MANDARIN ORANGE SCONES
These tender scones bake up golden brown and are very moist with bits of mandarin oranges and covered in a sweet orange glaze.

MANDARIN ORANGE SCONES WITH ORANGE BUTTER
From a TOH booklet. These are a wonderfully flavorful scone with the additoin of the chopped mandarin oranges. Serve with the orange butter and you have a very delicious treat! These are best when served warm.

Steps:
- In a small bowl, combine the flours, sugar, baking powder, orange peel and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Combine the egg and milk in a separate bowl and then add to the crumb mixture.
- Fold in chopped mandarin oranges just until moistened.
- Mix together additional sugar and cinnamon.
- Turn dough onto a floured surface and knead gently 10 times.
- Pat into a 6 inch circle and then sprinkle with the cinnamon sugar mixture.
- Cut into eight wedges, separate and place onto a greased baking sheet.
- Bake at 400F for 15-20 minutes or until golden brown.
- Remove from pan to a wire rack.
- Prepare the orange butter by beating butter and marmalade together in a small bowl until fluffy.
- Serve the scones warm with the prepared butter.
CRANBERRY ORANGE SCONES

- Preheat the oven to 400 degrees F.
- In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended.
- Dump the dough onto a well-floured surface and knead it into a ball. Flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn't stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on a baking pan lined with parchment paper. Collect the scraps neatly, roll them out, and cut more circles.
- Brush the tops of the scones with egg wash, sprinkle with sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes and then whisk together the confectioners' sugar and orange juice, and drizzle over the scones.
ORANGE-CRANBERRY SCONES
This recipe comes from the 2004 cookbook, The Joy of Cranberries: The Tangy Red Treat, that I received from my partner in my 1st cookbook swap here on Zaar! Great served with either a cranberry butter or an orange butter!

- Preheat oven to 400 degrees F, & grease a 9-inch round cake pan.
- In a mixing bowl, mix flour, 3 tablespoons sugar, baking powder & orange zest.
- Cut in butter until mixture resembles coarse crumbs, then stir in Mandarin oranges & cranberries.
- In another bowl, mix sour cream, egg, orange juice & vanilla, beating until smooth.
- Stir this sour cream mixture into the flour mixture until well mixed.
- Spread batter into prepared pan & sprinkle with the 1 tablespoon of sugar.
- Bake 28-32 minutes or until a wooden pick inserted in center comes out clean & scone is lightly browned.
- Cool 5 minutes in pan, then remove from pan & cut into wedges.
- Best served warm, but any leftovers should be refrigerated.

Found this recipe online and tweaked it a little to make it "more orangey." It's very easy and so good! The scones come out with a wonderful texture.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and grease with cooking spray.
- Mix flour, 1 tablespoon sugar, baking soda, baking powder, and salt. Cut in butter using a pastry cutter. Mix in orange zest.
- Make a well in the center of the flour mixture. Whisk orange juice, egg, and vinegar together and pour into the flour mixture. Stir until moistened and sticky.
- Transfer dough to a floured surface and knead gently about 10 times. Pat into a 6x8-inch rectangle. Cut rectangle into 4 squares; cut each square diagonally into 8 triangles. Arrange scones on the prepared baking sheet. Brush tops with milk and sprinkle with remaining 1 tablespoon sugar.
- Bake in the preheated oven until golden brown, about 10 minutes.
- Make the orange glaze while the scones are baking. Mix 1/2 cup plus 2 tablespoons confectioners' sugar and orange juice until thick and smooth; glaze should drip slowly off the back of a spoon. Mix in orange zest.
- Dunk warm scones in the glaze to fully coat the tops. Let stand for 5 minutes before serving.

- Whisk dry ingredients (flour, sugar, baking powder, cinnamon) into a bowl as well as the mandarin zest. Cut the cold butter into large chunks and then using a pastry cutter or your hands, cut the butter into the dry mixture, until it is all combined and the butter is in pea size crumbs.
- To another small bowl, add in milk, mandarin juice, egg and vanilla extract. Whisk together to combine and then gently add it to the dry ingredients.
- Pour the dough onto a clean, gently floured surface or counter and roll into a ball the best you can - if it’s too sticky, add a bit more flour! And be sure to flour your hands as well!
- Make the dough into a 8-9 inch disc and with a super sharp knife, you can cut them equally into wedges. I cut mine into 8 wedges. It’s okay if they’re not perfectly even!
