KETO ITALIAN MEATBALL MINESTRONE

I just had to make a keto Italian Meatball Minestrone Soup recipe. Who doesn't love a great soup (and meatballs) without all the carbs. I am a big fan of this super easy slow cooked keto soup.

200 g beef mince
200 g pork mince
1 tsp Italian seasoning
1 tsp smoked paprika
Salt and pepper (to taste)
30 g butter
15 g olive oil
1/4 cup onion (diced (50g))
2 rashers bacon (diced (100g))
1 chorizo sausage (finely chopped)
1/4 cup carrot (diced (35g) optional)
3/4 cup zucchini (diced (100g))
2 tsp Italian Seasoning
2 tsp smoked paprika
400 g diced tomatoes (fresh or tinned, I use Ardmona Rich & Thick)
1/4 cup roasted red peppers (finely diced)
1 tbsp tomato paste
300 g beef broth (or stock)
1/4 cup parmesan (grated)
1/2 cup shredded mozzarella
1 tbsp fresh parsley (finely chopped)
1/2 cup fresh basil leaves to garnish

Steps:

  • In a large bowl place all meatball ingredients. Use your hands to thoroughly mix the seasonings through the mince. The mince needs to be well kneaded to hold together in the soup.
  • Pinch off a small piece of the meat mixture and gently roll between your hands to form meatballs (about 2 teaspoons each) and place onto a small tray. Continue shaping until all the meat is used. Cover and place into the fridge. Note 1.
  • Place butter and oil in large saucepan, crockpot, slow cooker or Instant Pot. Heat over moderate heat until butter has melted.
  • Add onion, bacon, chorizo, carrot and zucchini and sauté until vegetables are softened.
  • Add paprika, Italian Seasoning, tomatoes, peppers, tomato paste, and broth to bacon mixture and bring to a boil. Reduce to low/slow and add meatballs to stock.
  • Cook on low for 6-8 hours. See Note 2.
  • When soup is ready meatballs should very tender. Season well.
  • Serve with grated parmesan and mozzarella. Garnish with parsley and basil.
  • Place all meatball ingredients into mixer bowl and mix 6 sec/speed 10.
  • Pinch off a small piece of the meat mixture and gently roll between your hands to form meatballs (about 2 teaspoons each) and place onto a small tray. Continue shaping until all the meat is used. Cover and place into the fridge. Note 1.
  • Place onion into mixer bowl and chop 3 sec/speed 5. Scrape down sides of bowl.
  • Add butter, olive oil, bacon, chorizo, carrot and zucchini. Cook 6 min/Varoma/reverse stir. Pour into a small bowl.
  • Insert Blade Cover. Add paprika, Italian Seasoning, tomatoes, peppers, tomato paste, broth and bacon mixture into mixer bowl. Cook 15 min/Varoma/revers/speed 1.
  • Place meatballs into soup (careful not to go over the max level). Slow cook/6 hours (TM6) or 99 min/95℃/reverse/speed 1 and repeat.
  • When soup is ready meatballs should very tender. Season well.
  • Serve with grated parmesan and mozzarella. Garnish with parsley and basil.

2 garlic cloves, minced
3 (14 1/2 ounce) cans chicken broth
1 (28 ounce) can tomatoes, canned, undrained
6 ounces tomato paste
1 cup carrot, chopped
1 cup potato, peeled and chopped
1/2 cup fresh parsley, chopped
1 teaspoon dried basil
1 teaspoon dried thyme
1 cup rotini pasta, uncooked
36 meatballs, frozen, cooked
parmesan cheese

Steps:

  • Spray dutch oven with nonstick cooking spray.
  • Heat over medium-high heat until hot.
  • Add onions, celery, and garlic; cook and stir until crisp-tender.
  • Stir in remaining ingredients except rotini and meatballs.
  • Bring to a boil; reduce heat.
  • Cover; simmer 30 minutes.
  • Stir in rotini and meatballs.
  • Simmer uncovered an additional 10 to 12 minutes or until vegetables and rotini are tender.
  • If desired, serve with Parmesan cheese.

1 tablespoon olive oil
3 (15 ounce) cans cannellini beans, undrained and divided
1 (32 ounce) container chicken broth
1 (1 1/2 ounce) envelope vegetable soup mix (Knorr's)
60 -64 frozen cooked meatballs
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic
1/2 teaspoon dried crushed red pepper flakes
8 ounces uncooked rotini pasta
1 (10 ounce) package fresh spinach, torn
shredded parmesan cheese
chopped fresh parsley

Steps:

  • Saute garlic in hot oil in a large soup pot over medium-high heat for 1 minute.
  • Add in 2 cans beans and chicken broth; bring mixture to a boil.
  • ADd in vegetable soup mix; stir until dissolves.
  • Add in meatballs, tomatoes, and red pepper flakes; return to a boil.
  • Add in rotini; cook, stirring frequently, for 15 minutes.
  • Add in remaining beans and spinach; cook 5 more minutes.
  • Ladle into soup bowls; garnish with parmesan cheese and parsley.

This is a delicious soup that I often serve as a main dish with some French or Italian bread. I do like to add some sugar to taste because we like a sweeten up the sauce a little. I have to admit I sometimes cheat and use frozen meatballs and it comes out just fine. I also double the recipe because it is so good. Recipe is from Taste of Home's "The Best of Country Cooking" cookbook, second edition.

