From The Multi-Cultural Cuisine of Trinidad & Tobago and the Caribbean, Naparima Girls' High School Cookbook which I borrowed. The recipe doesn't say what kind of cheese so you choose your favorite. For a variation, you can add grated onions or carrots, chopped herbs and tomato.

8 ounces elbow macaroni
2 eggs
2 cups cheese, grated
1 1/2 cups evaporated milk
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Boil macaroni in salted water until tender and drain.
  • Beat eggs until fluffy.
  • Combine macaroni, eggs, cheese, milk, salt and pepper.
  • Pour into a greased baking dish and bake at 350 degrees F. until firm, about 30 minutes.

8 ounce uncooked Macaroni
2 Tablespoon unsalted butter
1-2 tablespoon jalapenos pepper minced (seeded)
1 teaspoon minced garlic
½ teaspoon smoked paprika
1 teaspoon thyme
½ cup finely diced onion
1 tablespoon flour
1 cup evaporated milk
1 egg
4 ounce mozzarella cheese (grated)
4 ounce sharp cheddar cheese (grated)
1 teaspoon salt (I used creole salt)
½ teaspoon white pepper
½ teaspoons dry mustard (optional)

Steps:

  • Cook macaroni according to package directions.Be sure to salt water before cooking.
  • Meanwhile, in a saucepan, sauté the garlic, thyme, Jalapeno pepper, smoked paprika for about 1 minute in 2 tablespoons butter.
  • Then add onions and continue cooking for about a minute more.
  • Proceed by adding the flour; whisk until blended. Gradually add milk. Bring to a boil; cook and stir until mixture thickens. Remove about ¼ cup of the mixture and slowly whisk with the egg making sure it doesn't curdle. Dump the tempered egg back into the pan.and mix well to incorporate all ingredients.
  • Stir in more than half of the cheese (leave the rest to sprinkle on top) .
  • Drain macaroni and add to sauce; stir until coated. Add mustard and white pepper .Adjust seasonings. Transfer to a greased 2-quart baking dish or 13-in. x 9-in. baking dish. Sprinkle remaining cheese on top . Bake, uncovered, at 350° for 20 -30 minutes or until heated through.

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until barely tender, al dente. Drain and set aside.
  • While the noodles are cooking, melt butter in a deep skillet over medium heat. Add the jalapeño, garlic, paprika, and thyme. Cook, stirring often, until fragrant, about 1 minute. Stir in the onions and continue to cook until softened. Mix in the flour and cook for another minute. Slowly add the evaporated milk. Bring to a boil, then reduce heat to medium low. Stir often to keep the bottom from burning while the mixture thickens.
  • In a small bowl, beat the egg. While continuously whisking, slowly add about 1/4 cup of the heated milk mixture. Once combined, slowly pour back into the pan while constantly stirring. Mix in about 3/4 of the shredded cheese, then the salt, pepper, and dry mustard until smooth. Toss in the macaroni. Season if needed. Spread in an even layer in prepared baking dish. Top with remaining cheese.
