I am new to the vegan scene, so suggestions are welcome! ;0)**

2 mashed bananas
1 tablespoon unsweetened applesauce
1 teaspoon vanilla
1/2 cup sugar
1 dash salt
1 teaspoon baking powder
1 tablespoon flax seed meal
2 tablespoons water
2 tablespoons rice milk
1/2 cup whole wheat flour
1/4 cup all-purpose flour

Steps:

  • Mix the flours, salt, and baking powder in a small bowl and set aside.
  • Mix the water and flax seed meal together in a small bowl and set that aside.
  • In a larger bowl, mash the bananas.
  • Add the applesauce, vanilla, sugar, flax seed mixture, and milk. Stir well.
  • Add the dry ingredients to the wet and mix, just until combined.
  • Divide batter into a muffin pan that has been sprayed with non-stick cooking spray.
  • Bake at 350 for about 25 minute.

2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup unsweetened applesauce
1 cup sugar
3 egg whites
3 to 4 medium ripe bananas, mashed (about 2 cups)
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine flour, baking powder, baking soda and cinnamon. Combine remaining ingredients; stir into dry ingredients just until moistened. Coat muffin cups with cooking spray or use paper liners; fill cups two-thirds full. Bake at 350° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

1 pinch ground allspice, or to taste
1 pinch ground nutmeg, or to taste
10 ripe bananas, mashed
