- Heat a large skillet over medium heat and drizzle with canola oil. Place 1 tortilla in the skillet to warm. Sprinkle over half the cheese. Spread half the chicken mixture over the cheese and top with a second tortilla. Cook 3 minutes. Flip it over and cook until the bottom is browned and the cheese is melted, another 2 to 3 minutes. Repeat for the second quesadilla. Slice and serve with the remoulade and top with cilantro, if desired.
BACON, DATE AND MANCHEGO QUESADILLAS

- Preheat the oven to 400 degrees F. Arrange the bacon slices side by side on a parchment-lined baking sheet and bake until browned and crisp, 15 to 18 minutes. Drain on paper towels.
- Meanwhile, make the pistachio cream: Combine the pistachios, red pepper flakes, garlic, lemon juice and spinach in a food processor and pulse until chopped; with the motor running, slowly stream in the olive oil until incorporated. Season with salt and pepper and process 5 more seconds. Pour the mixture into a bowl and whisk in the crema; set aside.
- Assemble the quesadillas: On 1 half of each tortilla, layer 1/2 cup cheese, 3 slices bacon and a few date slices. Fold the tortillas in half to cover the filling. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add 2 quesadillas and cook until golden on both sides and gooey in the middle, 4 to 5 minutes per side. Repeat with the remaining 2 quesadillas, adding the remaining 1 tablespoon oil to the pan.
- Cut each quesadilla into 4 triangles; serve with the pistachio cream.

2 MINUTE CHEESE QUESADILLAS
My 4-year-old loves these quick and easy cheese snacks. Just 2 ingredients and a microwave are needed! Cut crosswise into pizza shape slices. You can use any kind of cheese you want to and even any size flour tortilla. Serve with a little dish of ketchup to dip pieces into.

Yup...another recipe from an old issue of "Vanidades"...lol! Old mags can be soo helpful sometimes! ;) The good thing about quesadillas is that they are soooooo versatile and flexible for cooking! They are sooo NOT time consuming and great when making breakfast for hungry ppl or short on time!!!

- Cover each tortilla with 2 slices of manchego cheese and fold them in half.
- In a large skillet, heat the cooking spray (PAM) and when it's hot enough add in your tortillas.
- Cook them for about 2-3 minutos on each side until they're golden brown and the cheese has melted.
- When they're done, put 1/2 teaspoons of sour cream over each quesadilla and 1 teaspoons of Pico de Gallo.
- Variations: prepare as indicated but you may add to the filling ham, veggies, shredded chichen, guacamole, chiles or even fruit! ;) Make it as you wish! Enjooooy!
MANCHEGO QUESADILLAS

- Wipe a non-stick pan (cast iron preferred) just large enough to accommodate the tortilla with a little oil. Heat until almost smoking.Place tortilla in the pan and cook for about 30 seconds. Turn tortilla over, sprinkle 1/4 cup of the cheese over half of the tortilla. Top the cheesy half with 1/3 cup of the tomatoes, 2 tablespoons of the cilantro and a touch of pepper.Fold over the second (empty) half and cook, pressing down for about a minute until you see the cheese starting to melt. Flip over the tortilla and cook on the other side for one more minute. Remove to a plate.Proceed the same way with the rest of the ingredients to make the second quesadilla.Before serving, cut the quesadillas in wedges and add some guacamole and/or salsa.