1 lb ground beef
1 egg, beaten
1/2 cup onion, chopped
1/4 cup dried Italian breadcrumbs
1 teaspoon salt
1/4 teaspoon pepper
1 (15 ounce) can tomato sauce
2 1/2 cups water or 2 1/2 cups beef broth
1 (15 1/2 ounce) can kidney beans, with liquid
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1 cup sliced celery
1/4 cup uncooked elbow macaroni
1/4 cup chopped fresh parsley
parmesan cheese (optional)
sugar, to taste (optional)

Steps:

  • In mixing bowl, combine beef, egg, onion, crumbs, salt and pepper. Shape into 30 1-inch balls.
  • In large saucepan, brown meatballs on all sides. Drain excess fat.
  • Add remaining ingredients except macaroni and parsley; cover and simmer 20 minutes.
  • Add macaroni; simmer 10 minutes or until tender.
  • Stir in parsley.

This soup is absolutely delicious! A family favorite, my 4 year old son calls it "Meaty Meatball Yummy Soup". It's packed with healthy veggies, which you can vary according to your family's taste. Don't let the long ingredient list fool you - it is simple and quick to prepare with ingredients you usually have on hand. You can substitute fresh vegetables for the canned; I created this in winter when I had more canned and frozen items on hand than fresh. Leave the meatballs out if you are short on time or want to skip the meat. You can also make the meatballs in advance and freeze them to add later. We like to serve this with a fresh green salad and good multi grain bread.

1/4 cup grated parmesan cheese (or a mix of Parmesan and Romano)

  • To prepare the meatballs:
  • Preheat oven to 350.
  • In a medium bowl, combine all ingredients and roll into 1/2 inch meatballs.

  • To prepare soup (while meatballs are cooking):.
  • Heat oil in a large stockpot. Saute the onions until softened and lightly brown, about 4 minutes.
  • Add garlic and saute 2 minutes longer.
  • Add stock, juice, green beans, carrots, kidney beans, mushrooms, tomatoes, basil, oregano, salt, and pepper.
  • Bring to a boil over medium high heat. Reduce heat and simmer on medium low for 20 to 25 minutes, stirring occasionally.
  • Add meatballs.
  • Add pasta, cover pot, and cook about 10 minutes longer.

I always love to find a new way to use frozen meatballs--either commercial or homemade and frozen. This is a particularly good (and hearty) soup. I think you will enjoy it. I found a tiny elbow macaroni in the Mexican section of the ethnic aisle of the supermarket; I thought it worked very well in this recipe. It's name is Pasta Alimenticia (La Moderna brand). I also substituted Navy beans for the kidneys since we like them best. The recipe comes from "Slow Cooker Magic" by Rehberg and Conway.

1 tablespoon olive oil
1 lb frozen meatballs
1 medium onion, chopped
5 cups beef broth (or 5 bouillon cubes and 5 cups water)
1 (14 1/2 ounce) can diced tomatoes, Italian-style
1 cup peeled and sliced carrot, about 1/8-inch thick
1 cup sliced celery, about 1/4-inch thick
1/2 cup chopped green pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 tablespoon chopped fresh Italian parsley
1 cup elbow macaroni
1 (16 ounce) can kidney beans, rinsed and drained
grated parmesan cheese (to garnish)

Steps:

  • In a nonstick skillet, heat oil over medium heat. Add meatballs and brown on all sides. Just before they are completely browned, add the onion to the skillet and reduce heat to medium-low. Continue cooking about 2 more minutes or until the onions are soft.
  • Add 1 cup of the beef broth to the pan, stirring up all the browned particles from the bottom of the pan. Carefully pour contents of skillet into your crock pot. I used a 4-quart sized crock pot.
  • Add the rest of the beef broth, tomatoes, carrots, celery, green pepper, oregano, basil and parsley to the crock pot. Cover and cook on LO for 6 to 8 hours.
  • Turn the heat to HI. Add the macaroni and rinsed and drained beans; stir. Cover and cook about 30 minutes until the macaroni is fully cooked.
  • Taste before serving. If necessary, adjust seasoning. Serve in soup bowls with grated Parmesan cheese on top.

This is a delicious rich soup that will need a longer cooking time then most soups and tastes even better the next day it's really a meal in itself, I serve it with garlic bread on the side --- to save some time prepare the meatballs up to a day ahead, the meatball mixture may be doubled if desired, if you don't use all the meatballs then freeze for another time and just drop them into the soup frozen -- 1/4 to 1/3 cup dry red wine may be added to the soup :)

  • For the meatballs; in a bowl combine all ingredients until blended.

  • In a large pot heat olive oil over medium-high heat; add in garlic and saute for 2 minutes.
  • Add in onions, dried oregano and crushed chili flakes; saute for about 4 minutes, stirring.
  • Add in celery, carrots and tomato paste; saute stirring for 2-3 minutes stirring with a wooden spoon.
  • Add in chicken broth, tomato sauce, kidney beans, green beans, spinach leaves and zucchini; return to a boil.
  • Add in uncooked meatballs; bring to a simmer (do not stir for at least 20 minutes).
  • Reduce heat to low, cover and simmer for about 1-1/2 to 2 hours (after about 30 minutes of cooking season with salt and fresh ground black pepper to taste).
  • Add in cooked pasta and 1/3 to 1/2 cup Parmesan cheese; stir to heat through (can add in more cheese if desired).
  • Ladle into bowls and sprinkle with more Parmesan cheese.
