- Preheat the oven to 375 degrees F.
- In a 13 by 9-inch baking dish, combine the butter, maple syrup, brown sugar, and brandy. Peel the pears, halve lengthwise, and remove the seeds with a melon baller or teaspoon. Add the pears to the baking dish and coat with the maple mixture. Arrange the pears cut-side down, and bake until tender, about 50 minutes, basting occasionally. Meanwhile, put the cranberries in a small bowl and cover with hot water; set aside until plump. Drain and coarsely chop the cranberries.
- Transfer the pears to plates. Pour the baking juices into a small bowl, and whisk in 1 or 2 teaspoons of water to blend into a sauce. Top each pear with a small scoop of frozen yogurt, and scatter granola and cranberries over the pears. Drizzle the syrup over the top. Serve immediately.

- Preheat the oven to 450 degrees F. Heat a 9-inch cast-iron skillet in the oven.
- Add the flour, pears, baking powder and salt to a food processor. Pulse 2 to 3 times to combine. Add 5 tablespoons butter, pulsing until it resembles a coarse meal. Pour in the half-and-half and 2 tablespoons maple syrup and pulse until just combined. Transfer to a floured work surface and roll the dough into a square about 1/2-inch thick. Using a 2 1/2-inch biscuit cutter (or the rim of a glass works, too), cut 8 biscuits, re-rolling if necessary.
- Remove the skillet from the oven and melt the remaining 3 tablespoons butter in the hot skillet. Swirl the skillet to coat the bottom and sides with butter, then pour the butter into a bowl and mix with the remaining 2 tablespoons maple syrup. Add the biscuits to the skillet and brush them each with a little of the maple butter, saving the rest for finishing.
- Bake until lightly browned, 8 to 10 minutes. Brush the remaining maple butter on the biscuits and let them cool slightly. Serve warm or at room temperature.

- Preheat oven to 400 degrees. Melt 2 tablespoons butter in an oven-safe skillet over medium heat.
- Cook pears (cut side down) until beginning to brown, about 5 minutes.
- Flip pears over and transfer skillet to oven. Bake for 20 minutes, until pears are soft. Transfer pears to serving platter.
- Meanwhile, in a small bowl, whisk together maple syrup, cinnamon, vanilla, apple juice, brown sugar, cranberries and salt.
- Pour mixture into skillet and bring to a low bowl. Then reduce and cook over medium-high heat, stirring frequently, until sauce reduces and thickens, 5-7 minutes. Cool slightly.
- Pour warm sauce over pears. Top with pecans and serve.

MAPLE CRANBERRY PEAR COBBLER

- Preheat the oven to 425 degrees F. In a saucepan combine the pears, cranberries, maple syrup, orange juice, orange peel, cinnamon and nutmeg, bring to a boil and simmer, stirring occasionally, for 3 minutes, or until cranberries have popped. Stir in cornstarch mixture and simmer for 1 minute, or until thickened. Let cool. Transfer mixture to a buttered baking dish.
- Make the dough: Into a bowl sift together the flour, sugar, baking powder and salt. Add the butter and the shortening and blend the mixture until it resembles coarse meal. Stir in the cream and form the dough into a ball.
- On a floured surface roll the dough into a round large enough to fit the dish, arrange it over the filling and crimp the edge decoratively. Brush the dough with the egg wash, cut steam vents in the center, and bake for 35 to 40 minutes, or until golden brown.

- Preheat oven to 350°F.
- Peel, if you wish (I leave them unpeeled) Slice pear in half lengthwise, scoop out seeds to make a nice circle. Spray with veggies spray and set aside in a gratin dish sprayed with veggie spray, cut side up.
- In a small bowl mix together, cream cheese, salt, nutmeg and 1 teaspoon honey. Fill each pear half cavity with half of the cheese mixture.
- Place a half walnut on top of the cheese mixture; lightly press it down. Drizzle pear halves with remaining teaspoon of honey.
- On centre grate in oven, roast at 350°F for about 1 hour or until soft. Test with a toothpick at about 45 minutes.
PEARS WITH MAPLE SYRUP, PECANS AND CRANBERRIES - MICROWAVE
A delicious low fat and EASY dessert to impress! A wonderful mix of ingredients that is great served with home-made ice cream or creme fraiche. These pears cook quite happily in the microwave - as well as the more conventional baking or stove top method too. A recipe I devised for our Bed & Brekafast last Autumn, after a huge harvest of pears from our garden and whilst also trying to find a use for numerous opened packets of dried fruits and nuts!!

