This recipe came from my husband's relatives in Holland and has been a favorite for many years. It's fancy, frosty, as pretty as a picture-and goes together in just 10 minutes! -Patricia Swart, Galloway, New Jersey

1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/4 cup sugar
1 can (15 ounces) apricot halves, drained and coarsely chopped
1 can (8 ounces) crushed pineapple, drained
1 cup miniature marshmallows
1 can (15 ounces) pitted dark sweet cherries, drained

Steps:

  • In a large bowl, beat the cream cheese, sour cream and sugar until smooth. Fold in the apricots, pineapple and marshmallows. Gently fold in cherries. Spoon into a 5-cup ring mold coated with cooking spray., Cover and freeze for 4 hours or until firm. Just before serving, invert onto a platter.

These cute filled chocolate cups get gobbled up whenever I set them out. The fluffy mint filling pairs well with the chocolate.

1 cup semisweet chocolate chips
12 large marshmallows
1/4 cup whole milk
1/2 teaspoon vanilla extract
1/8 teaspoon peppermint extract
3 drops red or green food coloring
Dash salt
1/2 cup heavy whipping cream
3 tablespoons crushed peppermint and/or spearmint candies, divided

Steps:

  • In a microwave, melt chocolate chips; stir until smooth. Brush evenly on the inside of 18 foil miniature muffin cup liners. Refrigerate until set. Add a second coat of chocolate; chill until set. , Meanwhile, in a small saucepan over medium-low heat, cook and stir marshmallows and milk until marshmallows are melted. Remove from the heat. Stir in the extracts, food coloring and salt. Cover and refrigerate for 1 hour or until thickened. , Carefully peel liners from the chocolate cups and discard. In a large bowl, beat cream until stiff peaks form. Fold in marshmallow mixture and 2 tablespoons crushed candies. Spoon into chocolate cups. Sprinkle with remaining candies. Store in the refrigerator.

1 (8 ounce) can mandarin oranges, thoroughly drained
1 (8 ounce) can pineapple chunks, thoroughly drained
1 cup whole green grape, washed and dried
1 cup mini marshmallows
1 cup sour cream
1 cup walnut pieces or 1 cup pecan pieces

Steps:

  • Be sure to VERY thoroughly drain the canned fruits and dry the washed grapes (you certainly do not want a watery fruit salad!).
  • Combine all ingredients into a large bowl, gently mix.
  • Enjoy!

  • Melt the chocolate over a double boiler or in the microwave (if you use the microwave, do it in 30 second increments then stir to prevent burning). Once the chocolate has just melted, stir in the coconut oil until it has melted. Spoon about 1 – 1 1/2 tablespoons of chocolate into the bottom of the muffin liners and use a spoon or pastry brush to bring the chocolate up over the sides. Sprinkle the chocolate with a teaspoon or so of the coconut. Use as much as you want! You can’t go wrong here. Stick the chocolate in the fridge or the freezer for 20 minutes, just so it sets up and becomes firm.
  • Spoon about 1 1/2 tablespoons of the marshmallow fluff into the chocolate cups. Sprinkle the remaining coconut over the top of the fluff. Put the muffin tin back in the fridge or freeze so the marshmallow firms up, another 20 minutes or so.
  • If the remaining melted chocolate has started to firm up, re-melt it. Spoon it over top of the cups and smooth it out. Place the tin back in the fridge or freezer for another 20 minutes before serving. I love keeping these cold – otherwise they can be a bit messy.
