Spinach Egg Muffins with Cheese image

Spinach Egg Muffins with Cheese are quick, simple and make a perfect grab and go breakfast for busy mornings. Best of all, this recipe is easy to customize and the egg cups are low in carbs, keto friendly and packed with protein.

10 large eggs
1 - 1 1/2 teaspoons sea salt or to taste
1/4 - 1/2 teaspoon black pepper or to taste
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
2 cups chopped spinach
1 1/2 cups grated Parmesan cheese (plus more for topping)

Steps:

  • Preheat oven to 400 F. Line a 12 count muffin pan with silicone liners or coat with non-stick cooking spray. Set aside.
  • In a large 4 cup measuring cup or mixing bowl, crack in eggs and whisk together with salt and black pepper.
  • Whisk in garlic powder and basil until combined. Stir in spinach and cheese. Divide evenly into muffin cups filling each about 2/3 full.
  • Sprinkle with more cheese if desired. Bake in preheated oven for 12-15 minutes, or until set.

6 to 8 strips of bacon, chopped
½ large onion, chopped
1½ cups cheddar cheese, shredded
2 to 3 cups of spinach
12 eggs

Steps:

  • Preheat oven to 350°F and spray cooking spray in a muffin pan. Set aside.
  • In a large bowl, use a whisk to beat the eggs until frothy.
  • Add the shredded cheese and stir to combine. Set aside.
  • In a frying pan on the stove, cook the onion and bacon over medium heat for about 10 minutes. Add in spinach and stir to combine. Cook for about 3 minutes or until spinach is wilted. Remove from heat and let cool for five minutes.
  • Add spinach mixture to the egg mixture and stir until thoroughly combined.
  • Ladle the egg mixture into a muffin pan being careful to not overfill the muffin cups. Cook for 15 minutes.
  • Remove from oven and let cool for 5 minutes.
  • To remove the muffins from the pan, use a knife and glide around each muffin until you can gently remove them. Serve immediately.

18 slices deli turkey
12 large egg whites
1/2 cup salsa
1/4 cup mexican cheese
2 cups fresh spinach or 5 ounces frozen spinach
2 tablespoons Molly McButter (optional)

Steps:

  • Preheat oven to 350 degrees. Spray regular sized muffin tin or use foil liners. Recipe makes 12 regular muffins filled all the way to the top or 24 mini muffins. Chop turkey and spinach or use food processor. I prefer larger pieces so I use a knife. Separate egg whites into bowl saving egg yolks for Cheesy Bacon Egg Muffins(for DH and kids) Mix all ingredients together and pour into muffin tin. Bake at least 20 minutes at 350 degrees for moist squishy muffins or up to 30 minutes for a dryer more solid texture.

This is the egg muffin recipe that I make with the leftover egg yolks from the Cheesy Spinach and Egg Muffins. The DH and kids wouldn't touch the one with veggies and egg whites. It may be good for them or something like that. This recipe has a higher fat content, but is still packed with protein and very low carb.

12 large egg yolks
4 slices cooked bacon
1/4 cup shredded cheddar cheese
4 slices deli turkey (optional)

Steps:

  • Spray a 6-muffin tin with cooking spray or use foil muffin cups and preheat oven to 350 degrees. Chop bacon and turkey. Mix all ingredients and pour into muffin tins about 3/4 full. Bake for 10-15 minutes at 350 degrees. Optional: you can cut biscuits in two and roll out for a crust if you want them to be more filling.
