Steps:
- Sprinkle the cube steaks with salt and pepper on both sides.
- In a shallow bowl, combine the heavy cream and eggs. Whisk with a fork.
- Combine the crushed pork rinds, Parmesan cheese, onion powder, garlic powder, paprika and cayenne. Spread into a thin layer on a large plate.
- In a large skillet, preferably cast iron, over medium-high heat, heat 1/4 inch of oil.
- Dip cube steak into the egg wash and then dredge in pork rind breading, coating thoroughly on both sides.
- Place into hot oil and fry until crispy and golden brown, about 3 minutes per side.

LOW CARB COUNTRY FRIED STEAK
Steps:
- Slice beef into 1/2 inch thick slices. Flatten by pounding with a meat mallet to 1/4 inch thickness. Set aside.
- Whisk the next 7 dry ingredients together in a shallow bowl. Set aside.
- Heat coconut oil in a large skillet, medium high heat.
- Once oil is melted, dredge 1 piece of beef into protein powder mixture then into beaten eggs and again into protein powder. Place into skillet and continue process with 3 more pieces. Don't overcrowd pan.
- Cook about 5-6 minutes on each side until golden brown. This will be medium (some pink in center). Cook longer for medium well. Remove to wire rack and continue with the rest.
- To Make Gravy: Once done cooking beef, add chicken broth to deglaze skillet, bring to a boil. Pour in heavy cream and continue to cook until it thickens, about 10-15 minutes.

COUNTRY STYLE INSTANT POT CUBE STEAK RECIPE
This Southern Instant Pot cube steak recipe is made with lightly battered cube steak that is cooked in brown gravy and onions until tender.

- Cut 2 lbs cube steak into smaller pieces.
- Add ⅓ cup flour to ziplock bag.
- Add steak a few at a time to bag to flour meat.
- Add 3 tbs oil to Instant Pot. Turn on Sauté setting.
- Add cube steak in small batches to Instant Pot. Cook on each side until browned and crispy.
- Set cube steak aside. Deglaze bottom of Instant Pot with 3 tbs of the beef broth.
- Add 2 thickly sliced onions and cook them until tender.
- Return cube steak on top of onions.
- Mix remaining 2 cups broth, cream of celery soup, and Lipton onion soup mix.
- Add sauce mixture over the cube steak.
- Cook on Manual High for 20 minutes.
- Quick release pressure.
- Turn off Instant Pot and rest for 5 minutes. (This will thicken the gravy.) Serve over rice or with mashed potatoes.