- Microwave method:.
- Place the peeled, cored and halved pears into a microwaveable dish. Place them cut side down.
- Scatter the dried cranberries over the pears.
- Pour 2 tablespoons of the maple syrup over the pears & cranberries & cover with microwaveable cling film.
- Microwave on High for 3 minutes until softened, stirring half way through.
- Uncover and leave to cool off slightly for a few minutes.
- Stir the pecan nuts through the syrup.
- Spoon into serving dishes making sure EVERYONE gets some nutty syrup & cranberries! (1 pear - 2 halves per person!).
- Drizzle over the remaining maple syrup.
- Serve with ice cream or creme fraiche. Yoghurt is nice with this dessert too.
- Oven baking method:.
- Pre-heat oven to 200 C or 400°F.
- Follow recipe as above, making sure the dish is oven proof!
- Bake for about 45 minutes or until pears are soft but still holding their shape.
- Mix in nuts as before and serve as before.
- (These can also be cooked in a deep frying pan, skillet or wok on top of the stove with a lid placed over them; Bring them to a slow boil and then simmer gently for about 30 - 45 minutes. Serve as before.).

- Place pears in a saucepan large enough to hold them snugly. Add enough water to barely cover them (about 4 cups). Add sugar, cinnamon, citrus peels, honey, and lemon juice. Using the tip of a paring knife, scrape vanilla seeds into pan, and toss in pod. Bring to a boil, stirring until sugar has dissolved. Reduce heat, and simmer gently until pears are tender, about 10 minutes.
- Add fresh cranberries, and simmer until cranberries are soft but not mushy, about 3 minutes more.
- Use a spoon to transfer pears to a dish. Spoon cranberries and syrup around pears. Add tea bag and dried cranberries if using. Let cool for 15 minutes. Cover, and refrigerate overnight.
- Before serving, remove vanilla bean, cinnamon stick, citrus peels, and tea bag. Transfer pears to plates with some of the cranberries, syrup, and a dollop of yogurt, creme fraiche, or cheese.
MAPLE PEARS WITH PECANS & CRANBERRIES

- Peel and halve the pears and scoop out the core with a teaspoon. Lay the halves in a shallow microwaveable dish, cut side down, along with the cranberries. Pour 2 tbsp of the maple syrup over and cover with cling film. Microwave on High for 3 mins until softened, stirring halfway through. Uncover and leave to cool for a few mins. Stir the pecan nuts through the syrup.
- Spoon into serving dishes, drizzle extra maple syrup, if you like, and serve with yogurt.

Oven baked pears with slightly sweet/spiced pink syrup and whole cranberries. I found this recipe years ago in a news paper and clipped it out. Took me a while to make it, but once I did, I knew it was a keeper. I then washed the jeans I was wearing when cooking and melted the news paper. I did a search on the net, but could not find it there. So I had to quickly write down the recipe before I forgot it. So hear it is for me to always have. Hope you enjoy it as well.

- 1. Heat over to 400F, use a baking dish with 1" sides.
- 2. Lay peeled, split and cored half pears in baking dish cut side down.
- 3. Mix together 1 cup water, vinegar, salt, spice and sugar. Pour over pears and drop in pats of butter.
- 4. Bake for 15mins basting the pears once at 7 minutes time.
- 5. At 15 minutes cooking time, add 2 tablespoons water and cranberries to baking dish, bast pears again.
- 6. Bake for another 10 minutes, then bast pears. Check with fork to see if pears are tender.
- 7. If pears are tender then they are done, if not cook another 10-15 minutes.
- 8. You can add more water if needed. I also add more then 3/4 cup cranberries.
- 9. This is very good on it own or with vanilla ice cream.

- Place pears upright in slow cooker.

- Preheat the oven to 325 degrees F (165 degrees C). Cut a rectangle out of waxed paper to fit an 8x12-inch cake pan. Spray the pan with cooking spray, then place waxed paper liner over the bottom.
- Melt butter in a large skillet. Add 2 cups sugar and cook until sugar has dissolved and mixture is bubbling, about 3 minutes. Add pear slices; reduce heat to low and cook for 5 minutes. Turn off heat and add cranberries.
- Whisk flour, baking soda, cinnamon, salt, cloves, and nutmeg together in a bowl.
- Combine remaining 2 cups sugar, milk, oil, eggs, and vanilla in another bowl using a hand mixer until cake batter is smooth. Gradually mix in dry ingredients until well combined. Fold in walnuts.
- Pour pear-cranberry mixture into the prepared cake pan. Use a spatula to spread cake batter evenly on top of fruit.
